ANISE CANDY

Everyone loves this candy and it's so easy to make. I make several flavors every year for Christmas.

Number Of Ingredients 7

3 c sugar
1/2 c water
1 c white syrup
3 Tbsp vinegar
1 tsp oil of anise, or desired flavor
1/2 Tbsp red food coloring, or desired color
powdered sugar if desired

Steps:

  • 1. Boil sugar, syrup, water and vinegar to hard crack stage (300 degrees on a candy thermometer). Don't Stir!!
  • 2. Remove froom fire and stir in oil flavoring and food coloring. This will smoke but it's O.K.
  • 3. Pour into a shallow, lightly greased 18 X 12 inch pan.
  • 4. When it starts to set make marks to cut into small squares about 1 inch.
  • 5. Let harden at room temperature.
  • 6. Break into pieces by hand. A kitchen table knife will help break up the larger pieces. Put into an air-tight container. This does not get sticky when cracked and cooled properly.
  • 7. May dust with powdered sugar if desired.

3-3/4 cups sugar
1-1/2 cups light corn syrup
1 cup water
2 to 3 drops red food coloring or color of your choice
1/4 teaspoon watermelon flavoring or flavoring of your choice
1/2 cup confectioners' sugar

Steps:

  • Butter two 15x10x1-in. pans; set aside. In a large heavy saucepan, combine the sugar, corn syrup, water and food coloring. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. Cook, without stirring, until a candy thermometer reads 300° (hard-crack stage). , Remove from the heat; stir in flavoring. Immediately pour into prepared pans; cool. Dust with confectioners' sugar; break into pieces. Store in airtight containers.

3 3/4 c sugar
1 1/4 c light karo syrup
1 c water
1 teaspoon oil flavoring or 1 tablespoon extract flavoring
food coloring
powdered sugar

Steps:

  • 1. Sprinkle cookie sheet with powdered sugar and set aside
  • 2. Combine sugar syrup and water in a saucepan and continuously stir over medium heat until the sugar is dissolved.
  • 3. Continue to cook without stirring until a candy thermometer reaches 290 degrees. (Between 34 and 45 minutes)
  • 4. Remove from heat and add food color and oil or extract. (if using oils do NOT inhale over the pot while adding the oil. it is very strong and can take your breathe away)
  • 5. Pour mixture onto prepared cookie sheet and allow to cool completely. Once completely cooled lay a clean towel over top of sheet and break candy into pieces by taping with a hammer. Sprinkle candy again with powdered sugar
  • 6. If you are making several flavors and colors like we did, after all the flavors are broken into pieces mix them together and put into candy dishes or bowls for a tasty beautiful stained glass effect.
  • 7. These make beautiful favors for parties and showers.

Making this old-fashioned anise candy has become an annual Christmas project for me since I first prepared this recipe at the home of a friend who made candy for a shop. 1-1/2 teaspoons butter, softened
3/4 cup water
2/3 cup light corn syrup
2 cups sugar
1 teaspoon anise extract
Red food coloring
2 to 3 tablespoons confectioners' sugar

Steps:

  • Butter an 8-in. square dish with 1-1/2 teaspoons butter; set aside. In a large heavy saucepan, combine the water, corn syrup and sugar. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve any sugar crystals., Uncover; cook over medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage). Remove from the heat; stir in extract and food coloring. , Pour into prepared dish. Using a sharp knife, score into 3/4-in. squares. Cool. Separate into squares, using a sharp knife if necessary. Place confectioners' sugar in a pan; add candy and roll until coated. Brush off excess sugar with a pastry brush. , Store at room temperature in an airtight container.

An easy recipe for hard candy. The hardest part is waiting for the sugar to reach the proper temperature. Be patient and use a candy thermometer for perfect candy. This recipe can easily be adjusted by using different flavored extracts and food colorings.

3 ¾ cups white sugar
1 ½ cups light corn syrup
1 cup water
1 tablespoon orange, or other flavored extract
½ teaspoon food coloring
¼ cup confectioners' sugar for dusting

Steps:

  • In a medium saucepan, stir together the white sugar, corn syrup, and water. Cook, stirring, over medium heat until sugar dissolves, then bring to a boil. Without stirring, heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads.
  • Remove from heat and stir in flavored extract and food coloring, if desired. Pour onto a greased cookie sheet, and dust the top with confectioners' sugar. Let cool, and break into pieces. Store in an airtight container.

1/2 white corn syrup
1/2 cup water
1/2 teaspoon anise flavoring
1/2 teaspoon red food coloring or 1/2 teaspoon green food coloring

  • Boil sugar, syrup and water until hard crack stage when dipped in cold water.
  • Remove from heat; add flavoring and food color; shake pan to mix, do not stir.

Pour into a buttered 13-in. x 9-in. pan. When cooled slightly but not hardened, cut into 1-in. squares. Cool completely. Store in an airtight container.
