This is a recipe that all Scadians will enjoy as an add on to any fest menu. It does take about 24 hours to prepare but most of that time is aging time and not actual cooking. Warning: recipe makes five gallons of finished product.

Steps:
- Bring 1 gallon of water to boil, then reduce heat to approximately 160 degrees. Once heat is reduced slowly stir in honey and let cook for 10 minutes.
- Remove honey/water mixture from heat and let cool, add in lemons, oranges, and spices (in a cheesecloth bag). Store in a sealed container overnight in refrigerator.
- Put mixture in a 5 gallon cooler and add cold water to fill remaining space, stir well.
- Serve over ice.

- Put the pineapple juice, lemon juice, egg white, cherry syrup and almond extract into a blender. Whizz the mixture a few times at a high speed, until the mixture is pale and starting to increase in volume. If your blender is suitable for use with ice, add a few handfuls and pulse twice more to chill the mixture. Alternatively, stir in the ice until the outside of the jug feels cold. Pour into glasses and garnish with the cherries to serve.

- Butter loaf pan, 9 X 5 X 3 inches.
- Cook sugar, milk, cream, corn syrup and almond-flavored liqueur in 3-quart saucepan over med.
- heat, stirring constantly, until sugar is dissolved.
- Cook, stirring occasionally, (to 234 degrees on candy thermometer or) until small amount of mixture dropped into very cold water forms a soft ball that flattens when removed from water; Remove from heat.
- Add butter and stir.
- Cool mixture to 120 degrees without stirring.
- (Bottom of saucepan will be lukewarm.) Beat vigorously and continuously 5 to 10 minutes or until candy is thick and no longer glossy.
- (Mixture will hold its shape when dropped from a spoon.) Quickly stir in almonds.
- Spread in pan; cool.
- Cut into 1-inch squares.
