Give leftover or rotisserie chicken a takeout-inspired treatment in this Chicken Chow Mein Casserole. A variety of vegetables, sliced almonds, and chow mein noodles make this Chinese chicken casserole colorful, crunchy, and completely satisfying.

- Preheat oven to 350 degrees F. In an extra-large bowl, stir together chicken, celery, carrots, sweet pepper, mushrooms, almonds, and pimiento. Add soup to chicken mixture; mix well.
- Transfer chicken mixture to an ungreased 3-quart rectangular baking dish. Bake, covered, for 45 minutes. Sprinkle with chow mein noodles. Bake, uncovered, for 5 to 10 minutes more or until heated through. Makes 8 servings.

Steps:
- 1. Pre heat oven to 350 degrees
- 2. Mix all ingredients(except topping which consists of dressing and butter or margarine) and place in a 2 quart ovenware dish.
- 3. Saute Pepperidge Farm Dressing with butter or margarine enough to cover the cassorle dish
- 4. Bake 35 minutes - may need tin foil to keep top from browning too much or just just keep a check on it
- 5. Recipe easily doubles

Love the taste of Chinese but want cheese too? I'm not sure where this recipe came from, but it's a great blending of two cultures and very kid-friendly. My family loves it!

Steps:
- Preheat oven to 350 degrees.
- Cut chicken breasts into small cubes.
- Melt butter in skillet, and cook chicken until lightly browned. Set aside.
- Butter/grease baking dish.
- In large mixing bowl, combine cooked chicken, broth, soup, milk, almonds, mushrooms, water chestnuts, celery and cheese. Mix well.
- Spread mixture into baking dish.
- Bake uncovered for 40 minutes.
- Sprinkle chow mein noodles over top of dish.
- Bake another 5 minutes or until mixture is bubbly. Watch that noodles don't burn.
- Remove from oven and let stand 5 minutes before serving.

- Add mushrooms and peas and carrots.
- Stir in milk and soup.
- Add soy sauce, salt, pepper, and parsley.
