HANDY-PASTO - ANTIPASTO PIZZA
This is a white pizza with garlic topped with all the makings of an antipasto platter - cut into squares and it makes a great starter or party snack. Many of the antipasto toppers can be purchased at the salad bar counter in bulk so you only have to buy what you need of each.

- Heat the oven to 425 degrees F.
- Press dough onto baking sheet and top with garlic, cheeses, and pepper flakes and freshly ground black pepper, to taste, and bake 15 to 18 minutes.
- Top the cooked pizza with lettuce, salami, roasted peppers, hot peppers, artichokes or mushrooms and olives, cut into squares and serve.
ANTIPASTO PULL-APART PIZZA
This is super quick, super yummy something the whole family loves. You can really top it any way you want. I got this recipe from Pampered Chef

- 1. Preheat oven to 400 degrees. Brush large baking stone with 1 tsp of olive oil.
- 2. Using a sawing motion cut dough in half lengthwise. Then cut dough crosswise into 16 half moons for a total of 32 half moons.
- 3. Arrange dough over baking stone leaving 1/2-in border around the edge and spacing each piece 1/2-in apart. Brush the remaining oil on dough; bake 14-16 minutes until golden brown.
- 4. Meanwhile, for antipasti chop artichokes. Dice mozzarella cheese into 1/2-inch and dice bell pepper. slice olives. Combine cheese, red pepper, salt, black pepper, olives and pressed garlic and mix well.
- 5. Remove baking stone from oven and using grater great half of the Parmesan cheese over crust; top with antipasti. Bake 5-7 minutes or until mozzarella is melted. Remove from oven; grate remaining Parmesan cheese over top.
ANTIPASTO
This is a very old recipe and I have made it for years with no issues. But if you are in doubt, use a pressure canner. If there's enough acid added I don't think you need to pressure can but some newbies come along and "think" they are experts. :) This has to be one of the best antipasto recipes ever! The original recipe came from one of those cookbooks where everyone submits a recipe but it has been modified. The only reason for this is when my Dad and Sister were making it they weren't sure if you were supposed to drain the olives and pickled onions, ...they didn't and it came out great! The longer you can let it sit the better it taste. It is quite a costly recipe to make so what I do is buy the "sale" items throughout the year and make it up a bit before Christmas, that's why I'm posting it now---watch for sales :)

Steps:
- Mix first 5 ingredients in large pot. Boil 5 minutes.
- Add next 4 ingredients, boil 10 minutes.
- Add balance of ingredients. Try not to break up shrimp and tuna too much. Bring to just boiling.
- Process in a hot water bath for 15 minutes.
- Note: *Drain everything except olives and pickled onion juice. Biffy and Frank's flub (taste great.) Omit vinegar.
- Optional - small amount of brown sugar, HP sauce, chopped garlic, hot pepper sauce (dried or fresh) WE NEVER USE THESE.
- Something sure has changed with Recipe Zaar! When trying to put the ingredients in it was a big pain in the butt for the sizes. I've converted the grams to ounces but I didn't have everything in my cupboard to actually look at so I guessed. But most cans come pretty standard, and the "Frozen Shrimp" is a large bag -- it wouldn't let me put just "large.".

- Preheat oven to 450°F with a pizza stone or baking sheet set on a rack in lowest position. Drizzle 3 tablespoons oil onto a rimmed quarter-sheet pan (9 by 12 1/2 inches). Stretch dough to edges of pan. Drizzle evenly with remaining 1 tablespoon oil; season with salt and pepper.

- Preheat the oven to 450 degrees F and line 2 rimmed baking sheets with parchment paper. Spray the parchment with nonstick cooking spray and set aside.
- Prep all your toppings by cutting everything into small bite-size pieces.
- On a lightly floured surface, divide the dough into 4 pieces, then divide each piece into 4; you should end up with 16 pieces of dough. Spray your hands with nonstick cooking spray if the dough is sticking. Working one at a time, begin to stretch and flatten the dough with your hands, adding flour as needed to prevent sticking. Transfer it to the baking sheet and continue to stretch the dough until it's about 4 inches in diameter. Continue the process with the remaining pizza dough, placing 8 rounds on each baking sheet.
- Start with a spoonful of the sauce of your choice, spreading into a thin layer. Top your pizzas as desired, being sure to not load the pizza with too many toppings or it will not cook evenly.
- Bake until the crust is golden and the cheese is melted, 15 to 20 minutes. Remove the pizzas from the oven and top with fresh toppings and a light drizzle of olive oil. Transfer the pizzas to a platter and serve.
ANTIPASTI PLATTER WITH HOMEMADE FLATBREADS

- Heat oven to 200C/180C fan/gas 6. Place the peppers, skin-side up, on a non-stick baking sheet and brush over 1 tbsp of the oil. Roast for 30 mins.
- Meanwhile, drain the olives and place in a serving bowl, drizzle over 1 tbsp oil, then stir through the garlic and lots of black pepper. Place the feta, tzatziki and radishes in serving bowls.
- Remove the peppers from the oven, place in a bowl and cover with cling film. Leave until cool enough to handle, then peel off the skins. Dab dry with kitchen paper, remove the stalk and seeds, then slice into thin strips. Place in a serving bowl with the remaining 1 tbsp oil and the balsamic vinegar or glaze.
- To make flatbreads, sift the flour into a bowl and stir in the yogurt. Bring the mixture together to form a soft dough. Turn out onto a floured surface and knead gently until smooth. Roll into 4 balls, then use a rolling pin to roll into circles as thin as you can (approx 2mm), then shake off any excess flour. Heat a large frying pan, add the flatbreads one at a time and cook for 1-2 mins each side. Keep warm in a low oven while you cook the rest. To serve, arrange the meat on a platter with the antipasti. Serve with the flatbreads.

ANTIPASTO VEGETABLE PIZZA
Another Pampered Chef recipe. This is meatless, but uses cheese. I've not tried it, but I've heard it's really good.

Steps:
- Preheat oven to 400°F.
- Unroll pizza dough, shaping into a circle.
- Roll dough to edges of pizza pan.
- Drizzle oil over dough, spreading evenly.
- Bake 16-18 minutes, or until golden brown.
- Remove from oven and immediately sprinkle cheese over it.
- Drain artichoke marinade into bowl. Add Italian seasoning and pressed garlic, whisk to combine thoroughly.
- Coarsely chop artichokes.
- Score yellow squash. Cut squash in half lengthwise, then cut into thin slices.
- Add artichokes, sliced squash, sliced olives and sliced tomatoes to marinade in bowl, mix well.
- Spoon vegetables over pizza, draining off as much marinade as possible.
- Sprinkle with parsley and pine nuts.
- Cut into wedges, using pizza cutter.

- Roll the dough out into a circle a little larger than your pizza pan, then gently fold the edges over to make the crust. Use a fork to create holes all over the dough, then bake at 400 degrees for 10 minutes. Then let the crust cool for 5 minutes.
- While cooking the dough, make the garlic sauce by melting the butter in a small saucepan over medium heat. Add the garlic and let simmer til the garlic starts to brown. Stir in the flour then immediately start stirring in the milk, a little at a time. Once milk is stirred in add, salt, pepper, basil, and oregano and bring to a boil. Remove from heat and let cool for 5 minutes.
- Smooth the garlic sauce over the crust, then sprinkle generously with cheese and top with all the veggies (except the avocado). Bake at 400 degrees for 15 minutes, then remove from oven to cool. Sprinkle with freshly diced avocado.

- To get started, make the dough. In a small bowl, add the sugar and yeast to the warm water, sit aside to bloom for a few minutes, then add to the bowl of a standing mixer with flour, salt, and olive oil, attach a dough hook and knead for a few minutes on medium speed.
