All-Purpose Truffles image

1/2 cup cream
9 ounces semisweet or bittersweet chocolate
1 tablespoon butter
1 tablespoon light corn syrup
2 tablespoons Cognac, rum, or other liquor or liqueur
3/4 pound semisweet or bittersweet chocolate
3 cups cocoa powder

Steps:

  • Bring cream to a boil. Remove from heat and add chocolate; allow to stand several minutes, add butter, corn syrup, liquor and whisk smooth. Cool about 2 to 3 hours at room temperature to about 80 degrees F. Beat with paddle on medium speed in electric mixer until light. Pipe out small truffles on paper with a pastry bag fitted with a 1/2-inch plain tube. Refrigerate to set for at least 1 hour.
  • Melt and cool or temper the chocolate. Sift the cocoa into a deep pan. Coat truffles, using your hand to cover truffles with tempered chocolate. Deposit the truffles in the cocoa as they are enrobed and shake the pan to cover them. Remove the truffles to another pan as they are coated. After the covering sets, shake the truffles in a strainer to remove the excess cocoa.

9 ounces dark chocolate, 55 percent to 62 percent, chopped (about 1 cup)
1 cup heavy cream
1 teaspoon brown rice syrup (or light corn syrup)
Pinch Himalayan pink salt

Steps:

  • Put the chopped chocolate in a large bowl and set aside.
  • Add the heavy cream to a small pot over medium heat and cover with a lid. Remove from the heat just before the cream comes to a boil. Pour the cream over the chocolate, cover the bowl with aluminum foil or a lid and let it sit 5 minutes. Remove the cover and whisk until the chocolate is completely melted and the mixture is smooth. Stir in the brown rice syrup and a healthy pinch of Himalayan pink salt. Let it sit and come to room temperature, then cover with plastic wrap touching the surface of the ganache and place in the refrigerator to set for 1 hour.
  • Scoop tablespoon-size portions of the ganache onto a parchment-lined plate. When filled, place the plate in the freezer for 20 minutes and continue with the remaining ganache.
  • Remove the chilled ganache from the freezer; use your hands to roll the portions into smooth balls, then roll in your favorite spice or nut combination.

3 cups confectioners' sugar, sifted
3 cups semisweet chocolate chips, melted
1 ½ teaspoons vanilla

Steps:

  • In a large bowl, beat cream cheese until smooth. Gradually beat in confectioners' sugar until well blended. Stir in melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1 inch balls.

Basic Truffles image

This is a basic truffle filling to which you can add your own flavorings or extracts. You may use this to fill the chocolate shells you make using candy molds or roll into balls then into powdered sugar, cocoa, sprinkles or other toppings

Steps:

  • In a medium saucepan over medium heat, combine chocolate and cream. Cook, stirring, until chocolate is melted and mixture is smooth. Remove from heat and whisk in flavoring. Pour into a small dish and refrigerate until set, but not hard, 1 1/2 to 2 hours. Use to fill candies or form balls and roll in toppings.
