Baked oatmeal is a popular breakfast in my house. I make it often for my husband and seven children because it's budget friendly and versatile. I like to add a variety of dried fruits or nuts to mix it up. -Christina Smeal, Fairmont, West Virginia

- Preheat oven to 350°. In a large bowl, combine first six ingredients. Whisk eggs and milk; stir into dry ingredients until blended. Let stand 5 minutes. Stir in apple, raisins and walnuts., Transfer to an 8-in. square baking dish coated with cooking spray. Bake, uncovered, 35-40 minutes or until edges are lightly browned and a thermometer reads 160°. Serve with additional milk if desired.

Steps:
- Heat oven to 350 degrees.
- Liberally coat a 13x9x2-inch baking pan with nonstick cooking spray; set aside.
- In medium-sized bowl, whisk together flour, baking powder, cinnamon and salt; set aside.
- In large bowl, with an electric mixer on medium speed, blend together sugar, eggs, butter and vanilla for 3 minutes or until smooth.
- Reduce speed to low and gradually add flour mixture; mix for 2 minutes or until just incorporated.
- Stir in diced apples and raisins and spread into prepared pan.
- Bake at 350 degrees for 35 minutes or until toothpick inserted in center comes out clean.
- Cool completely before cutting into bars and serving.

- Preheat oven to 350 degrees. Lightly grease a 13x9 inch baking pan.
- Crust: In a medium bowl, combine oats, flour, brown sugar, and granulated sugar; whisk together to mix. With a pastry blender or two knives, cut butter into the flour mixture until the mixture resembles coarse crumbs. RESERVE 1 cup mixture.
- Press remaining mixture evenly into the baking pan. Bake 12 to 15 minutes or until firm but not browned. Remove from oven.
- Filling: Prepare filling while crust is baking. In a large bowl, combine cream cheese, eggs, ½ cup sugar, and vanilla; beat together until mixture appears light and fluffy. Spread cream cheese mixture over the still warm baked crust.
- In a medium bowl, combine chopped apple, raisins, and almond extract; stir until mixed. Add 2 tablespoons sugar, cinnamon, nutmeg, and allspice; mix well.
- Spread the apple mixture evenly over the cream cheese mixture.
- Sprinkle the reserved oat mixture evenly over the top.
- Bake 20 to 25 minutes or until the top is a light golden brown. Leave cookie in the pan to cool; place baking pan on wire rack to cool. Cut into 2 inch bars.
- Cover bars and refrigerate until ready to serve.

- Preheat oven to 400. Grease 15 1/2" x 10 1/2" x 1" jelly roll pan.
- Cream butter, sugar, eggs, and vanilla in mixing bowl until fluffy.
