I got this from an internet source a while back. They taste just like the potatoes served at the luaus at the Hale Koa in Honolulu! Yummy!

4 -5 medium sweet potatoes
1/2 cup butter
1 cup brown sugar
1/2 cup water
1/4 cup shredded coconut

Steps:

  • Boil the sweet potatoes in their jackets until tender, about 25 minutes. Let cool and then cut into slices about 1 1/2 inches thick.
  • In a large skillet melt butter. Stir in brown sugar and water and cook on medium heat for about 5 minutes.
  • Reduce heat and add sweet potatoes.
  • Cook gently, tossing lightly until sweet potatoes are glazed.
  • Top with coconut before serving.

Steps:

  • Cut 2 large purple sweet potatoes into thin wedges. Toss on a rimmed baking sheet with 1/2 lemon (quartered and sliced), 3 tablespoons olive oil, 1 tablespoon harissa and 1 teaspoon ground cumin; season with salt and pepper. Roast at 425˚ F, stirring once, until tender and lightly browned, 30 minutes. Top with chopped parsley.

This casserole is just so good it is the first thing I am asked to make every Thanksgiving.

1 cup light brown sugar
1 teaspoon ground cinnamon
6 large sweet potatoes
1 tablespoon cold butter, cut into pieces
2 teaspoons salt
6 firm bananas, sliced
2 (8 ounce) cans crushed pineapple
1 cup pineapple juice
1 teaspoon lemon juice
2 tablespoons honey

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish. Stir together the brown sugar and cinnamon until evenly blended; set aside.
  • Place the sweet potatoes into a large pot and cover with salted water. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until just tender, 15 to 20 minutes. Drain and allow to steam dry for a minute or two; peel and cut into 1/2 inch slices.
  • Layer the potatoes into the prepared baking dish, dot with butter, and sprinkle with salt. Arrange the bananas over the potatoes and sprinkle evenly with the brown sugar mixture. Top with the crushed pineapple. Whisk together the pineapple juice, lemon juice, and honey until the honey has dissolved. Pour over the casserole.
  • Bake in the preheated oven until hot and browned on top, about 40 minutes.

2 large sweet potatoes
2 cloves garlic
Kosher salt
1/3 cup mayonnaise
1 1/2 tablespoons extra-virgin olive oil
Freshly ground pepper

Steps:

  • Preheat the oven to 375 degrees. Pierce the sweet potatoes a couple of times with a fork and roast on a small baking sheet until soft, about 50 minutes.
  • Smash the garlic cloves and sprinkle with a pinch of salt. Using the flat side of a large knife, mash the mixture into a coarse paste. Add to the mayonnaise along with about 2 tablespoons water. Gradually whisk in the olive oil and season with pepper.
  • Halve each sweet potato lengthwise, sprinkle with salt and pepper and top with the aeoli.

1 banana, sliced

  • Preheat oven to 400.
  • Combine potatoes, juice, 1/4 tsp cinnamon and mash.
  • Spray casserole with cooking spray.
  • Spread mixture, making a well in center.
  • Arrange banana around edge of well.
  • Spoon pineapple into well.
  • Sprinkle with cinnamon and brown sugar.
  • Bake 10-15 minutes.
  • Place in broiler till fruit is browned.
