Number Of Ingredients 9

1 (12 ounce) package smoked sausage
2 tablespoons water
1 medium yellow onion, sliced
2 apples, cored and sliced
4 medium potatoes, peeled and sliced
4 tablespoons butter
1/4 cup apple cider vinegar
3 tablespoons sugar
2 tablespoons fresh parsley (or 1 T dry) (optional)

Steps:

  • Saute sausage with water covered, about 8 minutes. Discard grease. Set aside.
  • Saute potatos in about 2-3 T butter until tender. Set aside.
  • Saute apples and onions in remaining 1 T butter until tender.
  • Combine cider vinegar, sugar, and parsley.
  • Return the sausage and potatoes to the saute pan along with the apples and onions. Add the vinegar, sugar, and parsley to the skillet. Mix well.
  • Warm over medium heat until warmed through.
  • Serve.

2 tablespoons vegetable oil
2 teaspoons vegetable oil
1 lb small potato, peeled and cubed
1 onion, diced
2 large apples, unpeeled, thinly sliced
1 (6 ounce) package soy sausage, links, cut in thirds
salt
pepper
1/4 cup shredded cheddar cheese

Steps:

  • Heat 1 tbsp oil in large skillet. saute potatoes over med heat about 7 minutes.
  • Add 1 tbsp oil to skillet and saute onion with potatoes about 5 min more or till golden.
  • Remove potatoes and onion, set aside.
  • Add remaining 2 tsp oil to pan and saute apples over med heat about 5 minute.
  • In a separate pan, brown sausages in nonstick spray.
  • Add all ingredients to skillet of hot apples, stir well to heat through.
  • Sprinkle with cheese.

1 pound smoked sausage, cut into 2-inch pieces
1 medium onion, coarsely chopped
1 teaspoon butter
1 can (27 ounces) sauerkraut, rinsed and well drained
4 medium red potatoes, cut into 1-1/2-inch pieces
3 medium Cortland apples, peeled and cut into thick wedges
1 cup apple juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, saute sausage and onion in butter until sausage is browned. Top with the sauerkraut, potatoes and apples. Add the apple juice, salt and pepper. , Bring to a boil. Reduce heat; cover and simmer for 18-20 minutes or until potatoes are tender.
