PINEAPPLE ANGEL FOOD CAKE
Steps:
- Preheat the oven to 350 degrees Fahrenheit. Grease the bottom of a 9x13-inch pan with oil spray. Do not grease the sides.
- In a large bowl, add cake mix and canned pineapple, juice included. Stir them together until well-combined.
- Pour the batter into the pan and bake for 25 minutes or until the cake is golden brown. The cake should spring back when pressed.
- With the cake still inside, flip the pan over. Let it cool completely before serving, about 45 to 60 minutes.
- Run the sides of the cake with a knife or off-set spatula to release it. Remove the cake from the pan.
- Slice and serve with whipped cream. Enjoy!

- 2. In a large Bowl, Combine the Cake Mix, and Pineapple (with its Juice). Mix til blended

I found this in a magazine, I believe it was "Quick & Easy" while waiting for an appointment. Unfortunately, I do not remember what they called it so I have just called it Angel Food Delight. It sounded too easy to be true but it was wonderful. The original recipe said to chill for an hour but I found it took longer for the flavors to merge. I liked the adaptability of using different toppings. The recipe called for 2 cans of Pie Filling but I found 1 to be sufficient. However, use your own judgement. While the flavor is rich, it is not a heavy dessert and everyone has loved it.

- Drain pineapple well, reserving juice.
- Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.
- Place orange jello in a large bowl and add boiling water; stir at least 2 minutes or until jello is completely dissolved.
- Stir pineapple/orange juice into jello.
- Reserve one cup of the jello mixture; leave this at room temperature.
- Stir half of the crushed pineapple into jello mixture in bowl; pour into a 6 cup mold that you've sprayed with nonstick cooking spray (like Pam).
- Refrigerate mold about two hours, or until set but not firm-- mixture should stick to your finger when touched, and should mound.
- Place cream cheese into mixing bowl and stir in reserved gelatin (what you've been keeping at room temp); whisk well until smooth.
- Stir in remaining crushed pineapple; spoon this mixture over gelatin layer in mold.
- Refrigerate for 4 hours or until firm; unmold and serve.

- Cut off top of cake 1 inch down from top. Scooping carefully, make a tunnel in bottom part of cake, 1 inch from sides and bottom.
- Mix dry pudding mix and pineapple (including juice) and let stand.
- Whip 1 cup of cream, add nuts, sliced berries and pineapple mixture, folding completely.
- Sprinkle rum around inside cake tunnel and cake top,.
- Fill tunnel with cream mixture and replace top on cake, pressing gently to seal.
- Whip remaning cream and add remainder of filling that didn't fit into the cake. (Hopefully you have some left!)
- Frost cake and decorate with whole berries and pecans.
