SIMPLE TURKEY CHILI



Simple Turkey Chili image

This is a very simple and hearty chili with plenty of flavor. It's even better the second day! I serve this with lowfat Cheddar cheese and lowfat sour cream. It's also delicious with crackers.

1 ½ teaspoons olive oil
1 pound ground turkey
1 onion, chopped
2 cups water
1 (28 ounce) can canned crushed tomatoes
1 (16 ounce) can canned kidney beans - drained, rinsed, and mashed
1 tablespoon garlic, minced
2 tablespoons chili powder
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon ground cayenne pepper
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.
  • Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chili powder, paprika, oregano, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

You might not think of chili as an easy weeknight dish, but this turkey version from Pierre Franey will change your mind. It's fabulous, it's healthy and it can be ready in about a half hour. A combination of dark and white meat really adds depth and richness of flavor, so try to find a mix, but all white meat (or a mixture of ground beef and turkey) will yield a stellar batch too.

1 tablespoon olive oil
2 pounds ground turkey, white and dark combined
2 cups coarsely chopped onions
2 tablespoons chopped garlic
1 large sweet red pepper, cored, deveined and coarsely chopped
1 cup chopped celery
1 jalapeno pepper, cored, deveined and finely chopped
1 tablespoon fresh oregano, chopped, or 1 tablespoon, dried
2 bay leaves
3 tablespoons chili powder
2 teaspoons ground cumin
3 cups canned diced tomatoes
2 cups chicken broth, fresh or canned
Salt and freshly ground pepper to taste
2 15-ounce cans of red kidney beans, drained
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Sliced lime for garnish (optional)

Steps:

  • Heat the oil over high heat in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.
  • Add the onions, garlic, sweet pepper, celery, jalapeno pepper, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.
  • Add the tomatoes, chicken broth, salt and pepper. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.
  • Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with cheddar cheese, and sour cream and lime wedges, if desired.

1 pound lean ground turkey
3/4 cup chopped celery
3/4 cup chopped onion
3/4 cup chopped green pepper
2 tablespoons chili powder
1 teaspoon ground cumin
1/4 teaspoon pepper
1/8 to 1/4 teaspoon cayenne pepper
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes, undrained
1 jar (24 ounces) meatless pasta sauce
1 can (16 ounces) hot chili beans, undrained
1-1/2 cups water
1/2 cup frozen corn
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
Optional toppings: Sour cream, cubed avocado, diced jalapeno peppers

Steps:

  • In a large skillet, cook and crumble turkey with celery, onion and pepper over medium-high heat until turkey is no longer pink, 6-8 minutes. Transfer to a 5-qt. slow cooker. Stir in seasonings, tomatoes, pasta sauce, chili beans, water and corn., Cook, covered, on high 1 hour. Reduce setting to low; cook, covered, until flavors are blended, 5-6 hours., Stir in kidney and pinto beans; cook, covered, on low 30 minutes longer. If desired, serve with sour cream, avocado and jalapeno.

If you think of turkey chili as less robust than the beefy original, think again. Our version starts with an ancho-tomato purée made with canned fire-roasted tomatoes or deep flavor.

3 ounces ancho chiles (about 5), rinsed and patted dry
2 cups whole fire-roasted tomatoes (from one 28-ounce can)
1/2 large white onion, cut into 2-inch pieces
3 cloves garlic, smashed
1 1/2 cups low-sodium chicken broth
1/2 teaspoon ground cinnamon
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 cup safflower oil
Coarse salt and freshly ground pepper
2 pounds ground dark turkey meat
3/4 pound cooked smoked turkey necks or wings, skin and bones removed, meat shredded (about 1 1/4 cups)
1 can (15.5 ounces) pink beans, rinsed and drained
Sour cream and cilantro sprigs, for serving

Steps:

  • Assemble ingredients: Ancho chiles (dried poblano peppers) and canned fire-roasted tomatoes add smokiness, while cinnamon, oregano, and cumin bring spice and warmth. Onion, garlic, chicken broth, salt, pepper, and oil also contribute to the flavor base.
  • Make flavor base: Remove stems and seeds from chiles; tear into large pieces. Transfer to a blender. Blend with tomatoes, onion, garlic, 1/2 cup broth, cinnamon, oregano, cumin, and 2 tablespoons oil. Generously season with salt and pepper. Puree until smooth, about 1 minute. Transfer mixture to a saucepan; simmer over medium, stirring occasionally, until thick and slightly darkened, about 20 minutes.
  • Cook turkey: Heat remaining 2 tablespoons oil in a large pot over medium-high. Add ground turkey; season with salt. Cook through, breaking meat up, about 5 minutes.
  • Simmer chili: Stir in tomato mixture, smoked turkey, beans, and remaining 1 cup broth. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper. Serve, topped with sour cream and cilantro.

1 large onion, chopped
1 tablespoon minced garlic
1 lb lean ground turkey
4 cups canned tomatoes

1/8 teaspoon cayenne pepper
1/8 teaspoon oregano
1/8 teaspoon ground black pepper
1 (15 ounce) can white kidney beans

1 (15 ounce) can black beans
2 cups water
1 teaspoon chicken soup base (Penzeys Spices)
1/4 cup red bell pepper, chopped

Steps:

  • Heat at medium low a large Dutch oven and coat with cooking spray.
  • Add carrots, onions and garlic; place lid on pot and soften vegetables for about 5 minutes.
  • Add ground turkey and mix well with vegetable mixture.
  • Cook, stirring frequently for about 5 minutes.
  • Add the tomatoes and stir well.
  • Add paprika, chili, cumin, salt, cayenne, oregano and black pepper.
  • Rinse the beans and add to the pot.
  • Add the water and the chicken soup base and blend well.
  • Stir in red bell pepper.
  • Cover the pot and simmer for 30 to 45 minutes.
