- In a large bowl, cream the butter, sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff). Stir in apples until well combined., Spread into a greased 13x9-in. baking dish. Bake at 350° for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving., Meanwhile, in a small saucepan, combine brown sugar and butter. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from the heat. Serve with cake.

- Preheat oven to 325°.
- Grease a 9" sq. pan.
- Blend 3/4 cup brown sugar, oil, egg & vanilla in large bowl.
- Combine flour, baking soda & salt. Add to wet mixture. Add apple & buttermilk. Mix thoroughly just to moisten.
- Spread mixture into greased pan.
- Topping: Combine brown sugar, pecans, & cinnamon in small bowl. Sprinkle evenly over batter.
- Bake cake at 325° for 30 to 35 mnutes.

- Combine flour, baking soda, salt and cinnamon; set aside.
- In a large mixing bowl, beat eggs.
- Add sugar, oil, vanilla, and orange juice.
- On low speed, blend in flour mixture.
- Fold in apples, walnuts, and coconut.
- Pour into greased and floured Bundt pan.
- Bake at 325 degrees for 1 1/4 hours or until cake tests done.
- Invert cake onto a large plate or platter.
- Deeply puncture the top of the warm cake with a skewer or pick.
- In a small saucepan, bring all sauce ingredients to a boil, stirring frequently.
- Immediately spoon 1 1/4 cups of the sauce slowly over the top of the cake, then pour the remainder down the sides.
- Cool.
- Serve with whipped cream if desired.

My version of a completely traditional Appalachian stack cake was inspired by the way my ancestors would have made it many moons ago. All the ingredients are there: dried apples, a stiff dough, molasses and apple butter. - Preheat oven to 350°. Line bottoms of 5 greased 6-in. round baking pans with parchment. In a large bowl, cream butter, brown sugar and molasses until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition (mixture may appear curdled). In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon and ginger; add to creamed mixture alternately with buttermilk, beating well after each addition., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., For the sauce, in a large heavy saucepan, combine apples, brown sugar, water and bourbon. Cook, covered, over medium-low heat until apples are soft and pliable, about 20 minutes, stirring occasionally. Add butter. Cook and stir, uncovered, until sauce is thin and syrupy, 5-10 minutes longer. Remove from heat; cool completely., Using a long serrated knife, trim tops of cakes if domed. Spread 1 tablespoon apple butter on a rimmed serving plate; top with 1 cake layer. Spread with about 1/3 cup apple butter. Top with 2/3 cup apple and bourbon sauce. Repeat layers. Drizzle any remaining sauce from apple mixture over top of cake. Refrigerate, covered, at least 24 hours before serving.
