APPLE PANCAKE
This is as close as I have found to the apple pancake at the Original Pancake House. A fluffy, sweet pancake. Excellent with a scoop of vanilla ice cream

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.
- Beat eggs, milk, flour, remaining 1/4 cup sugar, baking powder, vanilla extract, and salt in a large bowl until batter is smooth; pour batter evenly over apples.
- Bake in the preheated oven until golden brown, about 10 minutes. Run a spatula around the edges of the pancake to loosen. Invert skillet over a large plate to serve.

APPLE WALNUT PANCAKES
Steps:
- In a large bowl, whisk flours, brown sugar, baking powder and salt. In another bowl, whisk egg whites, egg, milk and oil until blended. Add to dry ingredients, stirring just until moistened. Fold in apple and walnuts., Heat a griddle coated with cooking spray on medium heat. Pour batter by 1/4 cupfuls onto griddle. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with syrup. Freeze option: Freeze cooled pancakes between layers of waxed paper in a resealable freezer container. To use, place pancakes on an ungreased baking sheet, cover with foil and reheat in a preheated 375° oven 6-10 minutes. Or place a stack of three pancakes on a microwave-safe plate and microwave on high for 1-1/4 to 1-1/2 minutes or until heated through.

This delicious recipe is perfect for our Sabbath morning breakfast. One recipe is never enough for my family. The pancakes are always moist and nutritious. I recommend these pancakes to be eaten with hot cinnamon syrup!

- In a large bowl, combine butter, egg, milk and apple. In a separate bowl, sift together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture, just until combined.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Tasty pancake mix with apples and nuts. Makes 8 1/2 cups of dry mix. Make it up and store it in a container to have on hand, or give as a gift mix in a basket with apple butter and fresh syrup.

Steps:
- Combine the dry milk, the flours, pecans, sugar, baking powder, salt, and cinnamon in a large bowl.
- Stir in the apples.
- Store in an airtight container in cool place.
- Makes 8 1/2 cups of pancake mix.
- Cooking instructions: Measure 2 ¾ cups of the pancake mix into a medium bowl.
- Add 1 ¼ cup water, 1 egg and 2 tablespoons vegetable oil.
- Stir until just moist.
- Grease and preheat a griddle or skillet.
- Using about ¼ cup batter for each pancake, cook until top is full of bubbles and bottom is browned.
- Turn the pancake and cook on the other side until golden brown.
- For a gift, place the mix in a container or a Ziploc bag.
- Place the Ziploc bag in a home made fabric bag and attach a gift tag with name and cooking instructions.

- In a large bowl, combine the pancake mix, milk, oil and egg. In an 8-in. ovenproof skillet, melt butter. Stir in brown sugar and apple slices; saute until sugar is dissolved. Pour batter over apple mixture. , Cook, uncovered, over medium heat until bubbles form on top of pancake. Bake, uncovered, at 350° for 12-17 minutes or until golden brown. Invert onto a serving platter. Serve with syrup.

- In a microwave safe bowl, heat diced apples and water for 2 minutes until soft. Drain water, but reserve to thin batter if needed. Set apples aside.
- Heat a griddle or large non-stick pan over medium-low heat. While griddle is heating, in a large bowl, gently whisk flour, sugar, baking powder, cinnamon, baking soda, and salt.
- In a separate medium bowl, whisk buttermilk, butter, egg, and vanilla. If it looks too thick, add a little more buttermilk (buttermilk thickness can vary) or the reserved water from the apples. Add the buttermilk mixture to flour mixture. Whisk until just combined. Gently fold in diced apples. Do not over mix.
- Lightly grease griddle or pan with non-stick spray or a little butter. Pour ~¼ cup batter onto griddle to create pancakes. Immediately, sprinkle any desired toppings on pancakes, and gently press toppings down as needed. Cook until tiny bubbles appear on the surface and edges start to firm up.
