ROASTED BEET SALAD WITH WALNUTS AND GOAT CHEESE
Steps:
- Preheat the oven to 400 degrees F.
- Wrap the beets in foil packets and roast in the oven until tender, about 1 hour. Open the foil packets and let cool. Once cool enough to handle, peel using a paper towel, then dice.
- In a medium bowl, add the olive oil, vinegar, honey, red onions and Dijon and whisk together. Add the beets and spinach to the dressing and toss to coat. Top with the goat cheese and walnuts.
BEET AND PEAR PUREE
This is the perfect side dish to a holiday meal. It works well with roast turkey or pork. Can be made one day ahead, and preheated in double boiler.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Wash beets, and place in a roasting pan. Bake for 45 minutes to 1 hour, or until tender. Set aside to cool.
- Melt butter in a large skillet over medium heat. Stir in onion, pears, sugar, and vinegar; cook, stirring frequently, for 20 minutes.
- When the beets are cool enough to handle, peel and coarsely chop.
- Puree onion mixture in a food processor with metal blade. Add salt and 1/2 of the beets; pulse 4 to 5 times. Add remaining beets, and pulse 2 to 3 times.

- Slice lettuce into strands. Core apples and cut beets in half, and then slice them into thin crescents. Slice onion into thin slices. Chop walnuts into pieces.
- Heat a pan to low-medium heat. Add walnut pieces to pan and toast for about five minutes, 2.5 minutes on each side. Remove from pan.
- Arrange lettuce on a large serving platter. Arrange beets, apple slices and onion slices on top. Tearing goat cheese into small chunks, and sprinkle evenly on the veggies. Sprinkle toasted walnuts on top.
- Drizzle olive oil and lemon juice on top. Sprinkle with salt and pepper to taste. Serve to table as is, and let each person mix the salad once they've served it (it's too pretty to mix ahead!)
