Years ago, we were without electricity for nine days during an ice storm, but I was able run the slow cooker from our generator. The situation called for a treat, and this has been a favorite ever since.

8 medium tart apples, peeled and sliced
1 cup sugar
1/4 cup all-purpose flour
2 teaspoons ground cinnamon
2 large eggs
1 cup heavy whipping cream
1 teaspoon vanilla extract
1 cup graham cracker crumbs
1/2 cup chopped pecans
1/4 cup butter, melted
Optional: Vanilla or cinnamon ice cream

Steps:

  • In a large bowl, combine the apples, sugar, flour and cinnamon. Spoon into a greased 3-qt. slow cooker. Whisk the eggs, cream and vanilla; pour over apple mixture. Combine the cracker crumbs, pecans and butter; sprinkle over top., Cover and cook on low for 4-5 hours or until apples are tender. Serve warm, with ice cream if desired.

DUCK & PORK TERRINE WITH CRANBERRIES & PISTACHIOS



Duck & pork terrine with cranberries & pistachios image

2 duck breasts , about 300g/10oz each, skin removed and reserved
200g thinly sliced streaky bacon rashers
1kg pork shoulder, cubed
2 slices bread , crusts removed
100ml milk
3 shallots , roughly chopped
1 large garlic clove , roughly chopped
200g duck or chicken livers, roughly chopped
6 black peppercorns
12 coriander seeds
2 cloves
good pinch ground cinnamon
2 tbsp Cognac or brandy
2 eggs , beaten
25g shelled pistachio
50g dried cranberry

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Put the duck breasts and skin in a shallow dish, then place in the hot oven for 20 mins. Discard the shrivelled bit of skin that remains, then pour the duck fat into a bowl to cool. Reserve 6 bacon rashers, then roughly chop the remainder. Roughly chop the cooked duck meat.
  • In a food processor, blend the chopped bacon, pork and duck in batches to a coarse texture, then tip into a large bowl. Tear up the bread and soak in the milk for 5 mins. Squeeze out the bread and put in the food processor with the shallots, garlic and livers. Process to a coarse texture, then add to the bowl, mixing well.
  • Grind the peppercorns, coriander seeds and cloves to a coarse powder using a pestle and mortar. Stir in the cinnamon. Add the spices to the meat along with 4 tbsp reserved duck fat, the Cognac, eggs and 2 tsp salt. Mix together very thoroughly - the best way is to use your hands.
  • Press half the mixture into a 1.5-litre baking dish or similar. Scatter over the pistachios and cranberries, then cover with the remaining meat mixture. Arrange the reserved bacon rashers over the top, tucking in the ends. Cover the dish tightly with foil, then put in a roasting tin. Pour boiling water into the tin to come halfway up the sides of the dish.
  • Bake for 2 hrs, remove foil, then bake for 15 mins more to brown the top. Cool completely, then wrap in fresh foil and chill. For the best flavour, let the terrine chill and mature for at least 2 days before eating.
  • TO FREEZE Make the terrine as stated, cool and then freeze. Defrost in the fridge before serving.

This can be a side dish to meat, or a dessert. Don't let the long directions scare you, only 3 ingredients, its not difficult. Bake time is long so plan accordingly. Since it sits for 24 hours, then chills after baking I would suggest making it 2 days before serving. Times do not include sitting time.

2 cups sugar
5 oranges
15 granny smith apples

Steps:

  • Put 1 cup sugar in a small pot, melt, stirring constantly over low heat and cook until golden brown. (only takes a few minutes) Pour sugar into a 9x5 loaf pan or 3 inch deep, 9 inch round cake pan being sure to coat bottom well.
  • Zest orange into long thin strips. Place in saucepan, cover with water and bring to a boil. Drain, refresh under cold water then drain again.
  • Peel apples, halve and core. Cut into 1/8-inch thick slices. Keep neatly stacked. Using flat pieces only (discard round ends) place a layer neatly into bottom of loaf pan. Cover with another layer keeping as neat as possible. Press down to even them out. Sprinkle with a bit of sugar, then some zest. Repeat adding sugar and zest every 2-3 layer.
  • Continue to build layer 3-4 inches above edge of pan keeping lines straight.
  • Cover with plastic wrap then wrap entirely in aluminum foil. Place in a shallow tray to catch drippings. Let sit for 24 hours.
  • Drain juice and unwrap pan. Re-wrap in double layer aluminum foil. Place in a large deep roasting pan, fill pan ½ up the sides of pan with water. Bake at 300ºF for 5-6 ½ hours. It is done when it fills about ¾ of the mold, apples are dark brown and a knife passes easily through.
  • Unwrap, cool and let chill for several hours. Slice thinly and serve.

2 tablespoons unsalted butter, at room temperature
2 tablespoons extra-virgin olive oil
1 large onion, thinly sliced
1 green apple, such as Granny Smith, unpeeled, cored, and thinly sliced
1 red apple, such as Washington, unpeeled, cored, and thinly sliced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup apple cider vinegar
2 tablespoons maple syrup
1 tablespoon chopped fresh thyme leaves
1 French baguette, thinly sliced into 26 (1/4 to 1/2-inch thick) slices
Extra-virgin olive oil, for drizzling
3 ounces creamy gorgonzola cheese sliced into 26 (1/4-inch thick) 1-inch squares

Steps:

  • For the confit: In a high-sided skillet, heat the butter and oil over medium heat. Add the onions, apple slices, salt, and pepper. Cook until the onions begin to soften, about 5 minutes. Add the vinegar, maple syrup, and thyme. Reduce the heat to low and cook, stirring occasionally, until onions and apples are very soft, about 50 minutes.
  • Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Arrange the bread slices on a baking sheet in a single layer. Drizzle with oil and bake until lightly golden, 12 to 14 minutes. Remove the baking sheet from the oven and place the gorgonzola squares on top of the warm toasts. Spoon the confit on top of the cheese. Sprinkle with chopped thyme and serve.
  • Cook's Note: Freeze the gorgonzola for 20 minutes for easier slicing.

4 Granny Smith apples

Steps:

  • In a saute pan on medium, melt the butter then stir in the sugar. Simmer, stirring occasionally until it begins to turn golden brown and caramelized. Add brandy and lemon juice to the pan and simmer to incorporate. Peel, half and core apples. Place apples in caramel and cook slowly to caramelize and tenderize. Serve warm.

3 lbs firm apples (cooking or baking apples, such as Granny Smith, Northern Spy, Rome or Golden Delicious)
1/4 cup sugar
1/2-1 teaspoon ground cinnamon, to taste
1 teaspoon vanilla extract

Steps:

  • Peel the apples and slice 1/4 inch thick. (You should have about 9 cups.)
  • Place the apples in a 4-quart or larger slow cooker.
  • Add sugar and cinnamon to taste, and toss to coat well.
  • Cover and cook until the apples are very tender and almost translucent, but not pureed, 2 to 2 1/2 hours on high or 4 to 4 1/2 hours on low.
  • Stir in vanilla.
  • Transfer to a bowl and let cool slightly.
  • Cover and refrigerate until chilled.
  • Serve with low-fat vanilla ice cream or frozen yogurt if desired.
