GARLIC ANGEL HAIR SHRIMP

This was inspired by one of my favorite restaurant pasta dishes. I keep the lemon separate until the end due to a picky family member, but you could add it earlier if everyone likes lemon. Do not use pre-cooked shrimp and don't overcook the shrimp.

½ (16 ounce) package angel hair pasta
¼ cup butter, divided
1 (16 ounce) package frozen peeled-and-deveined shrimp
½ cup diced onion
2 teaspoons minced garlic
¾ cup diced tomatoes
1 bunch fresh asparagus spears, trimmed and cut into 1-inch pieces
salt to taste
¼ cup grated Parmesan cheese, or to taste
4 wedges lemon

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain, reserving 1 cup of the water.
  • Melt 1 tablespoon in a large skillet over high heat. Saute shrimp in hot butter until no longer pink, about 5 minutes. Remove shrimp with a slotted spoon to a bowl, retaining liquid in the skillet.
  • Reduce heat to medium-high. Cook onion and garlic in the retained liquid in the skillet until the onions are translucent 5 to 7 minutes. Stir tomatoes into the onion mixture; cook and stir until the tomatoes soften, about 5 minutes.
  • Stir asparagus into the tomato mixture and add the reserved water from cooking the pasta; bring liquid to a simmer and cook until the asparagus is tender, about 5 minutes. Add the shrimp and angel hair pasta; stir. Cook until the shrimp is completely opaque in the middle, 2 to 3 minutes more. Season with salt and garnish with Parmesan cheese and lemon wedges.

12 ounces angel hair pasta or spaghetti (3/4 of a box)
1 tablespoon olive oil
2 cloves garlic, finely chopped
1 pound peeled and deveined medium shrimp
0.75 cup dry white wine
0.25 teaspoon crushed red pepper
kosher salt
2 tablespoons butter

Steps:

  • Cook the pasta according to the package directions. Drain and return pasta to the pot.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring, for 1 minute (do not let it brown).
  • Add the shrimp, wine, red pepper, and ½ teaspoon salt. Simmer until the shrimp are opaque, 2 to 3 minutes. Stir in the butter.
  • Toss the pasta with the shrimp mixture.

1 pound angel hair pasta
2 tablespoons olive oil
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 lemon, juiced, plus 1/2 lemon, zested
1/2 cup dry white wine
5 tablespoons butter
1/4 cup chopped parsley leaves

Steps:

  • Add the pasta to a large pot of boiling salted water, over medium heat, and cook until al dente.
  • Meanwhile, heat a large 12-inch skillet over medium-high heat. Add the olive oil. Once shimmering and hot, add the shrimp and saute until just cooked through, about 2 to 3 minutes. Remove to a plate and reserve. Add the garlic and red pepper flakes to the skillet, then saute for until the garlic is fragrant, about 1 minute. Add the lemon juice and white wine and raise the heat to high. Let the liquid reduce for 2 to 3 minutes. Whisk in the butter, add a ladleful of the pasta cooking water and return the shrimp. Remove from the heat.
  • Drain the pasta in a colander, and add it to the skillet along with the chopped parsley and toss. Add the lemon zest and adjust the seasonings with salt and pepper, to taste. Transfer to a serving platter and serve immediately.

1 pound large raw shrimp, peeled and deveined, patted dry
4 cloves garlic, chopped
1/2 cup dry white wine
1 can (28 ounces) Italian-style diced tomatoes, undrained
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fesh italian parsley
1/4 cup chopped fresh basil
3 tablespoons shredded Parmesan cheese
Chopped basil (optional)
Kosher salt and freshly ground black pepper

Steps:

  • 1 Cook pasta according to package directions. Drain; rinse in cold water or ice water until completely cooled and drain well. 2 Meanwhile, heat 1 tablespoon olive oil in large skillet over medium-high heat. Add half of shrimp; cook 3 to 5 minutes just until cooked through, stirring frequently. 3 Remove shrimp from skillet; set aside. Repeat with remaining oil and shrimp. 4 Stir wine into skillet with garlic. Add tomatoes and red pepper flakes. Continue cooking until liquid is reduced by half, about 5 minutes, stirring occasionally. 5 Add pasta to skillet. Stir in parsley and basil. Add shrimp; heat through. 6 Sprinkle with Parmesan cheese and additional chopped basil, if desired. Season with salt and pepper, as desired.

Great, simple shrimp dish, where the shrimp are grilled. You can cook them on the stove-top, but grilling them gives them better flavor.

4 ounces unsalted butter
1 tablespoon finely minced garlic
1 teaspoon cayenne
1/2 cup dry white wine
5 tablespoons finely chopped flat leaf parsley
1 lb jumbo shrimp, deveined but not peeled (about 16)
1/2 teaspoon kosher salt
12 ounces angel hair pasta
1/4 cup extra virgin olive oil
1/2 cup grated parmesan cheese
1 lemon, halved

Steps:

  • In a small saucepan over medium-low heat, heat the butter, garlic and cayenne.
  • Cook until the garlic is soft, about 3 minutes.
  • Add the wine, raise the heat to high, and cook until reduced by half.
  • Allow to cool.
  • Stir in 2 tbl.
  • of the parsley.
  • Pour the butter mixture over the shrimp.
  • Add the salt and toss everything to coat evenly.
  • Grill the shrimp over high heat (or you can cook in a skillet on the stove, but they are better on the grill), turning once, until just cooked and opaque, about 3-4 minutes total.
  • Meanwhile, cook the pasta al-dente.
  • Drain and toss with the olive oil, parmesan and remaining parsley.
  • Transfer the shrimp to a bowl and squeeze the lemon over them.
  • Toss.
  • To serve, put a bed of pasta on each plate and top with 4 large shrimp, and a sprig of parsley.

This recipe reminds me of a dish a friend of mine made for me while I was studying abroad in Italy. This version is out of REALSIMPLE's Oct. 2008 issue but my version leaves out the white wine.

3/4 lb angel hair pasta
1 tablespoon olive oil
2 garlic cloves, chopped
1/4 teaspoon crushed red pepper flakes
1 lb frozen peeled and deveined medium shrimp, thawed
2 tablespoons butter
3/4 cup dry white wine
kosher salt

Steps:

  • Cook the pasta, drain, and return to pot. Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and red pepper; cook, stirring, for 1 minute. I strain the garlic and red pepper out after this portion because I only use those ingredients for flavor and do not like them included in the actual dish.
  • Add shrimp and simmer until shrimp are opaque (If you use all ingedients, also add the wine and salt at this point), 2 to 3 minutes. Stir in the butter until melted. Toss with the shrimp mixture.

This is one of my husband's favorites (mine, too!). We like the sweet and spicy combination of shrimp, peas, and hot pepper, but it is also good with broccoli, asparagus, or other vegetables, or by itself. We love this with a big green salad and a glass of Shiraz! I use pre-cooked shrimp for this, but you can also use raw - just add them a minute or two earlier to the peas. This looks more complicated than it is - we often rely on this recipe as a quick and easy weeknight dinner. Actual cooking time is only about 10-15 minutes, the prep time is marinading time.

4 ounces angel hair pasta
8 ounces shrimp, precooked,peeled,and deveined
8 ounces sugar snap peas, fresh or frozen
3 cloves garlic, minced
2 tablespoons olive oil
8 ounces tomato sauce
4 tablespoons red wine vinegar
4 teaspoons dried basil
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 cup parmesan cheese, freshly grated
parsley, to taste
fresh ground black pepper, to taste

Steps:

  • In a mixing bowl, combine the garlic, oil, tomato sauce, vinegar, basil, salt, and cayenne pepper.
  • Remove 2/3- 3/4 of this mixture and put it in a small saucepan; set aside.
  • Add the shrimp to the remaining sauce that's still in the bowl.
  • Mix to coat the shrimp.
  • Cover and allow to marinate for 30-60 minutes in the refrigerator.
  • Cook the pasta as directed.
  • Drain and put in a large bowl.
  • While the pasta is cooking, simmer the reserved sauce mixture in the saucepan on low heat.
  • Since there is only a small amount in the pan, watch this carefully and stir often to ensure it doesn't burn.
  • *Forthe following step, if you need to you can add a small bit of water or oil, but as long as your pan has a good coating, it should not be necessary.
  • *Heat a large nonstick pan to medium-high heat, and add the peas.
  • Stir constantly, and cook until almost tender-crisp, but not quite done.
  • This should only take a few minutes.
  • Remove the shrimp from the marinade and add to the pan.
  • Continue stirring and cook only until the shrimp are heated through.
  • Add the sauce and shrimp& pea mixture to the pasta, and toss to coat thoroughly.
  • Top with parsley, cheese, and black pepper.

2 ½ tablespoons butter, divided

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt 1.5 tablespoons butter in a medium saucepan over medium heat. Stir in flour and cook for 2 minutes. Slowly stir in milk and cream; simmer, stirring constantly, until thickened. Mix in pesto, parsley, 3 cloves minced garlic, Parmesan cheese, 1 teaspoon salt, white pepper, Worcestershire sauce and hot sauce. Reduce heat to low and allow to simmer.
  • Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
  • Melt 1 tablespoon butter in a large skillet. Saute shrimp, remaining 3 cloves minced garlic, and 1 teaspoon salt for 5 minutes, or until shrimp are pink.
  • In a large bowl, toss pasta, shrimp and broccoli; pour sauce over and serve.
