Pork Chops with Apple Cider Gravy have tender pork chops seared in a cast iron skillet then topped with an apple cider and onion soup mix gravy.

1/2 Tbsp canola or vegetable oil
2 pork chops or steaks (about 6 oz each)
Kosher salt, to taste
Ground black pepper, to taste
3/4 cup apple cider or apple juice
1 Tbsp corn starch
1 (10.5 oz) can cream of mushroom soup
1/2 packet dry onion soup mix

Steps:

  • In a cast iron skillet, heat oil over medium heat. Click for a cast iron skillet.
  • Pat pork chops dry with paper towel.
  • Season chops on both sides with salt and pepper to taste.
  • When pan is hot, cook pork 5 - 7 minutes on first side.
  • While pork cooks, in a separate bowl, whisk apple cider into cornstarch until combined.
  • Then whisk in mushroom soup and onion soup mix and set aside.
  • Once first side of pork is cooked, turn chops over and cook about 2 minutes.
  • Then pour apple cider mixture over pork in skillet. Add lid to skillet and continue cooking about 3 minutes.
  • Remove lid, stir gravy, replace lid and cook for another 2 minutes or until thickest part of pork reaches an internal temperature of 145 degrees.
  • Serve pork chops topped with apple cider gravy.

4 thick-cut boneless pork chops ((about 2 lbs. total))
2 teaspoons minced garlic
½ cup apple cider ((or sub with apple juice))
1 tablespoon Dijon mustard
1/3 cup heavy cream, at room temperature
Optional garnish: fresh rosemary

Steps:

  • Season pork chops liberally with salt and pepper on both sides.
  • Heat about 2 teaspoons of olive oil in a large skillet over medium-high heat for 1-2 minutes. Swirl to coat the pan. Add garlic and cook, stirring constantly, for about 1 minute.
  • Add chops to the skillet and cook for 7-9 minutes per side, or until golden brown and cooked through. The chops are done when they reach an internal temperature of 145 degrees F. Remove chops to a plate and set aside.
  • Reduce heat to low, and pour cider into the same pan. Let the cider simmer for about 1 minute, scraping the bits from the bottom of the pan as you stir. Add mustard and stir in cream.
  • Cook sauce for about 3 more minutes, stirring frequently, until thickened slightly. Spoon over chops and garnish with fresh rosemary, if desired.

This recipe calls for pan-frying boneless pork chops and serving them with butter-browned apples and a Normandy-style sauce made with cider and cream. It makes for a perfect cold weather meal.

1/4 teaspoon black peppercorns
3 cloves
4 allspice berries
2 tablespoons roughly chopped sage
1 and 1/2 tablespoons kosher salt
6 boneless pork chops, 4 ounces each, about 1/2-inch thick
2 large apples
2 tablespoons butter
All-purpose flour, for dusting
1/2 cup hard cider, plus 2 tablespoons
2 teaspoons Dijon mustard
1 and 1/2 cups chicken broth
2 teaspoons potato starch dissolved in 2 tablespoons cold water
3 tablespoons crème fraîche
1 tablespoon Calvados, apple brandy or Cognac, optional
2 tablespoons finely cut chives
2 tablespoons chopped parsley

Steps:

  • Make the spice salt: Put peppercorns, cloves, allspice and sage in a spice mill or mortar and grind to a powder. Remove to a bowl and stir in salt. Season pork chops on both sides with salt mixture. (There will be some salt mixture remaining; use it to season the sauce, Step 4.) Cover and leave chops at room temperature to absorb seasonings for at least 30 minutes.
  • Peel, quarter and core apples, then cut each apple into 12 wedges. Melt 1 tablespoon butter in a wide skillet and raise heat to medium-high. Add apple wedges in one layer and brown gently on one side, about 2 minutes. Brown on the other side and cook for 2 minutes more, or until apples are cooked through but still firm. Remove apples from pan and keep warm.
  • Add 1 tablespoon butter to pan and swirl to melt. Dust pork chops with flour, and place in pan and brown gently for about 4 minutes per side. Adjust heat if necessary to keep pork from cooking too quickly. Remove chops and keep warm on a platter in a low oven. Discard remaining butter.
  • Add ½ cup cider to pan, raise heat to high and cook down to a syrup. Add mustard and chicken broth, and bring to a boil, then reduce heat to a simmer. Add potato starch and stir with a wire whisk as the sauce thickens. Stir in crème fraîche. Season to taste with remaining spiced salt. Add 2 tablespoons cider and the Calvados, if using. Cook for 1 minute more.
  • Spoon sauce over the chops, then spoon the apples around the platter. Sprinkle with chives and parsley.

4 lb pork chops. 1- 1 1/2" thick. thick chops work best
1 c flour
1 tsp salt
2 tsp dry mustard
1 tsp black pepper
3 Tbsp butter
GLAZE
4 Tbsp butter or margerine
4 Tbsp flour
6 Tbsp brown sugar
1 tsp cinnamon, ground
2 c apple juice,or apple cider (i usually use cider. it is less sweet)
salt and pepper to taste
2-3 apples peeled and sliced
1/3 c raisins

Steps:

  • 1. Combine flour,salt mustard,and pepper. Place mixture on plate.
  • 2. Coat chops well with mixture. In a large fry pan. Brown chops in the butter. Remove chops to a baking dish.
  • 3. In pan drippings add butter. When butter melts. Add the flour. Stir until smooth. Mix in juice or cider, cinnamon, brown sugar, a dash of salt and pepper. Cook until thickened
  • 4. Pour apple juice gravy mixture over chops, and place chopped apples and raisins on top. Cover chops with foill. Cook at 350 degree's for 1 hour, or until cooked through.

1 tablespoon vegetable oil
1 tablespoon butter
3 cloves garlic, minced
¼ cup apple cider vinegar
2 cups apple cider
1 teaspoon Dijon mustard
1 teaspoon minced rosemary
1 pinch red pepper flakes

Steps:

  • Season pork chops with salt and black pepper.
  • Heat oil and butter in a heavy skillet over medium-high heat. Cook pork chops in the hot oil mixture until browned on both sides and pork is slightly pink in the center, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pan from the heat; transfer pork chops to a plate.
  • Stir garlic into the pan and place over medium-high heat; cook and stir for 30 seconds. Pour in vinegar and scrape up any browned bits from the bottom of the pan. Add apple cider and Dijon mustard, bring mixture to a boil, and cook until sauce is reduced and thick, 3 to 4 minutes.   • Return pork chops to the pan to warm slightly, 1 to 2 minutes per side.

Salt and pepper
1 tablespoon EVOO (extra-virgin olive oil)
1 small onion, yellow or red, thinly sliced
1 Gala or Golden Delicious apple,thinly sliced
2 to 3 sprigs of fresh thyme, leaves finely chopped
1/2 lemon
1 tablespoon butter
1 tablespoon all-purpose flour
1/2 cup cloudy apple cider
1/2 cup chicken stock
1 corn muffin, split, buttered, and toasted

Steps:

  • Season the chop with salt and pepper. Heat 1/2 tablespoon of the EVOO in a medium skillet over medium-high heat. Cook the chop until golden, 3 to 4 minutes per side, tenting loosely with foil once you turn the chop. Remove the cooked chop to a plate and cover to keep warm. Add the remaining EVOO and the onions and apples. Season with salt, pepper, and the thyme and cook until just tender, 5 to 6 minutes, stirring occasionally. Douse with juice of the 1/2 lemon and remove to the plate with the chop.

1 boned and rolled hand and spring of pork , skin scored (about 4kg)
2 tbsp olive oil
sea salt
3 leeks , roughly chopped
2 carrots , roughly chopped
1 turnip , peeled and roughly chopped
2 bay leaves
3 sprigs thyme
1 sprig sage
500ml cider
500ml hot chicken stock
25g butter
25g flour

Steps:

  • Heat the oven to 220C/ 200C fan/ gas 7. Score the skin of the pork and rub with olive oil and sea salt. Put the pork, leeks, carrots, turnip and herbs in large high-sided roasting pan and pour in the cider and stock. Roast for 30 minutes, then take the roasting tray out of the oven and cover tightly with foil. Return to the oven and turn the heat to 150C/ 130C fan/ gas 2.
  • After 4 hours, remove the foil, turn the oven back up again to 220C/ 200C fan/ gas 7 and roast for another 30 minutes.
  • Take the pork out of the oven, remove the meat, cover and set aside to rest. Drain the cooking liquid, pouring off any excess fat. Either serve or discard the cooking vegetables.
  • To make the gravy, melt the butter in a small saucepan and stir in the flour, cook for 2 minutes then whisk in the cooking liquid. Simmer for a few minutes. Serve alongside the meat. Delicious with braised red cabbage and roast potatoes.

2 large yellow onions, thinly sliced
