This sauce is great on steak and chips. We have it a lot through the summer in Australia. Serve with a nice crisp salad makes a wonderful meal. Dried parsley may be used in place of the fresh.

Ingredients

½ cup water, divided
2 tablespoons chopped garlic
1 teaspoon garlic powder
2 cups heavy cream
1 tablespoon chopped fresh parsley
salt and pepper to taste
2 tablespoons cornstarch

Steps:

Pour half of the water into a saucepan, and bring to a boil over medium heat. Add the garlic and garlic powder, and boil until the water has almost evaporated, about 5 minutes. Stir in the heavy cream, parsley, salt, and pepper. Mix the cornstarch with the remaining water, and stir into the sauce. Cook, stirring constantly, until thickened, about 3 minutes.

Yield Makes 3/4 to 1 cup

Number Of Ingredients 4

Ingredients

6 plump fresh garlic cloves, crushed with the flat blade of a knife
1 teaspoon sea salt
1/3 to 1/2 cup extra-virgin olive oil
3 to 4 tablespoons strained yogurt

Steps:

Chop the garlic cloves coarsely, then combine them with the salt in a small bowl or a mortar. Using the pestle or, in the case of a small bowl, the back of a spoon, crush the garlic and salt together until you have a smooth paste. The garlic should be thoroughly crushed, almost to a cream.
Slowly beat in the olive oil, stirring constantly, as if you were making a mayonnaise. Add at least 1/3 cup of oil but if you can do so without the sauce breaking,add as much as 1/2 cup. At the end, gently stir in the yogurt, incorporating it fully into the sauce.
