APPLE JACKS COOKIES

Number Of Ingredients 10

10 Tbsp. unsalted butter (cubed)
2 cups flour
½ cup Apple Jacks Crushed
1 tsp baking powder
1 Tbsp cinnamon
1 tsp salt
1 cup sugar
1/4 cup light brown sugar
2 eggs
2 tsp vanilla extract

Steps:

  • In a saucepan over medium heat, melt the butter until it froths. Keep stirring until the butter becomes brown (3 minutes or so). Cool Slightly.
  • In an electric mixer with paddle attachment add sugars to the cooled butter and mix.
  • Add in eggs and vanilla to combine.
  • Slowly add in flour, Apple Jacks, salt, baking powder and cinnamon.
  • Refrigerate for 1 hour.
  • Preheat oven to 350.
  • Line cookie sheets with silicon mats.
  • Roll chilled dough into balls about 1 TBSP in size. Roll in powdered sugar and place on cookie sheets about 2" apart.
  • Bake for 12 minutes.
  • Cool completely.

1/2 cup butter or margarine, softened
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1 medium apple, chopped (1 cup)

Steps:

  • Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.
  • Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack; cool. Store loosely covered.

  • 1. Flatten each biscuit into circles with rolling pin.

1 cup Butter ((or margarine))
1 1/2 cup Sugar
2 Eggs
2 3/4 cup Flour
1 Tablespoon Baking powder
1/4 teaspoon Salt
3 cups Apple Jacks cereal ((or other cereal of your choice))
1/3 cup Sugar ((for garnish))

Steps:

  • Preheat oven to 400 degrees.
  • Cream butter or margarine with sugar until creamy. Beat in eggs.
  • Add flour, baking powder and salt. Beat just until combined.
  • Divide the cereal into 2 plastic bags with 1 1/2 cups in each bag. Finely crush the cereal in one bag and coarsely crush the cereal in the other bag. Stir both bags into the dough.
  • Roll a heaping teaspoon of dough into a ball, roll in sugar and place on a cookie sheet. Repeat with the remaining dough.
  • Bake for 8 to 10 minutes at 400 degrees. Cool on a wire rack.

These flapjacks add a fruity twist to the classic oat bakes with a mixture of fresh and dried apple, and they're a winning snack for the whole family when you're on the go or out on a picnic.

175g butter, plus extra for the tin
2-3 apples (about 350g), peeled, cored and chopped into small pieces
200g golden syrup
150g light brown soft sugar
300g porridge oats
50g apples, chopped
1/2 tsp ground cinnamon (optional)

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Butter the base of a 20 x 20cm square tin and line with baking parchment. Tip the chopped apples into a small saucepan with 2 tsp water and cook over a medium heat for 3-4 mins until the apples are just soft enough to crush, but there's still a little water left in the pan. If needed, add a little more water and cook the apples for slightly longer. Remove from the heat and crush the apples using a potato masher or a fork to break up slightly, then tip into a bowl and set aside.
  • Tip the butter, golden syrup and sugar into the pan and warm through over a low heat until the butter has melted and the sugar has dissolved. Remove from the heat and set aside.
  • Combine the oats, dried apple and cinnamon, if using, in a large bowl. Tip in the buttery syrup mix and cooked apples, then stir to combine. Tip the flapjack mixture into the prepared tin and press down firmly. Level the surface using a spatula, then bake for 25-30 mins until golden and bubbling at the sides. Leave to cool. Cut into 16 pieces. Will keep in an airtight container for three days.
