Stuffed Baked Apple Halves + Video image

Baked apple halves are delicious, but cinnamon streusel stuffed baked apples are better! Make this recipe for an impressive fall dessert.

2 large Honeycrisp apples (peeled, cored, and halved vertically (See Note 1))
4 tbsp brown sugar (divided)
2 1/2 tbsp butter (melted and divided)
1 tsp ground cinnamon (divided)
3 tbsp old-fashioned rolled oats (NOT instant or quick cooking)
2 tsp all purpose flour
1/4 tsp salt
1 1/2 cups low-fat vanilla ice cream (optional (See Note 2))
4 tbsp caramel sauce (optional (See Note 2))

Steps:

  • Preheat oven to 400°F.
  • Place the apple halves onto cutting board with the flat cut side down. Place chop sticks or wooden spoons above and below the apple. Starting at the outermost edges, cut 1/8" thick slices, cutting down to the chopstick or wooden spoon.
  • Place apple halves cut sides down, in an 8-inch square glass or ceramic baking dish coated with cooking spray. (See Note 3) Combine 1 tablespoon sugar, 1 tablespoon butter, and 1/2 teaspoon cinnamon in a small bowl. Brush mixture evenly over each apple.
  • Cover with foil and bake at 400°F for 25-30 minutes. Remove foil. and continue baking for another 10 minutes or until apples are tender. Remove pan from oven and allow to cool for 10 minutes.
  • In a small bowl combine remaining 3 tablespoons sugar, remaining 1 1/2 tablespoons butter, remaining 1/2 teaspoon cinnamon, oats, flour, and salt.
  • Carefully fan open the apple halve slices and carefully spoon streusel evenly over apples. Bake for 10 minutes. Turn broiler to high (leave pan in oven) and broil apples 2 minutes. Serve with ice cream and optional caramel sauce.

1/4 cup maple syrup
3/4 cup sugar
2 tablespoons cornstarch
2/3 cup cold water
2 tablespoons butter
1-3/4 cups quick-cooking oats
1-1/4 cups all-purpose flour
1 cup packed brown sugar
1/2 cup almond flour
1 teaspoon baking soda
3/4 cup cold butter, cubed
5 cups sliced peeled tart apples (about 5 medium)
1/2 cup coarsely chopped salted roasted almonds

Steps:

  • Preheat oven to 350°. In a small saucepan, bring syrup to a boil; cook 3-5 minutes or until liquid is reduced by half., In a small bowl, mix sugar and cornstarch; whisk in water until smooth. Whisk into reduced syrup. Return to a boil; cook and stir 1-2 minutes or until thickened. Whisk in 2 tablespoons butter until blended. Remove from heat., In a large bowl, mix oats, flour, brown sugar, almond flour and baking soda; cut in cold butter until crumbly. Reserve 1-1/3 cups mixture for topping. Press remaining mixture onto bottom of a greased 13x9-in. baking pan. Arrange apples over top; drizzle with syrup mixture., Stir almonds into reserved crumb mixture; sprinkle over top. Bake 50-60 minutes or until apples are tender and topping is golden brown.

4 large apples (Granny Smith or other tart baking apples)
1/2 cup almonds, blanched, very finely chopped
1/4 cup sugar
2 tablespoons water
1 1/2 tablespoons butter, melted
1/2 cup dry breadcrumbs, fine
2 tablespoons brown sugar
2 cups whipping cream (or Vanilla Cream Sauce)

Steps:

  • Preheat oven to 425°F
  • Core the apples, leaving the peel, and cut lengthwise (stem to bottom) to make two halves each.
  • Mix the almonds, sugar, and water to make a paste, and fill the centers of each apple half with this paste, dividing it equally.
  • Place the filled apple halves on a cookie sheet with the filling side up.
  • Drizzle the apples with melted butter.
  • Mix the crumbs and brown sugar, and sprinkle over the apple halves.
  • Bake for 25 minutes or until fork tender.
  • Serve with 1/4 cup of cream each.

1 loaf (1 pound) sliced bread
3 medium onions, chopped
3 medium tart apples, peeled and chopped
1-1/2 cups diced fully cooked ham
1 cup sliced celery
1 tablespoon dried savory
2 teaspoons grated lemon zest
1-1/2 teaspoons grated orange zest
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon fennel seed, crushed
1/2 cup butter
1-1/2 cups slivered almonds, toasted
1/2 cup dried currants
1 cup chicken broth
1/2 cup apple juice

Steps:

  • Cut bread into 1/2-in. cubes and place in a single layer on ungreased baking sheets. Bake at 225° for 30-40 minutes or until partially dried, tossing occasionally. , Meanwhile, in a large skillet, saute the onions, apple, ham, celery and seasonings in butter for 15 minutes or until onions and apples are tender. 2 granny smith apples
1 tablespoon butter
1 cup cranberries (fresh or frozen and thawed)
2 tablespoons honey
1/4 teaspoon ground cardamom
6 dates, pitted and chopped
1 orange, juice and zest of
2 tablespoons roasted almonds, roughly chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Cut 1/2 inch off the top of the apples and reserve tops. Use a paring knife or spoon to hollow out the apples, leaving about a 1/2-inch thick wall and base. Set aside.
  • Melt butter in a large skillet over medium heat.
  • Add cranberries, honey, cardamom, dates and orange juice and zest and cook until the cranberries begin to collapse and liquid thickens, 3 to 4 minutes. Stir in almonds.
  • Spoon cranberry mixture into apples then replace the apple tops. Put into a small baking dish filled with 1/4 inch water, cover with foil and bake until tender, 15 to 30 minutes (depending on apples).
  • Uncover, and carefully pour off the water and continue baking until very tender and golden, 10 to 15 minutes more.

Steps:

  • Preheat oven to 350°F. Using small sharp knife and starting at side of apple at center point, cut around each apple to make slit in skin to prevent bursting. Using small end of melon baller, scoop out core and all seeds to within 1/2 inch of bottom. Place apples upright in 8x8x2-inch glass baking dish. Spoon filling into hollow of each apple. Mound remaining filling on top of each apple (some may slide down sides). Pour juice around apples. Butter large sheet of foil. Loosely tent dish with foil, buttered side down.
  • Bake apples until barely tender, about 1 hour. Uncover and bake until apples are very tender and sauce is bubbling thickly, about 20 minutes longer. Transfer apples and sauce to bowls. Serve with yogurt.
