I love this recipe because it is so full of wonderful flavors. A little spicy and a little sweet, these fabulous meatballs score huge at tailgate parties or holiday buffets. -Joyce Conway, Westerville, Ohio

Number Of Ingredients 19

1-1/4 cups panko bread crumbs
1 medium onion, finely chopped
1 medium sweet red pepper, finely chopped
1 medium apple, peeled and finely chopped
2 large eggs, lightly beaten
1/2 cup canned pumpkin
1/2 cup ketchup
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pumpkin pie spice
3/4 teaspoon pepper
1/2 teaspoon crushed red pepper flakes
1 pound ground beef
1 pound bulk hot Italian sausage
SAUCE:
1 can (14 ounces) whole-berry cranberry sauce
1 jar (12 ounces) apple jelly
3/4 cup ketchup
1/2 teaspoon crushed red pepper flakes

Steps:

  • In a large bowl, combine the first 12 ingredients. Crumble beef and sausage over mixture and mix well. Shape into 1-in. balls., Place meatballs on greased racks in shallow baking pans. Bake, uncovered, at 375° for 15-20 minutes or until no longer pink. Drain on paper towels., Meanwhile, in a Dutch oven, combine the sauce ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Gently stir in 6 dozen cooked meatballs and heat through. Save the remaining meatballs for Hungarian Pepper Soup with Romano Crisps or save for another use.

Ground pork, applesauce, soy sauce, and carrots give these meatballs a sweet and salty flavor.

4 ounces dried mushrooms, chopped
½ cup warm water
1 pound ground pork
2 carrots, shredded
⅓ cup diced onion
2 cloves garlic, minced
2 tablespoons soy sauce
1 egg white
½ cup applesauce
¼ cup water
2 tablespoons maple syrup
2 tablespoons soy sauce
2 teaspoons brown sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Prepare a 2-quart baking dish with cooking spray.
  • Place the dried mushrooms in a bowl. Pour 1/4 cup of warm water over the mushrooms; allow to soak until the mushrooms have rehydrated, about 30 minutes. Drain, reserving the water, and set both the mushrooms and water aside.
  • Combine the ground pork, carrots, onion, garlic, 2 tablespoons soy sauce, the drained mushrooms, and the egg white in a large bowl; mix with hands until evenly combined. Form the mixture into 16 meatballs; arrange into the prepared baking dish.
  • Stir the reserved water from the mushrooms, the applesauce, 1/4 cup water, maple syrup, 2 tablespoons of soy sauce, and brown sugar together in a bowl; pour over the meatballs. Cover the dish with aluminum foil.
  • Bake in the preheated oven for 45 minutes. Remove the foil from the dish and continue baking until the meatballs are cooked through and no longer pink in the center, about 20 minutes more.

These meatballs have a deliciously appley flavour and are a great way to disguise fruit from fussy kids.

1 lb cooking apple, peeled, cored and quartered
1 lb lean ground beef
3 ounces fresh breadcrumbs
2 teaspoons dried sage
1 egg yolk, beaten
2 tablespoons olive oil
1 1/2 lbs pasta sauce

Steps:

  • Coarsely grate the apples and place half in a large bowl.
  • Add the ground beef, breadcrumbs, sage, egg and plenty of seasoning. Use clean hands to mix the mixture together.
  • Divide into about 32 pieces and roll into small balls.
  • Heat the oil in a large non-stick frying pan, add the meatballs and fry over a high heat for six to eight minutes, stirring occasionally until golden brown on all sides.
  • Add the remaining grated apples to the pan and stir well. Add the tomato sauce and season to taste.
  • Cover and simmer for five to seven minutes or until the sauce is thickened. Serve with freshly cooked pasta.

Turkey-Apple Swedish Meatballs image

For the meatballs:
3 cups packed torn pumpernickel bread
1 cup whole milk
1 teaspoon Worcestershire sauce
2 tablespoons unsalted butter
1 tablespoon vegetable oil
6 small shallots, chopped (about 1/2 cup)
1 Granny Smith apple, peeled and grated
2 cloves garlic, minced
Pinch of ground cinnamon
Kosher salt and freshly ground pepper
1 1/4 pounds lean ground turkey
1 large egg
Cooking spray
For the gravy:
2 tablespoons all-purpose flour
1 1/2 cups low-sodium chicken broth
1 1/2 teaspoons Worcestershire sauce
Mashed potatoes, for serving (optional)
Chopped fresh parsley and/or chives, for topping

Steps:

  • Make the meatballs: Pulse the bread in a food processor to make fine crumbs. Add the milk and Worcestershire sauce and pulse to make a paste; set aside.
  • Heat the butter and vegetable oil in a large nonstick skillet over medium heat; add the shallots and cook, stirring, until golden brown, about 8 minutes. Add the apple, garlic, cinnamon, 1 teaspoon salt and a few grinds of pepper and cook until the apple is tender, about 3 minutes. Stir in the breadcrumb mixture and cook, stirring, until thickened, about 4 minutes. Transfer to a large bowl and let cool completely.
  • Add the turkey and egg to the bowl and beat with a mixer on lowspeed until well combined, about 4 minutes. Cover and refrigerate at least 30 minutes.
  • Preheat the oven to 425 degrees F and coat a baking sheet with cooking spray. Dampen your hands and form the meat mixture into 36 balls (about1 inch each). Arrange on the prepared baking sheet and bake until lightly browned, 15 to 20 minutes.
  • Meanwhile, make the gravy: Melt the butter in a medium saucepan over medium heat. Add the flour and whisk to make a smooth paste, about 3 minutes. Gradually whisk in the chicken broth, then add the Worcestershire sauce. Cook, whisking, until slightly thickened, about 5 minutes. Add the meatballs and simmer until firm and cooked through, about 10 minutes. Serve over mashed potatoes and top with parsley and/or chives.

1 envelope onion soup mix
2-1/2 pounds lean ground beef
SAUCE:
2 bottles (18 ounces each) barbecue sauce
1 jar (12 ounces) apple jelly
1 can (8 ounces) tomato sauce

Steps:

  • In a large bowl, combine the first four ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. , In a large skillet, brown the meatballs; drain. Transfer to a greased 3-qt. baking dish. In a large saucepan, combine the sauce ingredients; bring to a boil. Reduce heat; simmer for 10 minutes. Pour over meatballs. , Cover and bake at 325° for 30 minutes or until meat is no longer pink.

1 pound bulk Italian sausage

Steps:

  • In a large bowl, toss apple with cinnamon. Add sausage; mix lightly but thoroughly. Shape into 20 balls; insert a raisin in each meatball., In a large skillet, heat oil over medium heat; cook meatballs in batches until cooked through, turning occasionally., Place buns on baking sheets, cut side up; top with cheese. Broil 3-4 in. from heat 1-2 minutes or until cheese is melted. Top with meatballs.
