1 (1 1/2-pound) boneless pork loin
9 cups chopped apples
9 slices bread, diced
1 cup chicken stock
2 tablespoons poultry seasoning
2 tablespoons seasoned salt
2 eggs, beaten
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a wire rack on top of a baking sheet.
  • Place pork on a work surface and cut into 1/2-inch thickness, starting 1/2 inch from the cutting board and rolling pork open while cutting until entire loin is unrolled onto the work surface. Cover loin with plastic wrap and pound loin into 1/4-inch thickness with a meat mallet.
  • Mix apples, bread, chicken stock, poultry seasoning, seasoned salt, and eggs together in a bowl; spread onto the loin. Roll loin around apple filling, ending with the fat cap on top. Cut stuffed pork loin in half and place on rack.
  • Bake in the preheated oven until pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

2 tablespoons vegetable oil, such as soy, corn, or peanut
One 3-pound boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, sliced
1 carrot, sliced
1 stalk celery, sliced
3 cloves garlic, smashed
3 sprigs fresh sage
3 sprigs fresh thyme
1/2 cup dry white wine
1 cup chicken broth, homemade or low-sodium canned
1 to 2 tablespoons whole grain mustard
1 to 2 tablespoons unsalted butter, diced and chilled
About 4 cups applesauce, recipe follows
2 1/2 pounds tart red skinned apples, such as McIntosh
3 tablespoons sugar
1 tablespoon freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over medium-high heat. Season the pork loin all over generously with salt and pepper. Lay the loin, fat side down in the skillet, and cook until golden brown, about 2 minutes. Use tongs to turn the meat, and continue to brown it on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, and herb sprigs to the skillet. Cook, stirring frequently, until the vegetables are softened, about 5 minutes. Remove the skillet from the heat and add the wine. Return the skillet to a high heat and scrape the bottom with a wooden spoon to loosen up any browned bits. Boil the wine until it is reduced by about half. Add the broth and bring to a boil.
  • Return the loin and any collected juices to the skillet. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers between 145 to 150 degrees F., about 40 minutes. (See Cooks Note.)
  • Transfer the pork to a plate, and cover it loosely with foil. Set it aside in a warm spot while you make a sauce.
  • Strain the cooking liquid through a fine mesh strainer into a small saucepan; press down on the vegetables with a wooden spoon to extract as much liquid as possible. Discard the solids. Boil the liquid over high heat until reduced by about a third. Reduce the heat to medium-low, whisk in the mustard, and then the bits of butter to enrich the sauce. Season with salt and pepper to taste. Keep warm but do not boil.
  • Remove the strings from the roast and then slice the loin. Add any collected juices to the sauce. Arrange the meat on a warm platter and season with salt and pepper. Pour the sauce over the meat. Serve with the applesauce on the side.
  • Remove the apple's stems. Coarsely chop the apples with their skin and seeds. Combine the apples, sugar, and lemon juice with 3 tablespoons of water in a large saucepan. Bring the mixture to a boil over high heat. Cover, and lower the heat to maintain a gentle simmer. Cook until the apples are completely soft, about 20 minutes.
  • Remove the lid and continue to cook (stir frequently to prevent scorching) until most of the liquid has evaporated, about 10 minutes more. Remove from the heat and cool slightly. Pass the apple mixture through a food mill; discard the peels and seeds. Serve warm or at room temperature. Refrigerate if not using immediately.

1 teaspoon salt, divided
1 teaspoon rubbed sage

1 package (12 ounces) frozen unsweetened raspberries, thawed, divided
3/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon each ground ginger, nutmeg and cloves
1/4 cup white vinegar

  • Place roast on a greased rack in a shallow roasting pan. Rub with 3/4 teaspoon salt, sage and pepper. Bake, uncovered, at 350° for 1-1/2 hours or until a thermometer reads 160°., Meanwhile, drain raspberries, reserving juice. Set aside 1/3 cup berries. In a sieve, mash remaining berries with the back of a spoon; reserve pulp and discard seeds. , In a large saucepan, combine the sugar, cornstarch, ginger, nutmeg, cloves and remaining salt. Stir in the vinegar, reserved raspberry juice and reserved pulp until blended. Add remaining raspberries. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; add lemon juice and butter. Stir until butter is melted. Let pork stand for 10 minutes before slicing. Serve with the raspberry sauce. Freeze option: Prepare raspberry sauce; transfer to a freezer container. Place sliced pork in freezer containers. Cool and freeze. To use, partially thaw pork and sauce in refrigerator overnight. Heat sauce in a saucepan over medium heat until mixture comes to a boil. Remove from the heat. Microwave pork, covered, on high in a microwave-safe dish until heated through. Serve with sauce.

1 cup chopped walnuts
1 medium apple, peeled and finely chopped
3 tablespoons dried cranberries
1 tablespoon minced fresh parsley
1 tablespoon olive oil
1 garlic clove, minced
1 pork tenderloin (1-1/2 pounds)
1/3 cup apple butter
1/2 teaspoon salt
1/2 teaspoon ground coriander
SAUCE:
1 cup red currant jelly
1 shallot, finely chopped
2 tablespoons cranberry juice
2 tablespoons honey
1 tablespoon dried currants
1 tablespoon cider vinegar

Steps:

  • In a large heavy skillet, melt butter. Add walnuts; cook and stir over medium heat until toasted, about 2 minutes. Remove 1/2 cup for serving. Add apple to the remaining walnuts; cook and stir 1 minute longer. Cool slightly., Place the cranberries, parsley, oil, garlic and apple mixture in a food processor; cover and process until finely chopped., Cut a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove wrap; spread apple butter on 1 long side of tenderloin to within 1/4 in. of edges. Top with apple mixture. Close meat; tie with kitchen string. Place on a rack in a shallow roasting pan; rub with salt and coriander., Bake at 350° until a thermometer inserted into center of stuffing reads 165° and thermometer inserted in pork reads at least 145°, 55-65 minutes. Let stand for 10 minutes before slicing., Meanwhile, in a small saucepan, combine sauce ingredients; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 12-14 minutes. 6 tablespoons reduced-sodium chicken broth, divided
2 tablespoons raisins
1/2 cup chopped apple
1 celery rib, chopped
2 tablespoons chopped onion
1 garlic clove, minced
1-1/2 cups fat-free Caesar croutons
2 tablespoons sliced almonds, toasted
1/8 teaspoon pepper
1 pork tenderloin (1 pound)

Steps:

  • In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. People drive from miles around to eat at this beautiful inn. This is an awesome dish. If fresh berries are not available, of course you can use frozen. If you prefer not to use brandy, you could use apple juice.

1 cup chopped onion
1 1/2 cups chopped celery
1/2 cup butter
3 cups cored and chopped tart apples
1/2 teaspoon ground allspice
1/4 teaspoon ground cardamom
5 cups dry bread cubes
1/2 cup raisins
1 (3 -4 lb) single boneless pork loin roast
1 dash garlic powder
1 dash salt & pepper
2 cups fresh raspberries
1/2 cup apricot nectar
1/2 cup red currant jelly
2 tablespoons brandy
1 tablespoon honey
4 teaspoons cornstarch
1 tablespoon water

Steps:

  • In large skillet, cook onion and celery in butter until tender.
  • Add apples, allspice and cardamom; cook, uncovered for 5 minutes, stirring occasionally.
  • In large bowl, combine apple mixture with bread and raisins; toss gently until bread is coated.
  • Preheat oven to 325°.
  • Trim excess fat from meat and split lengthwise almost through.
  • Spoon about half of the stuffing over the meat; fold and tie with string to secure.
  • Place remaining stuffing in 1-quart baking dish.
  • Place meat on rack in a 17x12-inch roasting pan.
  • Sprinkle with garlic powder, pepper and salt.
  • Insert meat thermometer.
  • Roast meat, uncovered, 60-70 minutes or until thermometer registers 160-170°.
  • Cover and heat remaining stuffing during the last 40 minutes of roasting.
  • To serve, slice pork, serve with additional stuffing and raspberry sauce.
  • To prepare RASPBERRY SAUCE:.
  • In medium saucepan, combine raspberries, nectar, jelly, brandy and honey (if choosing not to use brandy, you can use apple juice).
  • Over low heat, stirring frequently, cook until mixture boils.
  • Strain to remove seeds; return mixture to saucepan.
  • In small bowl, combine cornstarch and water; add to raspberry mixture.
  • Makes about 1-3/4 cup sauce.

2 celery, coarsely chopped (1 to 1-1/2 cups)
1 cup coarsely chopped onion
0.5 cup margarine or butter
3 cup chopped tart red apples
0.5 teaspoon ground allspice
0.25 teaspoon ground cardamom
5 cup dry bread cubes
0.5 cup raisins (optional)
1 pound boneless double pork loin roast (tied)
salt
pepper
garlic powder
1 Raspberry Sauce (see recipe below)
3 cup undrained frozen raspberries, thawed
0.25 cup red currant jelly
0.75 cup apricot nectar
2 tablespoon honey or sugar
3 tablespoon brandy (optional)
2 tablespoon cornstarch
2 tablespoon cold water

Steps:

  • For stuffing, place celery and onion in a large skillet. Cook in margarine or butter until vegetables are tender but not brown. Stir in chopped apple, allspice, and cardamom. Cook, uncovered, for 5 minutes or until apple is tender, stirring occasionally. Transfer mixture to a large bowl.
  • Add bread cubes and, if desired, the raisins. Toss gently to coat b read, but dont overmix. Set aside.
  • Preheat oven to 325 degree F. Untie the roast and separate into halves. Trim excess fat from the meat. Spoon about half of the apple stuffing over half of the meat. Spoon remaining stuffing into a 1-quart casserole; cover and chill in refrigerator.
  • Reassemble roast. Tie with string to secure. Place on a wire rack in a large roasting pan. Insert meat thermometer into the center of the thickest portion of the meat. Sprinkle with salt, pepper, and garlic powder.
  • Roast stuffed roast, uncovered, in the preheated oven for 2-1/4 to 2-3/4 hours or until meat thermometer registers 160 degree F to 170 degree F. Bake casserole of apple stuffing alongside the roast during the last 40 minutes of cooking time. Let roast stand 10 minutes before slicing.
  • Serve Raspberry Sauce with roast. Makes 12 to 16 servings. Raspberry Sauce
  • Combine raspberries, currant jelly, apricot nectar, and honey or sugar in a medium saucepan. If desired, stir in 3 tablespoons brandy. Cook and stir over medium heat until mixture just comes to boiling. Strain through a sieve. In the same saucepan combine cornstarch and water. Stir in raspberry mixture. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more.
