I made this up because I had lots of extra spinach and tomatoes out in the garden. I'm so glad I did, because I'd order this in a restaurant! I hope you enjoy it as much as I did.

3 chicken breasts (more or less to your discretion)
2 tablespoons extra virgin olive oil
2 large garlic cloves, minced
6 ounces spinach, destemmed & coarsely chopped
2 large tomatoes, diced
1/4 teaspoon salt
1/4 teaspoon pepper
1 pinch red pepper flakes
6 ounces angel hair pasta, dry
1/4 cup parmesan cheese, grated
1/4 cup pine nuts, toasted

Steps:

  • Preheat oven to 450°F Once preheated, cook chicken for 20-25 minutes.
  • Meanwhile, destem and chop the spinach and tomatoes.
  • Heat oil in a large skillet over medium heat and cook garlic for 2 minutes. Add spinach and cook until wilted. Add tomatoes, salt and pepper. Cook until soft. Add red pepper.
  • Bring water to a boil and cook pasta according to package directions.
  • Put pine nuts in the oven for the last 5 minutes of the chicken's cooking time.
  • When chicken is finished, slice or chop and add to the sauce. Simmer until pasta is done, then add the pine nuts and parmesan.
  • Top the pasta with the sauce and serve warm.

2 tablespoons butter
2 teaspoons garlic
1/4 cup chopped fresh herbs (such as parsley, chives, dill and/or basil)
1/4 cup parmesan cheese (grated)
salt and pepper to taste
1/2 cup cherry tomatoes (halved)
additional chopped herbs for garnish (optional)

Steps:

  • Cook the pasta in salted water according to package directions.
  • Place the butter and olive oil in a large pan over medium heat.
  • After the butter has melted, stir in the garlic and cook for 30-60 seconds, stirring constantly.
  • Drain the pasta and add it to the pan. Add the herbs and parmesan cheese to the pan, along with salt and pepper to taste, then toss to coat the pasta.
  • Top with tomatoes. Sprinkle with additional herbs for garnish if desired, then serve.

3/4 cup pine nuts
1/3 cup olive oil
6 cloves garlic, minced
1/2 teaspoon dried crushed red pepper
3/4 pound angel hair pasta
3 pounds fresh spinach, washed & stemmed
3 tablespoons butter
1/2 cup grated Parmesan cheese
1/8 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Saute pine nuts in olive oil until golden. Remove nuts and set aside. In same oil, saute garlic and red pepper for 3 minutes; set aside. Cook pasta per pkg directions until tender and drain. Reheat oil containing garlic and pepper; add spinach and saute until wilted (about 3 minutes.) Stir in butter. In large bowl, toss pasta, spinach, pine nuts and cheese. Add salt and pepper and serve.

Leaves from 2 bunch fresh basil
2 tablespoons pine nuts, untoasted
1 garlic clove
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1 pound angel hair pasta

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
  • Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.

1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
1 small onion, chopped
4 garlic cloves, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. Add the wine and sun-dried tomatoes and simmer until the liquid reduces by half, about 2 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until al dente, stirring occasionally, about 5 minutes. Drain, reserving 1/2 cup of cooking liquid. Add the pasta to the tomato mixture and toss to coat, adding some reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper. Sprinkle with the goat cheese and parsley and stir. Mound the pasta into bowls and serve.

I like to say that during June, July and August, my family and I are on a spaghetti strike, because it's too hot to cook pasta. That being said, a reader recently wrote to me about her ricotta-based pasta sauce and I immediately thought of a similar dish, which I'm sharing with you today. It was a huge success among my friends and I'm convinced it'll be the same for you. This is the kind of meal I'd eat every day, sitting on my little balcony in the suburbs.

Number Of Ingredients 16

8 oz angel hair pasta
12 cherry tomatoes on the vine
Olive oil, as needed
2 tablespoons balsamic vinegar
1 sprig fresh thyme
Salt and pepper, to taste
1 tablespoon butter
1/2 cup baby spinach
1/4 cup pine nuts
1/4 cup Parmesan cheese, freshly grated (plus a bit more for serving)
1 cup ricotta cheese
1/4 cup vegetable oil
Juice of 1 lemon
1 teaspoon honey
Fleur de sel (or sea salt), to taste
Pepper, to taste

Steps:

  • Preheat the oven to 350˚F.
  • Cook the pasta according to the package directions. Drain and set aside.
  • Place the tomatoes in an oven-safe dish. Drizzle olive oil over 2/3 of the tomatoes. Add the balsamic vinegar and thyme and season. Bake for 15 minutes or until the tomatoes burst. Set aside.
  • Melt 1 tablespoon of butter in a pan and cook all the ricotta ingredients.
  • Add the pasta and spinach and continue cooking until the spinach is soft. Adjust the seasoning if needed.
  • Top the pasta with tomatoes and pine nuts and serve with freshly grated Parmesan cheese.
