If you just went apple picking, here's the perfect recipe to enjoy the fruits of your labor. We've included two varieties of fresh apples, plus warm spices and tangy cider. The sweet, buttery crumble topping is flavored with brown sugar and studded with nutty pecans for the ultimate easy apple dessert.

Unsalted butter, for greasing the pan
3/4 cup firmly packed light brown sugar
1/4 cup all-purpose flour
1/4 cup apple cider
1 1/2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
2 pounds Granny Smith apples
2 pounds Honeycrisp apples
1 1/2 cups all-purpose flour (see Cook's Note)
1 cup old-fashioned rolled oats
2/3 cup firmly packed light brown sugar
1/2 cup pecans, coarsely chopped
1/2 teaspoon cinnamon
1/4 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cubed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking dish.
  • For the filling: Whisk together the brown sugar, flour, apple cider, cinnamon, nutmeg and salt in a large bowl. Peel and core the apples and cut into chunks. Add the apples to the brown sugar mixture and toss to combine.
  • Transfer the apple mixture to the prepared baking dish in an even layer.
  • For the topping: Combine the flour, oats, brown sugar, pecans, cinnamon and salt in a medium bowl. Add the butter cubes and use your fingers to completely work the butter into the flour mixture. The mixture should hold its shape when squeezed.
  • Sprinkle the crumble topping over the filling, squeezing some of the mixture into small clumps. Bake until the filling is bubbly, the apples are tender and the topping is golden brown, about 1 hour.
  • Let sit for at least 45 minutes and serve slightly warm or at room temperature.

Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 pound cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
  • Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
  • To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
  • Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.

8 large Granny Smith apples, peeled, cored and cut into 1/2-inch slices
4 cups fresh dates, pitted and cut into 1/2-inch dice

1 teaspoon grated lemon zest

Steps:

  • Preheat the oven to 350 degrees. In a large mixing bowl, combine the oats, the flour, brown sugar, salt, cinnamon, nutmeg and orange zest. Add the butter and rub it in with your fingers until evenly mixed.
  • In a 13-by-9-by-2-inch baking dish, toss together the apples, dates, pecans and lemon zest. Cover with the oat mixture. Bake until the apples are tender and the top is browned, about 45 minutes. Serve warm or at room temperature.

4 medium tart cooking apples, sliced (4 cups)
3/4 cup packed brown sugar
1/2 cup Gold Medal™ all-purpose flour

Date-Sweetened Homemade Applesauce image

This homemade applesauce boasts an unusual ingredient in place of traditional sugar - pureed dates! Dates give it a warm, almost caramelly sweetness that I'm completely in love with. You can use any apple, but I recommend honeycrisps. They make a delicious applesauce.

Number Of Ingredients 6

8 pounds apples (peeled, cored, and cut into 1-inch chunks (about 15 medium apples) (I use mostly honeycrisps))
1 1/2 cups water
4 3-inch cinnamon sticks
Peels from one lemon (cut with a vegetable peeler and as much pith removed as possible (about 5 strips))
10 medjool dates (pitted)
Another 1/2 - 3/4 cups water

Steps:

  • Add peeled, cored, and chopped apples to a large pot (I use a 7-1/4 quart Dutch oven) along with the cinnamon sticks and lemon peel. Add 1 1/2 cups water.
  • Place on the stove over medium-high heat, bring to a boil, and reduce to a simmer. Cover and cook until the apples are tender, about 20 minutes.
  • Meanwhile, place the pitted dates and 1/2 cup water in the pitcher of a high-speed blender. Puree until completely smooth, adding additional water if needed to keep things going.
  • If, after the 20 minutes, the apples are tender enough to mash with a potato masher, go ahead and mash them as much as possible. Otherwise, cover them back up and give them a bit more time to cook.
  • Once the apples are mashed and stirrable, add the pureed dates. Stir until combined. Taste and add more sweetener if desired (see notes). Continue simmering until applesauce is the thickness you'd like. I cook it for just a few more minutes and it's usually perfect.
  • Remove the lemon peel and cinnamon sticks and discard.
  • If you want completely smooth applesauce, let it cool and then puree in batches in the blender.
  • Store in airtight jars in the refrigerator. With a batch this big, I usually like to freeze some in jars or freezer bags to enjoy later on.

  • Combine the apples and dates in an ungreased 13x9x2 inch baking dish.
  • In a small bowl, combine sugar, flour, and cinnamon.
  • Cut in butter until crumbly.
  • Add nuts and then sprinkle over apples and dates.
  • Bake at 375 degrees F.
  • for 35 to 40 minutes or until the apples are tender.
  • Serve warm.

  • In a small bowl, combine gingersnaps with pecans, remaining sugar, oats, and remaining butter. Using your fingertips, work mixture to form a crumble topping. Distribute topping over apples. Cover dish tightly with aluminum foil. Bake until fruit mixture is bubbling, about 30 minutes. Uncover and continue baking until topping has browned and apples are tender when pierced with a paring knife, about 20 minutes. Let cool 10 minutes before serving with yogurt.
