1/2 cup whole wheat flour
1 cup all-purpose flour
3/4 cup oats, uncooked ( (you can use the quick-cooking oats or the rolled oats in this recipe))
1/4 cup brown sugar
1 egg
2 teaspoons vanilla extract
2 tablespoons cooking oil
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 1/4 cups buttermilk ((can use regular milk))
1 cup grated apple or about 1 large apple, grated
1/2 cup nuts of your choice (Optional (I used walnuts))
1/2 cup raisins (Optional)
Butter or oil for cooking
1 1/4 cups 100% pure apple juice or could use apple cider
2 teaspoons cornstarch
1/4 teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons butter or margarine
1/2 cup brown sugar
1 teaspoon lemon juice

Steps:

  • Combine all the ingredients and cook on griddle or in skillet until brown. I use about 1/4 cup batter to a pancake. You can add more milk if you want your batter thinner. This batter is thick.

2 cups complete pancake mix
1 ¼ cups apple cider
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon brown sugar
½ teaspoon vanilla extract
¼ cup chopped walnuts
butter flavored cooking spray

Steps:

  • Place pancake mix into a medium bowl, and stir in apple cider. Apple cider may be adjusted to achieve the desired thickness. Stir in cinnamon, nutmeg, brown sugar and vanilla. Mix in walnuts if using.
  • Heat a large skillet over medium heat, and spray with cooking spray. Use about 1/4 cup of batter per pancake. Cook 3 to 4 pancakes at a time. Turn over when bubbles appear in the center, and cook until golden on the other side. Serve immediately with pats of butter and maple syrup.

2 cups complete pancake mix
1-1/2 cups water
3/4 cup grated apple
1/2 teaspoon ground cinnamon
CIDER SYRUP:
1/2 cup sugar
1 tablespoon cornstarch
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup apple cider or juice
2 tablespoons butter, cubed
1 tablespoon lemon juice

Steps:

  • In a small bowl, stir the pancake mix, water, apple and cinnamon just until moistened., Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown., Meanwhile, for syrup, in a small saucepan, combine the sugar, cornstarch, cinnamon and nutmeg. Stir in cider until smooth. Cook and stir over medium-high heat until thickened and bubbly, about 5 minutes. Reduce heat to low; cook and stir 2 minutes longer. Stir in butter and lemon juice. Serve with pancakes.

2 tablespoons unsalted butter
1 cup white sugar
1 tablespoon blackstrap molasses
2 cups apple cider
¼ cinnamon stick
1 tablespoon apple cider
1 tablespoon lemon juice
2 tablespoons cornstarch

Steps:

  • Melt butter in a saucepan over medium heat until it begins to bubble, about 1 minute. Add sugar and molasses; stir until sugar has absorbed molasses and butter, about 3 minutes. The mixture will be very dry. Add 2 cups apple cider. Mix well and bring to a slow boil. Add cinnamon stick and continue to simmer syrup for about 10 minutes.
  • Whisk together 1 tablespoon apple cider, lemon juice, and cornstarch in a small bowl.
  • Pour cornstarch mixture into syrup in the saucepan, whisking continuously until fully incorporated. Simmer until thickened, with a consistency similar to warm maple syrup, about 5 minutes. The syrup will thicken upon cooling.
  • Serve warm. Store leftovers in an airtight container in the refrigerator for up to 3 weeks.

1 1/2 cups unbleached all-purpose flour
1/2 cup whole wheat flour
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups peeled cored and diced apples
3/4 cup raisins
2 cups buttermilk
3 large eggs, separated
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1/2 cup sugar
2 tablespoons cornstarch
2 cups apple cider
1 cinnamon stick
ground nutmeg

Steps:

  • To make Apple Cider Syrup: add the 1/2 cup sugar and cornstarch to a saucepan; stir to blend.
  • Gradually add and stir in the apple cider.
  • Add in the cinnamon stick; bring to a boil, stirring frequently.
  • Lower heat, cover, and cook for 10 minutes.
  • Remove from the heat; sprinkle a litte ground nutmeg or fresh grated nutmeg over the top.
  • Take out the cinnamon stick before serving.
  • To make the pancakes: Sift the flours, sugar, baking soda, cinnamon, and salt into a big mixing bowl.
  • Add in the apples and raisins; toss to coat.

  • In yet another bowl, beat the egg whites until soft peaks form.
  • Combine the buttermilk mixture with the dry ingredients; stir just until the dry ingredients are moistened.
  • Add the egg whites and fold in gently until just blended.
  • Heat a large skillet over medium heat.
  • Spray with non-stick cooking spray or brush with a light film of vegetable oil.
  • Pour 1/4 cup batter into skillet; change heat to medium-low.
  • Cook until the tops are covered with small bubbles and bottoms are golden brown.
  • Flip pancake (carefully) and cook until lightly browned on the other side.

1/2 cup brown sugar, packed
1/2 cup unsweetened apple cider or 1/2 cup juice
1 1/2 tablespoons butter
1/4 teaspoon ground cinnamon
1 dash ground cloves
2 cups biscuit mix
1 tablespoon biscuit mix
2 eggs, beaten
1 1/4 cups milk
2 tablespoons canola oil
2 medium apples, peeled and shredded
1 tablespoon lemon peel, grated

Steps:

  • To make syrup: in a small saucepan, combine the syrup ingredients over medium heat, bring to a boil, reduce heat; simmer, uncovered, for 5 minutes or until slightly reduced.
  • For pancakes: Preheat grill.
  • Place biscuit mix in large bowl.
  • In medium bowl, combine the eggs, milk, and oil; stir into biscuit mix just until moistened.
  • Stir in apple and lemon peel.
  • Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top.
  • Cook until the second side is golden brown.
  • Serve apple syrup with pancakes.

1 large baking apple, cored and thinly sliced
1/2 cup golden raisin
2 tablespoons brown sugar (packed)
1/2 teaspoon ground cinnamon
4 eggs
2/3 cup milk
2/3 cup all-purpose flour
2 tablespoons butter (melted) or 2 tablespoons margarine (melted)
powdered sugar (optional)

Steps:

  • Preheat oven to 350 deg. F. Spray 9 inch pie plate with nonstick cooking spray.
  • Combine apple, raisins, brown sugar and cinnamon in medium bowl. Transfer to prepared pie plate.
  • Bake, uncovered, 10 - 15 minutes or until apple begins to soften. Remove from oven. Increase temperature to 450 deg. F.
  • Meanwhile, whisk eggs, milk, flour and butter in medium bowl until blended. Pour batter over apple mixture.
  • Bake 15 minutes or until pancake is golden brown. Invert onto serving dish. Sprinkle with powdered sugar if desired.
