Apple-Cheese Danish image

This easy apple danish recipe comes together quickly thanks to frozen puff pastry.

1 17.3 ounce package (2 sheets) frozen puff pastry sheets, thawed
2.5 pound cooking apples, peeled (if desired), cored, and thinly sliced (about 7 cups)
2 tablespoon butter
1 cup granulated sugar, divided
2 tablespoon all-purpose flour
1 teaspoon ground cinnamon, divided
0.125 teaspoon ground nutmeg
1 8 ounce package cream cheese, softened
1 egg
1 teaspoon vanilla
Milk
2 tablespoon coarse sugar

Steps:

  • Preheat oven to 375°F. Lightly grease a 15x10x1-inch baking pan; set aside. On a lightly floured surface, unfold one pastry sheet and roll into a 15x10-inch rectangle. Transfer to the prepared baking pan, pressing dough to edges of pan. Bake in the preheated oven about 12 minutes or until golden brown (pastry will puff and shrink from sides of pan). Cool on a wire rack.
  • Meanwhile, in an extra-large skillet, cook apples in hot butter over medium heat about 8 minutes or just until crisp-tender, stirring occasionally. In a small bowl, combine 1/2 cup of the granulated sugar, the flour, 1/2 teaspoon of the cinnamon, and the nutmeg. Sprinkle over apples. Cook and stir over medium-low heat for 2 minutes more; set aside.
  • In a medium bowl, combine cream cheese and the remaining 1/2 cup granulated sugar. Beat with an electric mixer on medium speed until smooth. Beat in egg and vanilla just until combined. Carefully spread cream cheese mixture over baked pastry to within 1 inch of the edges. Spoon apple mixture over cream cheese mixture.
  • On a lightly floured surface, unfold the remaining pastry sheet and roll into about a 13x9-inch rectangle (make sure pastry is large enough to completely cover apple mixture). Place on top of apple mixture. Lightly press edges of top pastry to edges of bottom pastry. Lightly brush pastry with milk. Using a sharp knife, cut a few slits in pastry to allow steam to escape. In a small bowl, combine coarse sugar and the remaining 1/2 teaspoon cinnamon; sprinkle over pastry.
  • Bake for 35 to 40 minutes or until pastry is slightly puffed and golden brown. Cool on wire rack about 45 minutes. Serve slightly warm. Store any leftovers in the refrigerator. Make-Ahead Tip:
  • Prepare the apple mixture as directed in Step 2. Cool and transfer to an airtight container; cover. Store in the refrigerator for up to 24 hours. Test Kitchen Tip:
  • To save time, prepare as directed, except substitute one 21-ounce can of your favorite fruit pie filling for the apples, butter, 1/2 cup of the granulated sugar, the flour, 1/2 teaspoon of the cinnamon, and the nutmeg; omit Step 2.

PASTRY:
3 cups all-purpose flour
1/2 teaspoon salt
1 cup shortening
1 large egg yolk
1/2 cup milk
FILLING:
6 cups sliced peeled apples
1-1/2 cups sugar
1/4 cup butter, melted
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
GLAZE:
1 large egg white, lightly beaten
1/2 cup confectioners' sugar
2 to 3 teaspoons water

Steps:

  • In a bowl, combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Combine egg yolk and milk; add to flour mixture. Stir just until dough clings together. Divide dough in half. , On a lightly floured surface, roll half of dough into a 15x10-in. rectangle; transfer to a greased 15x10x1-in. baking pan. Set aside. , In a bowl, toss together filling ingredients; spoon over pastry in pan. Roll out remaining dough into another 15x10-in. rectangle. Place over filling. Brush with egg white. Bake at 375° for 40 minutes or until golden brown. Cool on a wire rack. , For glaze, combine the confectioners' sugar and enough water to achieve a drizzling consistency. Drizzle over warm pastry. Cut into squares. Serve warm or cold.

1 (24 ounce) carton cottage cheese
3 apples - peeled, cored and thinly sliced
1 teaspoon lemon juice
1 (8 ounce) package cream cheese, at room temperature
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1 (17.5 ounce) package frozen puff pastry, thawed
3 tablespoons white sugar for decoration

Steps:

  • Place the cottage cheese in a strainer lined with cheesecloth or heavy-duty paper towels. Pat dry with paper towels and set aside for 5 to 10 minutes.
  • Place apples in a bowl, and sprinkle with lemon juice to prevent browning.
  • Combine the cream cheese, drained cottage cheese, 1/2 cup sugar, egg, and vanilla extract in the bowl of an electric mixer, and mix 1 to 2 minutes on high speed, until almost smooth.
  • Preheat an oven to 400 degrees F (200 degrees C). Line two baking sheets with parchment paper.
  • Cut each of the puff pastry sheets into 9 pieces; you should have 18 total. Roll the pieces out, one at a time, to make 5 x 5-inch squares. To ensure the pastries puff up, avoid using too much pressure or rolling over the edges of the dough.
  • Place a square in front of you so that it looks like a diamond. Spoon a generous amount of cheese filling down the middle of each square, leaving 1/4 inch of room at the top and bottom edges. Fan out 4-5 slices of apple down the center of each cheese-filled square. Bring the left and right corners together to meet in the center and pinch to seal.
  • Transfer the Danish to a baking sheet and repeat with the remaining pastries. Sprinkle sugar over each bundle and bake in the preheated oven until the pastry is golden brown, about 20 minutes.

½ cup brown sugar
1 teaspoon ground cinnamon
2 (8 ounce) packages refrigerated crescent roll dough, divided
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
1 teaspoon vanilla extract
1 (20 ounce) can apple pie filling
½ cup unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray. Mix brown sugar and cinnamon together; set aside.
  • Unroll one can of crescent roll dough and pat together on the bottom of the prepared baking dish.
  • Beat cream cheese, white sugar, and vanilla together until smooth. Spread over the dough. Layer the apple filling over the cream cheese layer. Top with second package of crescent roll dough, patting the seams together. Drizzle butter on top and sprinkle with cinnamon-sugar.
  • Bake in the preheated oven until golden and bubbly, 40 to 45 minutes.

30g salted butter
1 tbsp vegetable oil
2 large onions, halved and finely sliced
½ bunch of thyme, leaves picked
30g plain flour
500ml vegetable stock
1 tbsp wholegrain mustard
1 tbsp white wine vinegar
450g potatoes (we used Maris Piper), cut into 2-3cm chunks
3 apples, peeled, cored and chopped into 1-2cm chunks
150g mature cheddar, grated
300g plain flour, plus extra for dusting
70g cheddar, grated
150g cold butter, cut into cubes
1 egg, beaten

Steps:

  • First, make the pastry. Tip the flour, cheese and a pinch of salt into a large bowl and mix. Add the butter and rub it in using your fingertips until the mixture resembles breadcrumbs. Mix in 4-5 tbsp cold water, and bring together into a dough. Wrap and chill for 30 mins.
  • To make the filling, melt the butter in a medium saucepan over a medium heat, then add the oil and onions and cook for 10-15 mins until caramelised. Add the thyme and fry for 1 min more. Tip in the flour, and stir to combine. Gradually stir in the stock, adding it in small amounts to prevent lumps forming. Bring to a simmer and cook for 10 mins, stirring occasionally. Stir in the mustard and vinegar towards the end of the cooking time.
  • Meanwhile, put the potatoes in a large pan of cold water, bring to the boil and cook for 4-5 mins until just cooked and still holding their shape. Drain well, then stir into the sauce. Add the apples, cheddar and some seasoning, and stir again. Heat the oven to 200C/180C fan/gas 6.
  • Pour the filling into a 28cm oval baking dish (ours was 28 x 18.5 x 6.5cm). While it cools, roll out the pastry on a surface lightly dusted with flour to the thickness of a £1 coin. Cut into strips roughly 1cm wide. Lay half the strips across the dish horizontally, leaving gaps of a few millimetres in-between, then, one by one, weave in the remaining strips vertically, using an over and under technique, also spacing them apart by a few millimetres. Re-roll any trimmings and cut into flowers, leaves, or other shapes to decorate, if you like (see tip, below). Arrange any pastry shapes on top, then brush with the beaten egg.
  • Bake for 50 mins, keeping an eye on it - you may need to cover the top with foil if it's starting to brown too quickly. Leave to cool for at least 10 mins before serving.

7 crackers, round milk lunch
20 ounces apples, unsweetened presliced
4 tablespoons sugar
1 cup sugar substitute, minus 4 Tablespoons to equal 1 cup total sugar
1 teaspoon cinnamon
3 tablespoons raisins
1 cup low fat cottage cheese
1 egg
1/2 cup skim milk

Steps:

  • Arrange crackers in an 8-inch nonstick cake pan, 6 in a circle and 1 in the center, they shouldn't be touching.
  • Stir apples, sugar, sugar substitute, cinnamon, and raisins together and spoon over crackers.
  • In blender, beat cottage cheese, egg, and milk smooth.
  • Pour over apples.
  • Bake in a preheated 350 oven 1 hour.
  • Serve warm or chilled.
