- Preheat oven to 400 degrees F.
- Lightly oil a large baking pan.
- Mix the spices, oil and lemon juice together in a small bowl.
- Toss the potatoes with this mixture (a large plastic bag works well) until evenly coated.
- Spread the potatoes onto the baking sheet and bake in the preheated oven for 30-35 minutes or until nicely browned and crispy, turning once halfway during cooking.

- Preheat oven to 450°F.
- Spray baking sheet with cooking spray.
- Slice potatoes into 12 wedges each.
- Place all the potatoes into a large bowl.
- Sprinkle salt, pepper, and cumin over potatoes, drizzle oil over seasonings and toss the potatoes until all are coated.
- Spread potatoes onto baking sheet in a single layer.
- Bake for 10, remove from oven and turn.
- Place back into oven and cook for 10 more minutes, then turn again.
- Return to oven and continue cooking until golden brown -- probably 5 - 10 more minutes.
- Each serving size is 12 wedges.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
- In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
- Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

- Adjust an oven rack to the lowest position, and preheat the oven to 475ºF. Wash the potatoes and cut them, lengthwise, into small, even wedges or sticks. Note: really small pieces will over crisp during the baking.
- Place the sliced potatoes into a large bowl and cover them with hot tap water. Let them soak for 10 minutes.
- Spread 3 tablespoons of the olive oil over a rimmed baking sheet. Drain the potatoes and dry them thoroughly with a tea towel. Dry out the bowl they were just soaking in. Put the potatoes back in and toss with the remaining tablespoon of oil and the teaspoon of kosher salt. If you want pepper, season the potatoes with pepper here, too.
- Arrange the potatoes in a single layer on the baking sheet and cover the sheet tightly with foil. Bake for 5 minutes, then remove the foil (saving it for future uses) and continue to bake for 15 to 20 minutes, rotating the pan after 10 minutes to ensure even browning.
