10 to 11 cups sliced peeled tart apples
1/2 cup sugar
1 teaspoon ground cinnamon, divided
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup quick-cooking oats
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Place apples in a large bowl. Combine sugar and 1/2 teaspoon cinnamon; sprinkle over apples and toss to coat. Transfer to a greased 13x9-in. baking dish. Combine flour, brown sugar, oats, baking powder, nutmeg and remaining cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. Bake until apples are tender, 50-60 minutes. Serve warm with vanilla ice cream, if desired.

10 cups all-purpose apples, peeled, cored and sliced
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
½ cup water
1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
¼ teaspoon baking powder
¼ teaspoon baking soda
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degree C).
  • Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
  • Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
  • Bake at 350 degrees F (175 degrees C) for about 45 minutes.

2 ½ cups apples - peeled, cored, and sliced
1 cup sifted all-purpose flour
1 cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
  • Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
  • Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

8 medium Granny Smith apples, peeled, cored and sliced
1 cup granulated sugar
1 heaping tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 cup all-purpose flour
1 cup quick-cooking oats
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of kosher salt
1 stick (8 tablespoons) salted butter, melted
Ice cream or frozen custard, for serving

Steps:

  • For the apples: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with butter.
  • Arrange the apple slices in the prepared baking dish in an even layer. In a bowl, mix together the granulated sugar, flour, cinnamon and salt. Sprinkle the mixture over the apples, then pour 1/2 cup water over top.
  • For the topping: In a separate bowl, mix the flour, oats, brown sugar, baking powder, baking soda and a pinch of salt. Stir while drizzling in the melted butter. Sprinkle the topping in an even layer over the apples.
  • Bake until the topping is slightly crisp and golden brown, about 43 minutes. Serve warm or at room temperature on its own, with ice cream or with frozen custard.

3/4 cup all-purpose flour, (spooned and leveled)
1/4 cup packed light-brown sugar
1/2 teaspoon salt
1/2 cup plus 2 tablespoons granulated sugar
8 tablespoons (1 stick) unsalted butter, cold, cut into small cubes
1 cup old-fashioned rolled oats (not quick-cooking)
3 pounds apples, such as Empire, Gala, or Braeburn, peeled, cored, and cut into 1/2-inch chunks
2 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
  • In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

1 tablespoon agave nectar (may use maple syrup or honey as well)
1 teaspoon ground cinnamon
Topping:
1 cup rolled oats
1/2 cup wheat germ
1 cup chopped walnuts
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon sea salt
4 tablespoons unsalted butter or safflower oil
3 tablespoons agave nectar, maple syrup, or honey

Steps:

  • Preheat oven to 350ºF. Lightly oil an 8- or 9-inch square baking dish. Toss apples with lemon juice, apple juice or water, sweetener, and cinnamon. Spread in bottom of pan. Mix oats, wheat germ, nuts, spices, and salt in food processor with metal blade or by hand. Heat butter or oil and mix with sweetener until smooth. Add to oat mixture and stir until completely combined. Cover apples with topping. Bake for 30 minutes or until golden. Serve with your choice of topping (page xxx). Makes 9 servings

1/2 cup agave nectar
2.5 T cinnamon
1/2 t ground nutmeg
1/2 cup whole wheat pastry flour
2 cups quick or old fashioned oatmeal
dash of salt
1/2 cup (1 stick) of butter
1/2 cup chopped walnuts or pecans
Vanilla ice cream or whipped cream

Steps:

  • Peel, core, and slice 8 large apples or 10 medium ones. Arrange sliced apples in a 9 x 13 inch baking pan. Drizzle apples with ½ cup agave nectar. In a bowl, combine2 ½ T. ground cinnamon, ½ tsp. ground nutmeg, ½ cup whole-wheat pastry flour, 2 cups quick or old-fashioned oatmeal, and dash of salt if using unsalted butter in the recipe. Melt a stick of butter (½ cup) and combine with the dry ingredients to form pebble-sized crumbles. Toss in ½ cup chopped walnuts or pecans and mix. Sprinkle the crumbly mixture over sliced apples and bake in 350 degree oven for 45-55 minutes, or until apples are tender when pricked with a fork. Top with whipped cream or vanilla ice cream, and serve warm or cold.
