APPLE TART

Apple Tart image

For 15 years my husband, daughter and I owned and operated an apple orchard, where we raised 27 variations of apples on 2,200 trees. This easy apple tart recipe is my personal favorite. My family even prefers this wonderful dish with tart apples over traditional apple pie. I hope you enjoy it, too. -Marilyn Begres, Dexter, Michigan

EASY APPLE TART

Easy Apple Tart image

This may be the easiest apple dessert, ever. No pie plate is required to make this treat-simply fill, fold and bake!

Provided by By Betty Crocker Kitchens

Categories     Dessert

Time 2h5m

Yield 8

Number Of Ingredients 6

One-Crust Pastry or Easy Buttermilk Pastry
2/3 cup packed brown sugar
1/3 cup Gold Medal™ all-purpose flour
4 cups thinly sliced peeled tart apples (4 medium)
1 tablespoon cold butter
Granulated sugar, if desired

Steps:

  • Heat oven to 425°F. Make pastry as directed-except roll into 13-inch round. Place on ungreased large cookie sheet. Cover with plastic wrap while making filling.
  • In large bowl, mix brown sugar and flour. Stir in apples. Remove plastic wrap from pastry. Mound apple mixture in center of pastry to within 3 inches of edge. Cut butter into small pieces; sprinkle over apples. Fold edge of pastry over apples, making pleats so it lays flat on apples (pastry will not cover apples in center). Sprinkle pastry with sugar.
  • Bake 30 to 35 minutes or until crust is light golden brown. Cover center of pie with 5-inch square of foil during last 10 to 15 minutes of baking to prevent excessive browning. Cool on cookie sheet on cooling rack 1 hour, or serve warm if desired.

CLASSIC APPLE TART

Classic Apple Tart image

Apple tart is my family's favorite dessert. I love it because it makes the house smell amazing and the tart looks so polished and beautiful (taking a few extra minutes to fan out the apples makes it look like it came from a bakery!). This is a French-style apple tart, not an apple pie, meaning a wedge of the tart is thinner and neater than a slice of all-American apple pie. Try it topped with ice cream for that delicious a la mode taste. Rolling the dough for the tart makes for a finer-textured crust, but on many occasions I have simply pressed the crust into place with great results.

Time 1h40m

Yield Makes one 9- or 91/2-inch tart

Number Of Ingredients 7

1 stick unsalted butter, cut into1-inch cubes, plus 1 tablespoon, melted
11/2 cups all-purpose flour, plus extra for rolling
1/4 teaspoon kosher salt
2 tablespoons sugar
3 Granny Smith apples
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon

Steps:

  • Set the cubed butter on a plate and place it in the freezer for 15 minutes. Fill a cup with ice and water and set aside. Place 1 1/2 of the flour, 1 8 teaspoon of the salt, and 1 tablespoon of the sugar in the bowl of a food processor and pulse to combine. Take the butter out of the freezer and add it to the flour. Pulse the mixture until it looks like wet sand, about 10 seconds. Add 2 to 3 tablespoons of the ice water and pulse until the dough comes together into a ball.
  • Lightly flour your work surface and place the dough on top. Then lightly flour the top of the dough and roll to about a 10- to 11-inch circle, sprinkling more flour under and on top of the dough as necessary. Gently drape the dough over the rolling pin and transfer it to a 9- or 9 1/2-inch fluted tart pan (ideally one with a removable bottom). Fit the dough into the bottom and up the sides of the pan as evenly as possible and press off excess dough from the fluted rim. Set the tart pan on a baking sheet and place in the refrigerator for 15 minutes.
  • Preheat the oven to 350degreesF. Peel, core, and quarter the apples and then thinly slice them lengthwise. Place the apples in a large bowl and toss with the lemon juice, the cinnamon, and the remaining 1 tablespoon sugar and 1 8 teaspoon salt. Remove the baking sheet with the tart shell from the refrigerator. Arrange the apples in concentric circles so they overlap slightly. Brush the edges of the crust with the melted butter and then bake until the edges are golden and the apples have cooked down, about 1 hour. Cool for 15 minutes before slicing and serving.

APPLE-PECAN TART

Apple-Pecan Tart image

Provided by Florence Fabricant

Categories     dessert

Time 2h

Yield 8-10 servings

Number Of Ingredients 11

1 1/3 cups flour, more for rolling
1 tablespoon granulated sugar
1/2 teaspoon salt
10 tablespoons cold unsalted butter
1 large egg yolk plus 3 large eggs
2 medium tart apples, peeled, cored and sliced
2 tablespoons light brown sugar
1 1/2 cups coarsely chopped pecans
1 cup maple syrup
1 teaspoon vanilla extract
1 cup heavy cream, whipped, for serving

Steps:

  • Heat oven to 400 degrees. Place flour, sugar and salt in food processor. Pulse to blend. Dice 8 tablespoons butter, place in food processor and give it about 20 quick pulses, until butter is in tiny lumps. Beat egg yolk with 4 tablespoons ice water. Open cover of machine and sprinkle in egg mixture. Pulse briefly. Ingredients should start to clump together to form a dough; do not allow a ball of dough to form. If dough is too dry to hold together, add another teaspoon or two of water and pulse again.
  • Transfer dough mixture to lightly floured work surface and gather together to form into a flat, smooth disk. Roll to a circle about 13 inches in diameter and fit into a 10-inch fluted tart pan. Line with foil, weight with pastry weights and bake 10 minutes, until dry-looking. Remove foil and weights, prick bottom of pastry in a few places and bake until golden, about 20 minutes more. Remove from oven.
  • While pastry is baking melt remaining 2 tablespoons butter in a skillet. Add apples and sauté over medium-high heat until lightly browned. Stir in brown sugar, then add pecans. Sauté another minute. Remove from heat and spread in baked pastry. Beat eggs, stir in syrup and vanilla and pour over apples and pecans.
  • Bake 15 minutes. Reduce heat to 350 degrees and bake until set and browned on top, about 25 minutes more.

  • For crust, lay one sheet of phyllo dough on an 11- to 13-inch pizza pan; brush with part of the 1/3 cup melted butter. Lay a second sheet on top, perpendicular to the first; brush with butter. Repeat for a total of 8 sheets, placing each sheet perpendicular to the previous one. Fold outside edges toward the center, forming a shell about 10 inches in diameter. (It's OK if some of the phyllo dough sheets tear, causing a flakier-looking edge.) Brush phyllo lightly with any of the remaining 1/3 cup melted butter. Bake in a 400 degree F oven for 15 minutes or until phyllo is golden. If the crust puffs during baking, poke a few holes in the crust with a fork, gently flattening the center. Let the crust cool completely.
  • For filling, melt the remaining 1/4 cup butter in a Dutch oven. Stir in brown sugar, apple juice concentrate, and cinnamon. Stir in apples and raisins until coated. Bring to boiling; reduce heat. Cook, covered, about 10 minutes or until apples are tender, stirring once. Remove fruit with a slotted spoon, reserving juices. Toss fruit with flour and spoon into prepared crust; set aside. (To make filling ahead, prepare to this point. Cool about 30 minutes before spooning into crust. Drizzle with cream mixture and sprinkle with nuts before baking.)
  • For cream mixture, gently boil reserved juices in Dutch oven about 6 minutes or until thickened and reduced to about 1/4 cup. Add half-and-half; cook and stir over low heat until well combined. Pour over apple mixture in crust. Sprinkle nuts over top. Bake in a 350 degree F oven for 20 to 25 minutes or until golden brown. Let stand 20 minutes. Just before serving, sprinkle lightly with powdered sugar. If desired, serve warm with whipped cream or ice cream. Makes 10 to 12 servings.
