AMARETTO BANANAS FOSTER
A delicious twist to the traditional version of Bananas Foster. It's always a hit for dinner parties and there's never a drop left. Best served over vanilla ice cream or pudding. If traditional version of Bananas Foster is preferred, just omit the Amaretto & replace with 1 oz. dark rum & 1 oz. banana liquor. This can be flambe'd at the end when adding the alcohol, however - this is only recommended for the experienced cook.

Steps:
- Melt butter in pan then add bananas. Stir over medium high heat until blended.
- Stir in brown sugar, cinnamon, vanilla, and salt and continue to cook, stirring constantly.
- Add Amaretto, reduce heat, and stir until mixed through then remove from heat.
- Serve immediately over vanilla ice cream or vanilla pudding.
CHICKEN & BANANA FOSTER WITH AMARETTO & MALIBU RUM
Yes I mixed Chicken and Bananas with a banana foster recipe and it worked. My husband loved it. You can also add medium size shrimp already prepared to go in if you like. I serve on top of angelhair plain pasta slightly buttered or plain rice just slightly buttered. Enjoy

- 1. This recipe goes fast so have all ingrediants ready. Melt the butter in a large skillet over medium to low heat, stir in the sugars. Season the chicken with salt and pepper(I use very little)and toss with the flour to coat. Add chicken to skillet and cook low and slow until almost cooked through. Add the bananas and stir add the amaretto and rum and stir and heat through and cook very low 15 to 20 minutes. If chicken is done already only cook 10 minutes. At this point if you wish use a long match and light the liqueur and allow to burn until alcohol cooks off (about a minute) Serve.
- 2. I serve over plain rice or plain angel hair pasta or just alone with a simple vegetable, bread and salad.
BANANAS FOSTER
This recipe only takes 5 minutes to make one delicious dessert!While the bananas cook, scoop the ice cream into individual bowls so they are ready to go once the sauce has been flambeed. Before flambeing, make sure to roll up long shirt sleeves, tie back long hair, turn off the exhaust fan (otherwise the fan may pull the flames up), and turn off any lit burners (this is critical if you have a gas stove). Steps:
- Melt the butter in a heavy-bottomed 12-inch skillet over medium heat.
- Add the brown sugar, cinnamon stick, and lemon zest; stir to dissolve the sugar, about 1 minute.
- (If the heat is too high, the butter and sugar will separate instead of combining to form a sauce).
- Add the bananas and spoon some sauce over each piece.
- Cook until the bananas are glossy and golden on the bottom, about 1 1/2 minutes.
- Turn the bananas and continue cooking until they are very soft but not mushy or falling apart, about 1 1/2 more minutes.
- Remove the skillet from the heat.
- Add the rum and wait until the rum has warmed slightly, about 5 seconds.
- Wave a lit match over the pan until the rum ignites, shaking the pan to distribute the flame over the entire pan.
- When the flames subside (this will take 15 to 30 seconds), divide the bananas and sauce among the four bowls of ice cream and serve.

Allow to cook in the butter until the bottoms start to brown. Use tongs or a spatula to quickly flip the banana slices and cook the other side until brown. Once all banana slices are brown, slowly add the Amaretto and allow to cook until mixture starts to thicken and bananas start to caramelize.
