3 cups chopped peeled tart apples
2 cups fresh or frozen cranberries
1 cup sugar
3 tablespoons all-purpose flour
TOPPING:
1-1/2 cups quick-cooking oats
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, melted
1/4 cup chopped pecans

Steps:

  • Combine apples, cranberries, sugar and flour. Pour into a greased 11x7-in. baking dish. In a bowl, mix topping ingredients until crumbly; sprinkle over apple mixture. Bake at 350° for 50-55 minutes or until fruit is tender.

2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

8 apples
1 cup cranberries (fresh or frozen0)
1/2 cup flour
1/4 cup whole wheat flour
1/2 cup large flake rolled oats
1/2 cup brown sugar, packed
2 -4 tablespoons candied ginger, finely minced
1/2 teaspoon cardamom, ground
1/2 teaspoon cinnamon
1/3 cup butter, big chunks

Steps:

  • Peel and core apples; slice into thin wedges. In a large bowl, stir together apples and cranberries. Turn into an 11x9-inch baking dish.
  • In a bowl, stir together flour, rolled oats, sugar, ginger, cardamom, and cinnamon.
  • Using fingers, work in butter until pea-size crumbs form. Sprinkle over fruit.
  • Bake in 350F oven until bubbling around edges and topping is set and deep golden brown, about 1 hour. Check after 45 minutes; if topping is becoming too dark, cover loosely with foil. Let stand about 10 minutes before serving.
  • Makes 8-10 servings.

5 granny smith apples
1/3 cup fresh cranberries (blueberries or raspberries)
2 tablespoons white sugar
2 tablespoons light brown sugar (do not use dark brown)
1 -2 teaspoon cinnamon
2 tablespoons melted butter
3/4 cup flour
1/2 cup oatmeal (old fashioned)
1/4 cup white sugar
1/4 cup light brown sugar
11 tablespoons butter (slightly softened)

Steps:

  • Preheat oven to 375°F.
  • Lightly butter your 8"x8" baking dish.
  • Combine apples, berries, white sugar, light brown sugar in a bowl and add to the baking dish.
  • Combine flour, oatmeal, white and light brown sugars in a separate bowl.
  • Add butter and mix with hands until crumbly.
  • Pour melted butter over the apples.
  • Cover apples with as much topping mixture as you feel necessary (you do not need to add the entire mixture).
  • Bake for about 35-40 minutes until topping is golden in color, do not bake until fully browned.
  • Serve with vanilla ice cream or whip cream (or both).

4 tablespoons packed light brown sugar
1 tablespoon all-purpose flour
4 teaspoons cold reduced-calorie margarine
6 firm coooking apples, peeled,cored and thinly sliced (Granny Smith)
1 cup fresh cranberries or 1 cup frozen cranberries
1 tablespoon fresh lemon juice
1/4 teaspoon cinnamon
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 8" square baking dish with nonstick cooking spray.
  • In a small bowl, combine the oats, 2TBSP brown sugar and the flour.
  • With two knives or your fingers work in the margarine until crumbly.
  • In a large bowl, combine the apples, cranberries, the remaining 2 TBSP of brown sugar, lemon juice, cinnamon and nutmeg; toss to combine.
  • Spoon into the pan; sprinkle with the oats mixture.
  • Bake until the filling is bubbling and the topping is golden brown, 35-40 minutes.

A delicious healthy crisp made from adjusting several pie and crisp recipes to suite my taste. I'm posting so I won't loose it. If you're not counting calories this is great with a scoop of ice cream. The ten-grain cereal along with the oats in the topping gives a nice crumbly taste and texture to the topping.

3/4 cup sugar substitute (I use splenda)
2 tablespoons ten-grain pancake mix (Bob's Red Mill)
1 teaspoon cinnamon
1/4 teaspoon salt or 1/4 teaspoon sea salt
4 cups apples (sliced thin)
2 cups cranberries (fresh or frozen)
1/4 cup old fashioned oats
1/4 cup ten-grain cereal (Bob's Red Mill)
1/4 cup sucanat or 1/4 cup brown sugar
1/8 cup Splenda granular (sugar substitute)
1/3 cup ten-grain pancake mix (Bob's Red Mill)
1/4 cup butter (I use promise active)

Steps:

  • Preheat oven to 400.
  • Spray a 2 quart casserole dish with pam.
  • In a small bowl combine filling ingredients: sugar substitute, pancake mix, cinnamon & salt, mix well and set aside.
  • In a large bowl combine sliced apples and cranberries.
  • Pour small bowl of ingredients over fruit and toss well to cover all fruit.
  • Spoon fruit mixture into casserole dish, sprinkle any remaining splenda mixture into the fruit.
  • In a small bowl combine all topping ingredients; oats, cereal, sucanat, splenda, pancake mix and stir well. Add butter and cut into mixture until crumbly.
  • Sprinkle over fruit mixture.
  • Bake at 400F for 30 to 35 minutes or until topping is golden brown and fruit is tender.
  • This will make 6 large servings or 8 more modest servings.
