GLUTEN-FREE MINCE PIES
These deliciously crunchy, crumble-topped mince pies cater for gluten-free and egg-free diets. Perfect with a cup of tea or glass of mulled wine

- To make the pastry, rub the butter into the flour until the mixture resembles fine breadcrumbs. Add the icing sugar and orange zest. Spoon in 4 tbsp water, mixing with a knife until the dough starts to come together. Knead lightly, flatten into a disc, wrap in cling film and chill for at least 30 mins.
- Heat oven to 180C/fan 160C/gas 4. On a lightly floured work surface, roll the pastry out to a 2-3mm thickness. Using a 9-10cm fluted cutter, stamp out discs from the pastry. Re-roll any trimmings and stamp out more discs until the pastry is used up. Line two 8-hole muffin tins with the pastry discs, then fill each pastry shell with 1 heaped tsp mincemeat and spread out to smooth. Can be frozen, uncooked, in trays for up to 1 month.
- Combine the crumble ingredients in a small bowl, then sprinkle a little over the top of each mince pie. Bake on the middle shelf of the oven for about 20 mins until the pastry is cooked and golden brown. Cool in the tins for 5 mins, then serve with brandy butter or crème fraîche.

EASY ALMOND MINCE PIE PUFFS

- Unroll the pastry on a lightly floured surface, and cut in half lengthways. Cut each half into six, so you have 12 squares. Working with one square at a time, fold in half diagonally to create a triangle. Lay the triangle out with the folded edge facing you. Cut a ½cm border along the other two edges, stopping just before the two cuts intersect. Carefully unfold the pastry, then brush the borders with a little beaten egg. Lift the far left corner of the pastry and fold it over to the right, pressing it down gently against the inner right corner to seal. Repeat from the far right corner of the pastry to the inner left corner. Arrange the pastries over two baking trays lined with baking parchment, and spoon 1 tsp mincemeat into the middle of each. Top each with a few flaked almonds. Will keep chilled for up to 24 hrs.
- Heat the oven to 210C/190C fan/gas 6½. Brush the pastry with more egg and bake for 15-20 mins until puffed up and golden. Dust with icing sugar and enjoy warm, or leave to cool completely. Once cooled, will keep in an airtight container at room temperature for two days.

- Stir the dried fruit together in a large bowl. Dice the apples and add them to the bowl, grate over the lemon zest, squeeze in the juice and stir to coat the fruit. Next add the orange zest and juice, sugar, spices, peel (if using) salt and fat then stir until everything is evenly coated. If using ordinary cognac, add the zest of the 3rd orange. Carefully fold through the almonds. Cover the bowl with clingfilm and leave in a warm spot overnight, stirring occasionally to agitate the flavours.
- Preheat oven to 110°C/90°C Fan. Transfer the mincemeat to a baking tray, cover the top with foil and bake for 2 hours. Set aside to cool slightly, and then stir in the alcohol. Lastly, transfer to sealable sterilised jars. The mincemeat will last for 2 years if stored in a cool and dark place, feed it with about 1 tbsp of brandy every couple of months for an added kick. The flavours improve a little over time, so these are perfect for a last minute mince pie knock-up.
- For the pastry, place the flour, ground almonds and icing sugar in a food processor and blitz for 10 seconds to combine. Add the cubed butter and pulse 3 to 4 times until rough breadcrumbs form. Put the processor on a slow blitz and pour in the eggs and almond extract, as soon as a ball of dough takes shape, stop the mixer. Pat the dough into a disc and wrap with clingfilm. Refrigerate until chilled, around 30 minutes.
- Sprinkle a light film of flour over a work surface and roll the chilled dough to the thickness of a £1 coin. Cut an equal quantity of 3 inch and 3 ½ inch rounds and place the larger round into the bottom of individual foil pie cases, re-rolling the pastry as you go. Stab the bottoms with a fork and then spoon 1 tablespoon of mincemeat inside. Place the smaller rounds on top of the mincemeat and use the tines of a fork or a toothpick to press along the sides of the pie at an angle. If you prefer, you could use a Yorkshire pudding tray and dab water along the edges to seal the lid and bottom.

- Add cubes of chilled butter and mix until texture starts resembling breadcrumbs. Add egg yolk (if using) and keep mixing until the dough comes together almost in a ball. Leave the egg yolk out in vegan version.
- Take it out onto the kitchen counter and flatten into a disc, cover in baking paper or beeswax wrap and chill for about 10-15 minutes.
- If you don't have food processor simply mix all the dry ingredients in a large bowl, add chilled, cubed butter and rub with your fingers until you get to crumbs like consistency. Add egg yolk if using (leave out in vegan version) and keep on mixing with your hands until dough starts coming together. Flatten it into a disc, cover in cling film and chill as above.

- First make the pastry. Put the flour, ground almonds, icing sugar and butter in a food processor (or a freestanding mixer fitted with a paddle attachment) and pulse until the mixture resembles fine breadcrumbs and starts to clump together a little.
- To make the frangipane, beat the butter and sugar together until very soft and aerated, then add the remaining ingredients with a pinch of salt. Mix to combine.
- To assemble, roll out the pastry to around 3mm thick on a lightly floured work surface. Using a 7.5–8cm/3–3¼in round cutter, cut out 24 rounds and use to line 2 x 12-hole fairy cake tins.
- Add a heaped teaspoon of mincemeat to each round of pastry, followed by a generously heaped teaspoon of the frangipane. Use a knife or spatula to spread the frangipane evenly over the mincemeat, adding a little more if necessary to seal round the edges, making sure the mincemeat is completely covered.
