- Drain peaches, reserving 1/2 cup syrup; set aside. In a large skillet, brown ham on both sides in butter over medium heat. Remove ham to a platter and keep warm, reserving drippings in skillet., In a small bowl, mix sugar, cornstarch and nutmeg. Add orange juice, lemon juice and reserved peach syrup; stir until smooth. Add to drippings in skillet. Cook and stir until thickened., Stir in peaches and heat through. Add ham slice and heat for 2-3 minutes. Cut into serving-size pieces. Serve over rice.

GRILLED SWEET POTATOES WITH APPLES
Deliciously spiced sweet potatoes are grilled with apples for a perfect summertime dish!

Steps:
- Preheat an outdoor grill.
- In a bowl, toss the sweet potato and apple slices with the cinnamon and sugar. Divide the mixture into 4 portions, places each on a large piece of aluminum foil. Top each with an equal amount of butter. Tightly seal foil around each portion.
- Place foil packets on the grill, and cook 40 minutes, turning every 5 to 10 minutes, until potatoes and apples are tender.

- Preheat oven 350f.
- Combine first 6 ingredients and set aside.
- Melt butter in large cast iron skillet over medium heat.
- Add yams, tossing to brown.
- Add apples and toss; remove from heat.
- Drizzle cider mixture over yams and apples; toss.
- Sprinkle with salt.
- Bake until tender, about 15 minutes.
- Toss every 5 minutes, adding more cider if necessary to avoid sticking.

- Preheat the oven to 350 degrees F (175 degrees C).
- Toss apple, pecans, brown sugar, and cinnamon together in a bowl. Alternate layers of coated apple and cut yams in an 11x7-inch pan. Dot with margarine and cover.
- Bake in the preheated oven until reduced and bubbly, 30 to 40 minutes. Cover with marshmallows and continue to bake until golden, 10 to 20 minutes more.

- Mix brown sugar and spices together.
- Sprinkle half over yams and apples.
- Dot with half the butter.

- Uncover, baste with the juices,and bake 15 minutes more.
