Creamy Cinnamon Apple and Walnut Fruit Salad image

The perfect autumn fruit salad! It's loaded with crisp, sweet apples, cranberries and walnuts and covered in a rich, cinnamon cream cheese dressing. What's not to love?

1 (8 oz) pkg. Neufchatel cheese, softened slightly ((light cream cheese))
1/2 cup packed light brown sugar
2 tsp ground cinnamon
1/8 tsp ground nutmeg
1 (8 oz) pkg. light sour cream
1 tsp vanilla extract
4 lbs crisp, (sweet apples, chilled (I used a combo of Gala, Jazz and Golden Delicious))
2 cups cold water, (for soaking apples)
2 Tbsp fresh lemon juice, (for soaking apples)
1 cup chopped Fishers Walnuts
3/4 cup dried cranberries

Steps:

  • For the dressing: In a mixing bowl using an electric hand mixer, whip together Neufchatel cheese, brown sugar, cinnamon and nutmeg on high speed until light and fluffy, about 3 minutes.
  • Add sour cream and vanilla and blend until combined. Chill until ready to serve salad.
  • For the fruit salad:I n a medium mixing bowl combine water and lemon juice. Dice apples into cubes, while cutting out core, and as your cutting them in batches dump them into the lemon water mixture and let rest about 1 minute then drain on paper towels (this just reduces the browning).
  • Transfer apples to a bowl along with about 3/4 of the walnuts and 3/4 of the cranberries, and the Neufchatel cheese mixture.
  • Toss to coat apples evenly. Sprinkle remaining 1/4 of the walnuts and cranberries over top. Keep chilled and serve within an hour for best results*.

For over 30 years, this recipe has been a holiday tradition in my family. With marshmallows, cranberries, apples and grapes, it has a sweet-tart flavor and comforting creaminess that appeals to all ages.

1 package (12 ounces) fresh or frozen cranberries, thawed
3 cups miniature marshmallows
1 cup sugar
2 medium apples, diced
1/2 cup halved seedless red grapes
1/2 cup chopped walnuts
1/4 teaspoon salt
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • Coarsely chop the cranberries; place in a large bowl. Stir in marshmallows and sugar. Cover and refrigerate for several hours or overnight. , Just before serving, stir in the apples, grapes, walnuts and salt. Fold in whipped topping.

1/2 cup pepitas (shelled pumpkin seeds)
1/2 teaspoon olive oil
1/4 teaspoon salt
1/3 cup dried cranberries, chopped if desired
1/4 cup extra virgin olive oil
1 tablespoon apple cider (or raspberry, pear or other fruity) vinegar
Finely grated zest of half an orange, optional
Salt and freshly ground black pepper
1 apple, cored and quartered
1 head lettuce, cored and torn into pieces, or mesclun mix
1 6-ounce log of goat cheese

Steps:

  • Preheat oven to 350 degrees. Toss pepitas with olive oil and salt in a bowl. Spread on baking sheet and toast in oven until golden and popped, 8 to 10 minutes. Remove and let cool. Place pepitas and cranberries in bottom of a salad bowl.
  • In another bowl, combine extra virgin olive oil, vinegar and zest, if using. Season to taste with salt and pepper. Whisk until emulsified.
  • Thinly slice each apple quarter crosswise, and add to salad bowl. Add lettuce and dressing, and toss to mix. Crumble cheese over salad and serve.

Found this on the Women's Day site - sounded like a good winter salad but I couldn't find the Boursin Cheese so I adapted this to be "user friendly". The 'home made" version of the Boursin cheese needs to be made a day ahead of time. The prep time does not include the Boursin cheese refrigeration time.

1/2 cup oil & vinegar salad dressing
2 tablespoons pancake syrup
8 cups mixed baby greens
1/2 cup walnuts, chopped (toasted if desired)
1 apple, diced
1 1/2 cups red seedless grapes
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1/8 teaspoon cinnamon
1/4 cup cranberry raisins

Steps:

  • Whisk dressing and syrup in large bowl and set aside.
  • Add greens, apples and walnuts; toss.
  • Arrange greens mixture on serving plates.
  • Add grapes and crumble cheese.
  • To make Boursin cheese: Blend cream cheese, butter, cranberry raisins and cinnamon in food processor and chill overnight.

2 cups water
3 ounces lemon gelatin
2 tablespoons lemon juice
1 1/4 cups chopped apples
1/4 cup chopped walnuts
13 ounces cream cheese, softened
1/4 cup heavy cream

Steps:

  • Combine cinnamon candies and water in saucepan.
  • cook for 5 minutes or until candies dissolve, stirring frequently.
  • Add gelatin and stir until dissolved.
  • cool to room temperature.
  • add lemon juice.
  • chill until partially set.
  • fold in walnuts and apples.
  • spoon 1/2 of the mixture into 8x8" dish.
  • chill until set.
  • combine cream cheese, cream and salt in bowl and mix well.
  • spoon evenly over congealed layer.
  • spread remaining gelatin mixture carefully over the top --

1 cup boiling water
1 package (3 ounces) lemon gelatin
1 cup applesauce
1 package (8 ounces) cream cheese, softened
1/2 cup Miracle Whip
1/2 cup chopped pecans
1/4 cup chopped celery

Steps:

  • In a bowl, dissolve candies in water (reheat if necessary). Add gelatin; stir to dissolve. Stir in applesauce. Pour half into an 8-in. square pan that has been lightly coated with cooking spray. Refrigerate until firm. Cover and set remaining gelatin mixture aside at room temperature. , Meanwhile, combine the cream cheese, Miracle Whip, pecans and celery; spread over chilled gelatin mixture.
