- Preheat oven to 350°. Combine apricots and amaretto; let stand 15 minutes. In another bowl, combine cake mix, eggs, water, oil and apricot mixture. Beat on low speed 30 seconds; beat on medium 2 minutes. , Pour into 2 greased and floured 9-in. round baking pans. Bake until a toothpick inserted in center comes out clean, 22-27 minutes. Cool in pans 10 minutes before removing to a wire rack to cool completely., For filling, heat apricot preserves and amaretto on low in a small saucepan, stirring occasionally, until preserves are melted; set aside. , For glaze, combine cream and corn syrup in a small saucepan. Bring just to a boil. Pour over chocolate; whisk until smooth. Stir in vanilla., Using a long serrated knife, cut each cake horizontally in half. Place 1 layer on a serving plate; spread with half of the filling. Top with another layer; spread with a third of the glaze. Cover with third layer and remaining filling. Top with remaining layer; spread top and sides of torte with remaining glaze. If desired, spread toasted almonds on edges or sides of torte. Refrigerate several hours before slicing.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
- In a large bowl, combine cake mix, eggs, instant vanilla pudding, water, oil, almond extract, and 2 tablespoons of the amaretto; blend together well. Pour batter into the prepared pan.
- Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of cake comes out clean. Remove cake from oven and while it is still warm, poke holes in the surface. Drizzle with the Amaretto Glaze, insuring that some of the glaze fills the holes. Let the cake cool for at least 2 hours before removing from the pan.
- To make Amaretto Glaze: Sift the confectioners' sugar, and combine it with the remaining 1/2 cup amaretto. Blend until smooth. You may add more amaretto as needed.

- Preheat the oven to 350 degrees.
- Butter an 8-inch round cake pan. Line the bottom with waxed paper and butter the paper. Dust the inside of the pan with flour and tap out the excess.
- Melt the chocolates in the top of a double boiler over hot water or in a bowl in a microwave and set aside.
- Place the amaretti and almonds in a food processor and pulse several times, until the mixture is evenly ground. Turn out onto a sheet of waxed paper and reserve.
- Put the butter, sugar and eggs into the processor bowl and process until the mixture is satiny smooth and no longer grainy, about 3 minutes. Stop to scrape the bowl occasionally.
- Add the amaretti and almond powder and the melted chocolate. Pulse until well combined. Turn the batter into the prepared pan and bake in the oven, on the center rack, for 25 to 30 minutes. The top will look dry and perhaps cracked; the center will be moist. Cool on a cake rack for 30 minutes. Run a blunt knife around the edge of the pan and turn out the torte. Peel off the wax paper, invert and cool on a rack. Dust with confectioners' sugar or cocoa.
- Slice thinly and serve at room temperature with whipped cream or ice cream.

- Preheat Oven to 350*.
- Grease and flour 2, 9 inch round cake pans.
- Beat cake mix, water, eggs, and oil in a large bowl on low speed for 30 seconds, and then on medium speed for 2 minutes.
- Pour into prepared pans.
- Bake for 28-33 minutes, or until a toothpick inserted in center comes out clean.
- Cool on racks.
- Split each cake layer horizontally into two thin layers. Cover loosely, set aside.
- In a sauce pan, mix cornstarch and sugar. Gradually stir in milk and beaten eggs. Stir over low heat until mixture bubbles and thickens.
- Cool mixture then stir in vanilla and rum flavorings.
- Cover and chill.
- Place one cake layer on a cake plate or serving platter.
- Sprinkle with 1/3 of the Amaretto and spread with 1/3 of the apricot preserves, followed by 1/3 of the thickened egg mixture.
- Continue layering, ending with plain fourth cake layer.
- In a bowl whip cream and 1/4 cup of Amaretto until stiff.
- Spread mixture over the top and sides of the cake.
- Sprinkle outer edge of top with candied fruit, if desired.
- Chill until ready to serve.

- Grease and line the base of a 23cm springform or loose-bottomed cake tin with baking paper. Heat the oven to 180°C/fan160°C/gas 4. In a large saucepan over a low heat, melt the butter and chocolate. Stir in the ground almonds, then cool for 5 minutes.
- Beat the egg yolks and sugar with an electric mixer for 5 minutes (or use a balloon whisk) or until pale and creamy. Stir in the chocolate mixture until combined.

- Leave the cake to cool in the tin for 15 minutes, then turn out onto a wire rack to cool completely.
