This pie a la mode is a family favorite that combines apple pie filling and butter pecan ice cream with caramel topping and chopped nuts. I created it when trying to think up a rich dessert to complete a dinner party menu. -Trisha Kruse, Eagle, Idaho

- Spread half of the pie filling over crust. Top with half of the ice cream; freeze 30 minutes. Drizzle with half of the caramel topping; layer with remaining pie filling. Freeze 30 minutes. Scoop remaining ice cream over top. Freeze, covered, until firm., Remove from freezer 30 minutes before serving. In a microwave, warm remaining caramel topping. Serve pie with warm caramel topping; sprinkle with pecans.

APPLE PIE SANDWICH COOKIES
A rich creamy frosting with apple and cinnamon flavors nestles between two melt-in-your-mouth cookies for a sandwich cookie favorite.

- Heat oven to 350°F. Spray 2 large cookie sheets with cooking spray; set aside.
- In large bowl, beat 3/4 cup butter and 1 cup brown sugar with electric mixer on medium speed 3 minutes or until well blended. Scrape side of bowl. Add corn syrup and egg. Beat 2 minutes or until blended.
- In medium bowl, beat flour, baking soda, 1 teaspoon cinnamon, the ginger and salt with wire whisk. Add dry ingredients to butter mixture and beat on low speed just until dry ingredients are incorporated.
- Place granulated sugar on plate. Shape 1 level measuring tablespoon dough into 1-inch ball and roll in sugar. Place on cookie sheet. Press dough with palm of hand until just flattened and about 2 inches in diameter. Repeat with remaining dough, making an additional 43 balls, and place them about 1 1/2 inches apart on cookie sheets.
- Bake about 15 minutes or until golden. Cool on cookie sheet 1 to 2 minutes before removing to wire rack. Cool completely.
- Meanwhile, in 8-inch skillet, heat 1 teaspoon butter over medium-low heat until melted. Add apple, 1 tablespoon brown sugar and 1/4 teaspoon cinnamon. Cook 5 to 7 minutes, stirring frequently, until apple softens. Set aside to cool completely, about 15 minutes. In small bowl, mix cooled apple mixture and mascarpone.
- Spread 1 level tablespoon filling over bottom of 1 cookie. Top with second cookie. Repeat with remaining filling and cookies. Store in refrigerator.

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, oats, cinnamon, baking powder, baking soda, salt and allspice in a medium bowl. Combine the butter, brown sugar, granulated sugar and eggs in a separate bowl; whisk until smooth. Stir in the grated apple and vanilla, then stir in the flour mixture until just combined.
- Scoop heaping tablespoonfuls of the dough onto the prepared baking sheets, about 1 inch apart. Bake until just set around the edges, 10 to 12 minutes, switching the baking sheets halfway through. Let cool 5 minutes on the baking sheets, then transfer to a rack to cool completely.
- Make the glaze: Whisk the confectioners' sugar and milk in a bowl; drizzle on the cookies.

- Heat a skillet over medium to medium-high heat. Add the ginger and apples to warm butter, squeeze a little lemon juice over the pan and saute 4 to 5 minutes. Add brown sugar, cinnamon, nutmeg to the apples and cook another 2 minutes. Spoon apples into dessert dishes and top with ice cream and whipped cream. Garnish whipped cream with a pinch more cinnamon or nutmeg.
NEELY'S FRIED APPLE PIE A LA MODE

- To a large saute pan over medium heat, melt the butter. Stir in the brown sugar, and the apples and saute until they are tender, about 5 to 6 minutes. Drizzle in the maple syrup, lemon juice, cinnamon, ginger, and nutmeg. Continue cooking for 5 minutes more until the apples are completely softened. Remove them from the pan and allow them to cool while you prepare the dough.
- Roll out both pieces of pie dough onto a floured surface. Cut out eight 6-inch circles and lay them out onto a parchment-lined sheet tray. Put a heaping tablespoon of the apple pie filling into the center of each round Fold the circles in half and seal their edges with the tines of a fork.
- In a deep-fryer or heavy-bottomed pot, heat enough peanut oil to come halfway up the sides of the pot, to 350 degrees F.
- Whisk together the sugar and cinnamon in a small bowl and reserve.
- Fry the pies, 3 at a time, in the hot peanut oil until they are golden brown and crisp, about 3 minutes. Transfer the finished pies to a paper towel-lined sheet tray. Once they are cool, toss them in the cinnamon sugar and serve with vanilla ice cream.

Cook, stirring occasionally, until apples are very soft and begin to caramelize, about 25 minutes. Scrape apples onto a baking sheet or large plate to cool completely; discard bay leaf.
