Amish Cottage Cheese image

This is an old recipe that calls for raw milk and NOT store bought milk. NOTE: Only persons with access to fresh raw milk will be able to use this recipe. (For those asking what is raw milk, it is the milk fresh from the cow before it gets taken away for processing to be sold in stores.)

1 1/2 gallon fresh raw milk
1 teaspoon(s) salt
1/2 cup(s) fresh cream

Steps:

  • Let milk sour until it is VERY thick. Heat to 115 to 120 degrees, then put into a course cloth bag and allow to drain overnight.
  • When curds are dry, crumble until fine and mix in the salt thoroughly.
  • When ready to serve, stir in the fresh cream and combine well. Enjoy!!

A custard pie made more delightful with the addition of cottage cheese. It can be made in a pastry or graham cracker crust.

1 (16 ounce) package small curd cottage cheese
1 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon fresh lemon juice
1 pinch salt
3 egg yolks
3 egg whites
1 (12 fluid ounce) can evaporated milk
1 ½ cups milk
2 (9 inch) pie shell

Steps:

  • Place cottage cheese in strainer and let drain for about 1 hour or until most of liquid has been drained.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, combine cottage cheese, sugar, flour, lemon juice, salt, egg yolks, evaporated milk, and regular milk. Mix well.
  • In a separate clean bowl, beat egg whites until firm. Fold into batter until smooth. Pour into pie crusts.
  • Bake for 15 minutes at 425 degrees F (220 degrees C), then reduce oven to 350 degrees F (175 degrees C) and bake for an additional 25 minutes or until knife inserted in center comes out clean.
  • Cool on racks, then refrigerate. Flavor improves if served a day after baking.

This hearty casserole has bacon, eggs, hash browns, and three different cheeses all baked into a comforting breakfast dish, perfect for feeding a crowd.

1 pound sliced bacon, diced
1 sweet onion, chopped
4 cups frozen shredded hash brown potatoes, thawed
9 eggs, lightly beaten
2 cups shredded Cheddar cheese
1 ½ cups small curd cottage cheese
1 ¼ cups shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.
  • Bake in preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand 10 minutes before cutting and serving.
