STICKY APPLE AND GINGER CAKE



Sticky Apple and Ginger Cake image

Deliciously sticky, fruity easy-to-make cake bars. They're like a cross between gingerbread and fruit cake, and make a great easier alternative to Christmas cake.

Number Of Ingredients 11

1 cup self-raising flour
1 pinch baking powder
1 teaspoon ground ginger
¾ stick butter
¼ cup soft brown sugar
¼ cup golden syrup ((dark corn syrup in USA))
1.5 ounces crystallized ginger (chopped (either in syrup or crystallized is fine))
½ cup dried fruit (e.g. prunes, apricots, cranberries, raisins (chopped))
1 apple (peeled and diced)
1 egg (whisked)
2 ounces white chocolate

Steps:

  • Pre-heat oven to 200C / 390F and line a 8 x 8 inch square baking pan with baking paper.
  • Sift the flour, baking powder and ginger together in a medium bowl.
  • Melt the butter, syrup and sugar together in a saucepan. Add to the flour together with the stem ginger, dried fruit, apple and egg. Stir it all together with a wooden spoon until just combined.
  • Pour the batter into the prepared tin, then bake for 30 minutes until risen and golden. Cover with foil half way through cooking to prevent over-browning.
  • Optional: Melt the white chocolate in a jug in the microwave (in 30-second spurts - I find 3 times does it), then drizzle all over the cake.
  • When cool (and the chocolate - if you've used it - is set), slice into 8 bars.

1/3 cup packed brown sugar
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
3 tablespoons all-purpose flour
1/4 cup (1/2 stick) butter
1/2 cup rolled oats
2 1/4 cups all-purpose flour (I used 1 cup whole wheat pastry flour & 1 1/4 cups all-purpose flour)
1/4 teaspoon ground ginger
1/2 teaspoon ground cinnamon
pinch fresh ground nutmeg
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
4 tablespoons crystalized ginger
6 tablespoons butter, room temperature
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 tablespoon pure vanilla extract
3 eggs
1 1/4 cup buttermilk
1 granny smith apple, peeled, cored, & coarsely chopped

Steps:

  • Heat the oven to 350F degrees.
  • Butter a 9 x 13 glass baking dish; set aside.
  • In a small bowl, make the streusel: combine the brown sugar, ginger, cinnamon, flour, and butter with your fingers until crumbly. Stir in the oats; set aside.
  • In a medium bowl, sift together the flour, ground ginger, ground cinnamon, nutmeg, baking powder, baking soda, and salt.
  • Stir in the crystallized ginger and set aside.
  • In a large mixing bowl, beat the butter with an electric mixer until light and fluffy. Gradually add the sugars and beat until very light. Add the vanilla and then the eggs one at a time, beating each one in well before adding the next.
  • Alternately stir in the flour and the buttermilk, until the batter is just mixed, taking care not to over mix. Gently stir in the chopped apple.
  • Pour the batter into the prepared pan. Sprinkle with reserved streusel.
  • Bake about 40 to 45 minutes or until the top of the cake is firm to the touch and a toothpick inserted into the middle of the cake comes out clean.
  • Remove from oven and place cake of wire rack to cool.
  • Serve slightly warm or at room temperature.

Finally, after all these years, I've come up with a solution for people who can't decide whether to make an apple crumble or coffee cake. This features the best things about both of those recipes. It's like baking a crumb-topped coffee cake on top of another coffee cake!

2 teaspoons unsalted butter
2 cups all-purpose flour
½ teaspoon fine sea salt
1 teaspoon baking powder
¾ teaspoon baking soda
1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 cup plain yogurt
2 each Honeycrisp apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

Steps:

  • Heat the oven to 350°F Butter and flour a 10-cup Bundt pan and set aside.
  • For the streusel: Blend the brown sugar, ginger, cinnamon, flour, and butter with your fingers or a pastry blender until the mixture resembles large breadcrumbs.
  • Mix in the walnuts and refrigerate until ready to use.
  • For the cake: Sift together the flour, ground ginger, nutmeg, baking powder, baking soda, and salt into a large bowl. Stir in the ginger and set aside.
  • In a large mixing bowl, beat the butter with an electric mixer until light and fluffy. Gradually add the sugars, continuing to beat until very light.
  • Add the vanilla and then the eggs one at a time, beating each one in well before adding the next.
  • Alternately stir in the flour mixture and the buttermilk, until he batter is just mixed. Don't overeat or your cake will be tough.
  • Gently stir in the chopped apple.
