APPLE BUTTER BREAD

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 8x4x2-inch loaf pan.
- Mix flour, baking soda, baking powder, salt, nutmeg, and cloves in a bowl.
- Beat the butter and sugar with an electric mixer in a separate large bowl until smooth. Add the egg and apple butter; continue beating until smooth. Mix in the flour mixture until just incorporated. Fold in the raisins and walnuts; mixing just enough to evenly combine. Pour into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

GRILLED TURKEY, BRIE, AND APPLE BUTTER SANDWICH WITH ARUGULA

- Spread each of 4 slices of bread with 1/2 tablespoon of butter. Now spread each with 1 tablespoon of the apple butter. Top each slice of bread with a couple of slices of turkey, cover that with 2 to 3 slices of brie (enough to cover the turkey), and finally, arrange 2 to 3 arugula leaves on top. Spread the remaining 4 bread slices with 1/2 tablespoon of butter and lay them, buttered sides down, over the cheese; press gently.
- Heat a large cast-iron or other heavy skillet over medium-low heat. Add the remaining 1 tablespoon butter and let it melt to evenly coat the bottom of the pan. Add as many sandwiches as will comfortably fit (either 2 or 4) and cook 2 to 3 minutes until the bread is golden brown and the cheese begins to melt. Flip and cook 2 to 3 more minutes to brown the bread. (Add another tablespoon of butter and cook the remaining sandwiches, if you need to.) Cut the sandwiches in half and serve hot.
APPLE BUTTER QUICK BREAD
Apple butter gives this bread a deep autumnal flavor and helps keep it moist for several days after baking. Whole-wheat flour adds a bit of heartiness to the batter, which can be made using only one bowl and a whisk.

- Heat the oven to 350 degrees, and lightly grease a 9-by-5-inch loaf pan with nonstick cooking spray. In a medium bowl, whisk together the all-purpose flour, whole-wheat flour, baking soda, cinnamon, allspice, nutmeg and salt to combine. Set aside.
- In a large bowl, whisk the oil, sugar and brown sugar until well combined (you may need to switch to a rubber spatula after a bit). Add the eggs one at a time and whisk well after each addition to incorporate. Whisk in the vanilla extract.
- Add the flour mixture and stir just to combine. Add the apple butter and yogurt and mix well to incorporate. Pour the batter into the prepared loaf pan and spread into an even layer.
- Sprinkle the surface of the loaf generously with turbinado sugar. Bake until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Let cool for 20 minutes in the pan, then unmold onto a cooling rack to cool completely before slicing and serving.

A rye bread made with apple juice, apple butter, cardamom, and toasted walnuts. Can be made as two one-pound loaves, or as one two-pound loaf -- see bake times below! NOTE: I use the automatic bread machine dough cycle only, and bake in my oven, therefore this recipe has not been tried on a complete bread machine bake cycle!

- Put first six ingredients into bread machine pan.
- Toast chopped walnuts in a hot dry iron skillet ~ set aside in a large bowl to cool.
- Measure flours and add to bowl with toasted walnuts.
- Shell cardamom pods and grind the seeds with brown sugar ~ add to bowl of dry ingredients.
- Add dry milk powder and vital wheat gluten to other dry ingredients.
- Spoon dry ingredients into bread machine pan, on top of wet ingredients.
- In one corner of bread machine pan, add salt ~ in an opposite corner, add the bread machine yeast.
- Select DOUGH CYCLE ~ after about 10 minutes of mixing, check dough consistency ~ if too dry, add water one tablespoon at a time ~ if too wet, add flour one tablespoon at a time, until dough is smooth and not ragged.
- Divide dough and shape into two one-pound loaves ~ LET DOUGH RISE UNTIL DOUBLED. ALLOW ENOUGH TIME FOR PROPER RISE ~ If dough doesn't rise enough, the bread will be dense!
- For two one-pound loaves, bake in a preheated 350F oven, in glass pans, for 20 minutes ~ tent with foil and continue baking another 10-15 minutes.
- For one two-pound loaf, bake in a preheated 350F oven, in glass pans, for 20 minutes ~ tent with foil and continue baking another 20-25 minutes.
- NOTE: I have not baked this recipe in a complete bread machine baking cycle.

HOMEMADE RYE BREAD

- Combine the yeast, sugar, melted butter, egg, and milk in the bowl of an electric mixer fitted with a dough hook. Beat on low speed for 1 minute. Add the salt, rye flour, all-purpose flour, and caraway seeds. Beat at low speed until all of the flour is incorporated, about 1 minute. Then, beat at medium speed until the mixture forms a ball, leaves the sides of the bowl and climbs up the dough hook. Remove the dough from the bowl. Using your hands, form the dough into a smooth ball. Lightly oil a bowl. Place the dough in the bowl and turn it to oil all sides. Cover with plastic wrap and set aside in a warm, draft-free place until it doubles in size, about 1 hour.
- Preheat the oven to 350 degrees F and lightly grease a 5 1/2 by 9-inch baking pan.
- Remove the dough from the bowl and invert onto a lightly floured surface. Gently knead the dough several times. Tuck and roll so that any seams disappear into the dough and place in the prepared baking pan. Cover with plastic wrap and set aside in a warm, draft-free place until it doubles in size, about 1 hour. Use a pastry brush to brush the egg lightly over the top of the dough. Bake until lightly brown, about 45 minutes. Remove from the oven and cool on a rack.

- In a large bowl, whisk together 4 cups bread flour, 2 cups rye flour, potato flour, milk powder, sugar, caraway seeds, yeast, onion powder and salt. In another bowl, whisk together warm water and oil; pour over flour mixture and stir until combined. Dough will be sticky. Turn dough onto a lightly floured surface; with floured hands, knead dough, incorporating remaining 1 cup bread flour as needed until dough becomes smooth and elastic, 8-10 minutes. Divide dough in half. Mix dark cocoa powder with remaining 1 tablespoon rye flour; knead cocoa mixture into 1 portion of dough until fully incorporated. , Lightly coat 2 large bowls with oil. Place 1 portion of dough into each bowl and turn to coat. Cover and allow dough to rise until doubled in size, 1 to 1-1/2 hours. Working with 1 portion of dough at a time, turn onto lightly floured surface; roll each into a 14x12-inch rectangle. Place dough with cocoa on top of remaining dough; starting with a long side, roll jelly-roll style to form a spiral, pinching seam together to seal. Place seam side down in a greased 13x4-inch Pullman loaf pan, tucking ends under to form smooth loaf. Loosely cover pan with damp cloth or plastic wrap and allow to rise until doubled in size, 1 to 1-1/2 hours; dough should rise about 1/2 to 3/4 inch above edge of loaf pan. , Brush loaf with egg wash; using a sharp knife, cut 3-4 deep diagonal slashes on top of loaf. Cover with nonstick foil and place in preheated 400° oven; bake 15 minutes. Reduce heat to 375° bake 20 minutes. Remove foil; bake until loaf is deep golden brown and reaches an internal temperature of 200° when measured with an instant-read thermometer, about 10 minutes longer. Remove from oven; allow to cool 10 minutes. Remove loaf from pan. Cool completely on wire rack.

APPLE BUTTER BREAD
I found this through my electric co-op magazine and boy am I ever glad I did. Truly a nice moist quick bread. The key to this bread is obtaining a dark, rich apple butter - the darker the better for flavor. I used White House Apple Butter which was wonderful and outside of my mom's fresh homemade apple butter it is the best I've tried. I hope you enjoy this recipe as much as my family.

Steps:
- In a mixing bowl, combine the apple butter, cinnamon and cloves.
- Whisk in the water, then oil, then brown sugar, then the eggs (not all together). Mix until smooth.
- Sift together (important so you don't get white lumps in your dark bread), flour, baking soda and salt. Then combine with the apple butter mixture and mix until smooth.
- Pour into a greased 9-inch loaf pan or 3 to 4 mini-loaf pans.
- Bake at 350F for 65-70 minutes for the 9-inch pan or 45-50 minutes for the mini-loaves.
- Let stand for 10-15 minutes to cool slightly before removing from the pans and letting cool completely on a wire rack.
