ANDREAS VIESTAD'S VEILED FARM GIRLS

Andreas Viestad's Veiled Farm Girls image

Courtesy of Andreas Viestad via the Pocatello newspaper. This apple dessert is a traditional dish both Norway and Denmark lay claim to, Viestad says. "How it got its name is easy to understand: It consists of layers of applesauce and sweet cinnamon-scented bread crumbs, veiled with whipped cream." Note: If your applesauce is very sweet, reduce the sugar for the bread crumbs.

1 1/2 cups heavy (whipping) cream
1 1/2 cups applesauce, chilled

ANDREAS VIESTAD'S VODKA MARINATED SIRLOIN

Andreas Viestad's Vodka Marinated Sirloin image

This was prepared on Andreas Viestad's cooking show, "New Scandinavian Cooking", and it's a bit different than you may expect of the cuisine... it's definitely more garlicky than I would have thought. And despite all the vodka, it's not boozy at all. In fact, I actually used aquavit in place of the vodka and it added even more interesting flavor. If you use a smaller roast, be sure to adjust the oven time accordingly; sirloin roast can go from perfect to too dry very quickly.

Provided by EdsGirlAngie

Categories     Roast Beef

Time P3DT1h15m

Yield 8 serving(s)

Number Of Ingredients 11

4 lbs boneless sirloin tip roast
1 tablespoon coarse sea salt
2 tablespoons crushed black peppercorns
3 tablespoons parsley, finely chopped
2 tablespoons fresh thyme, finely chopped
1 teaspoon fresh thyme, finely chopped
3 garlic cloves, crushed
1/3 cup grain vodka (I used aquavit)
1/4 cup olive oil
2 tablespoons vegetable oil
4 tablespoons unsalted butter

Steps:

  • Rub the roast with the salt and pepper and place in a plastic zipper bag. Add the parsley, 2 tablespoons of the thyme, and the garlic, then pour in the vodka and olive oil. Seal the bag and refrigerate for 2 to 3 days, turning the bag twice a day.
  • Before cooking, let the meat stand at room temperature for 1 or 2 hours.
  • Preheat the oven to 425 degrees F.
  • Remove the meat from the bag and reserve the marinade. Heat the vegetable oil in a large nonstick skillet over high heat and sear the roast on all sides, about 4 to 6 minutes.
  • Transfer the meat to a roasting pan and roast in the middle of the oven, turning once, for 1 to 1-1/4 hours or until a meat thermometer registers 130 degrees F; and before the roast is done, pour the reserved marinade over it (you can do it when you turn the roast over, as I did -- ).
  • When done, transfer the meat to a cutting board and let it rest, uncovered, for at least 20 minutes; set the roasting pan aside.
  • Just before serving, pour the cooking juices into a saucepan and heat gently. Stir in the butter, season with salt and pepper and the remaining 1 teaspoons thyme. Strain the sauce and discard the herbs.
  • Carve the roast and arrange on a platter with the sauce on the side.

ANDREAS VIESTAD'S BOILED CRAWFISH WITH DILL

Andreas Viestad's Boiled Crawfish With Dill image

A very subtle and simple Swedish method for crawfish (or shrimp) by Andreas Viestad. It has a very distinct almost "caramelized" aroma. I saw this prepared on Andreas's cooking show; what you don't hear from this recipe is his recommendation to keep live crawfish in water in your bathtub overnight so they can be "cleaned out", if you know what I mean. I've prepared this with shrimp as well, and amazingly, they don't turn into hockey pucks after the 1 to 2 hour sitting time (and this time is reflected in the prep).

Categories     Crawfish

Time 2h10m

Yield 4 serving(s)

Number Of Ingredients 7

6 lbs crawfish
2 gallons cold water
2/3 cup coarse sea salt
3 tablespoons sugar
3 (12 ounce) bottles dark beer, preferably an English stout
2 cups fresh dill sprigs (a large bunch)
lemon wedge

Steps:

  • In a large pot, combine the water, salt, sugar, beer and dill. Bring to a boil over high heat. Add the crawfish, return to a boil, and turn off the heat. Let stand for an hour or two before serving.
  • Drain crawfish and arrange on a large serving platter. Garnish with dill and squeeze lemon juice over them.
  • Optional: can be eaten on good-quality white bread spread with mayonnnaise.

ANDREAS VIESTAD'S CHICKEN WITH SAFFRON AND CINNAMON

Andreas Viestad's Chicken With Saffron and Cinnamon image

Another wonderful Andreas Viestad recipe, one of few for chicken. He adapted this one from a medieval Icelandic cookbook; the spices indicate that it probably was a dish for the wealthy. Amazingly, the amount of cinnamon is not overpowering here, and the dish is best with "skin-on" chicken. If you don't like chicken livers, substitute 1/2 chicken bouillon cube. Prep time includes a day of marinating (if you choose that option).

Provided by EdsGirlAngie

Categories     Chicken

Time P1DT50m

Yield 4 serving(s)

Number Of Ingredients 10

4 lbs chicken, cut into 8 pieces
2 garlic cloves, minced
1 pinch saffron
1 teaspoon ground cinnamon
1 teaspoon sea salt
2 teaspoons flour
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 cup white wine, preferably semi-dry
2 chicken livers, finely chopped or 1/2 chicken bouillon cube

Steps:

  • In a small bowl, combine the garlic, saffron, cinnamon, salt, flour, vinegar and olive oil, stirring until smooth.
  • rub chicken pieces all over with the spice mixture and either place in a covered dish in a single layer or in a plastic zipper bag and marinate at room temperature for 45 minutes, or up to 1 day in the refrigerator.
  • Preheat oven to 400 degrees F.
  • Bake chicken pieces skin side up for 30 minutes.
  • Add wine and chicken livers (or 1/2 bouillon cube) to the pan and bake 20 to 30 minutes more (stirring a couple times if you're using the bouillon cube).
  • Check to see if chicken is done by piercing in the thickest part with the tip of a knife; juices will run clear when done.

ANDREAS VIESTAD'S PORK RIB ROAST WITH CLOVES

Andreas Viestad's Pork Rib Roast With Cloves image

Make and share this Andreas Viestad's Pork Rib Roast With Cloves recipe from Food.com.

Provided by Mimi Bobeck

Categories     One Dish Meal

Time P1DT30m

Yield 6 serving(s)

Number Of Ingredients 8

1 (4 lb) pork rib roast, with rind and fat, bones cut at 3-inch intervals (have the butcher do this)
1 tablespoon fine sea salt
2 teaspoons fresh ground black pepper
3 oranges
2 tablespoons chopped fresh sage
clove
2 lbs russet potatoes, quartered
1 lb onion, quartered

Steps:

  • Place the meat skin side up on a cutting board. With a sharp heavy knife, cut through the rind and fat to make a crosshatch pattern with 1-inch squares.
  • With a thin sharp knife, make a small slit in each square. (This is where you will insert the cloves; you could insert them now, but I have found that all the handling is likely to break off most of the nice-looking tops of the cloves).
  • Rub the meat with the salt and pepper.
  • Place the meat in a baking dish.
  • Cut 1 orange in half and squeeze the juice over the meat.
  • Slice another orange and place the slices under and over the meat.
  • Cover and refrigerate for 1 to 2 days, turning three or four times.
  • Preheat the oven to 400°F.
  • Discard the orange and place the meat fat side down in a roasting pan.
  • Insert the sage between the cut ribs.
  • Turn the meat skin side up. Cut the remaining orange in half and squeeze the juice over the meat.
  • Cut the orange halves into smaller pieces and place them under the meat.
  • Insert a clove in each of the slits in the fat.
  • Cover the roast with foil.
  • Place the roasting pan in the middle of the oven and roast for 45 minutes.
  • Remove from the oven and reduce the temperature to 350°F.
  • Remove the foil and Remove the meat from the pan and add potatoes and onions to the pan, making a foundation for the meat.
  • Return the meat to the pan and place in the oven, this time setting it in the lower third of the oven; roast for about 1 hour.
  • Move the pan to the middle of the oven. Increase the heat to 400° to 425°F and roast for about 20 minutes longer under frequent surveillance to produce a good crackling. If you have a top oven broiler, you could use it, but be very careful that you don't burn the roast.
  • It is difficult to give the exact time for the crackling process, since that depends on the intensity of heat in your oven. If there is no sign of crackling after 10 minutes, gradually turn the heat up to 450°F.
  • The crackling will be superb if it looks as if the rind is boiling and the fatty squares have started to separate.
  • Remove and allow to cool slightly.
  • Cut the meat into 2-rib sections and place on serving plates. The meat looks nice served with the cloves, but be advised that they should be removed before eating, as they are still quite strong-tasting.
  • Enjoy!

ANDREAS VIESTAD'S MOCK AQUAVIT

Andreas Viestad's Mock Aquavit image

It's often difficult to find aquavit here in the liquor stores of the United States. So if you have a hankering for that potent liquor, here's a substitute for you. :) You can experiment with all sorts of flavors, not just caraway. Recipe adapted from "Kitchen of Light: New Scandinavian Cooking with Andreas Viestad" by Andres Viestad. Prep time includes infusion.

Provided by Julesong

Categories     Beverages

Time P14D

Yield 1 liter

Number Of Ingredients 9

2 teaspoons caraway seeds
1 teaspoon fennel seed
2 teaspoons dill seeds
2 star anise
1 tablespoon coriander seed
1 whole clove
1 cinnamon stick, 1-inch long (optional)
2 teaspoons cumin seeds (optional)
1 liter potato vodka

Steps:

  • Open the vodka bottle, add all the remaining ingredients, and cover tightly.
  • Let stand in a cool, dark place for 2 to 3 weeks, shaking every 3 or 4 days - how long you let it sit depends on how strong you want it, so taste it after 2 weeks to see if you want to let it go longer.
  • When it's as strong as you'd like, strain the solids through a sieve and discard them, then transfer the aquavit back into the bottle.
  • To serve: place your aquavit in the freezer until chilled and you can also place your 1 ounce tall glasses in the refrigerator until chilled - then serve (ask your Scandinavian friends about toasting practices with aquavit, as it can be rather complicated).
  • Note: some people prefer non-potato vodka - use whatever you like.

  • In a large bowl, whip cream until stiff.
  • Layer applesauce, bread crumbs and cream in one glass bowl or individual bowls. It's best to have at least two layers.
