APPLE DUMPLING PUDDLE PUDDING
Try these wonderfully light, fluffy dumplings baked in a pool of salted caramel apples - what's not to love? The ultimate comfort dessert for colder weather

- Heat oven to 180C/160C fan/gas 4. Melt the butter, sugar and golden syrup in a pan with 100ml water. Bring to a simmer, add the apples and cook for 10-15 mins until they're starting to soften - it will be quite saucy. Add a generous pinch of salt, taste and check the balance, adding more if you like. If your pan isn't ovenproof, pour into a baking dish about 20 x 30cm, or two smaller ones.
- Tip the flour into a bowl. Mix with the baking powder, sugar, cinnamon and a pinch of salt. Rub the butter into the mixture with your fingertips until it resembles damp sand. Add the milk, stir with a cutlery knife until it starts to clump together, then use your hands to bring the dough together, picking up any flaky bits. Don't overwork it or your dumplings will be heavy. Divide into 12 golf ball-sized pieces and roll into dumplings. Arrange over the apples, leaving little gaps here and there. Sprinkle with a little extra sugar (brown or caster) and bake for 25 mins until the dumplings are puffed up and golden. Let rest for a few mins and serve with plenty of cold cream.

Steps:
- Combine applesauce, brown sugar, 3/4 tsp nutmeg and cinnamon in a large saucepan.
- Heat over medium low heat untilsugar is dissolved and sauce is bubbling.
- In mixing bowl combine flour, baking powder, salt and 1/4 tsp nutmeg.
- Beat the egg, stir into buter and milk and add all at once to flour mixture.
- Stir together until just moistened and stiff.
- Drop by heaping TBS onto bubbling applesauce.
- Cover and cook 20 minutes.
- Do not lift lid.
- Serve with pouring cream or whipped cream.

- Peel and slice apples and place in a medium ovenproof dish.
- Rub the butter in to the flour then add salt, sugar and then the water - this will look like there is too much water as the rubbed in bits actually float, dont worry this is the way it should look.
- Pour over the apples and bake in a hot oven 210c for 30 minutes. serve hot with either cream or ice cream.

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

My friend sent me this recipe. I haven't gotten to try it yet but it sure sounds delicious. It has a special ingredient in it that I bet gives it a lemon citrus taste. I can't wait to try it.

Steps:
- Peel apples, cut apples in half and core. separate crescent rolls into triangles. place one half of apple on wide end of triangle and roll apple up in roll.
- Roll toward the point end.
- Tuck dough in around apple.
- Place apple in baking dish (9x13-inch).
- Repeat with all apples and rolls.
- Put sugar, butter, cinnamon and Mt. Dew in pot and place over medium heat until butter and sugar is melted (don't boil).
- Pour over apple dumplings.
- Place in 350°F oven for 45 minutes.
- Baste dumplings every 15 minutes with liquid in dish.
- Note: (Buy the apples that are in bag, if you buy the apples that are loose they will be larger and you might want to use only a quarter of the apple in each roll).
- Put a scoop of vanilla ice cream over a hot dumpling and enjoy. Yum, yum, yum.

- Preheat oven to 375 degrees.
- Melt butter in a 2 quart casserole dish.
- Combine sugar, flour, salt, baking powder, cinnamon and milk to make a batter.
- Pour the batter on the butter (without mixing).
- Put apples in the center of the batter (without mixing).
- Bake in 375 degree oven until batter covers apples and crust browns, approximately 30 to 40 minutes.
- Note: This is especially delicious if made with Northern Spy apples.

- Sift flour, measure, and resift with sugar, baking powder, and salt, into mixing bowl.
- Add butter and mix with finger tips.
- Combine beaten egg and milk and pour into dry ingredients; beat until thoroughly mixed.
- Heat the applesauce, combine with cinnamon and lemon juice, and pour into a large baking dish (10x6.5x2 inches).
- Drop batter by tablespoonfuls onto the hot applesauce. Cover and bake in a hot oven (450 degrees) for 25 to 30 minutes, until crust is golden brown.
- Serve with cream or top milk.
