Grated Sweet Potato Pudding image

This recipe is very similar to sweet potato casserole, but with shredded sweet potatoes. My mom used to make it at both Thanksgiving and Christmas. She passed away when I was 8, so I when I eat this it reminds me of family holidays of long ago. I hope your family enjoys this!

2 pounds sweet potatoes
¼ cup unsalted butter, melted
3 eggs
1 ½ cups white sugar
1 (12 fluid ounce) can evaporated milk
1 cup whole milk
¾ teaspoon ground cinnamon
½ teaspoon ground allspice
½ teaspoon ground nutmeg
½ teaspoon ground cloves
1 ½ teaspoons vanilla extract
10 large marshmallows

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 2 quart baking dish.
  • Peel and grate the sweet potatoes and mix with melted butter in a large bowl. In a medium bowl, beat eggs with sugar until well mixed. Pour over the sweet potato mixture, and stir in evaporated milk, whole milk, cinnamon, allspice, nutmeg, cloves, and vanilla extract. Mix well to combine all ingredients, and spoon into the prepared baking dish.
  • Bake in the preheated oven for 60 to 70 minutes, until the sweet potatoes are tender and the top is lightly browned. Remove dish from the oven and place marshmallows on top of the sweet potatoes. Return to the oven and bake 5 to 10 minutes more, until the marshmallows are lightly browned. Let stand 5 minutes before serving.

6 large sweet potatoes, peeled and quartered
½ cup butter, melted
⅔ cup dark brown sugar
⅔ cup white sugar
4 eggs, beaten
⅔ cup orange juice
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2 quart baking dish.
  • Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.
  • In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla; stir until smooth. Pour into buttered dish.
  • Bake in preheated oven 40 minutes.

1/2 cup butter, melted

2 pounds sweet potatoes (about 4 medium)
1 cup fat-free milk
1/2 cup egg substitute
3/4 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup raisins
2 teaspoons grated orange zest
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1/8 teaspoon salt
8 tablespoons fat-free whipped topping in a can

Steps:

  • Scrub and pierce sweet potatoes. Bake at 350° for 1 to 1-1/4 hours or until very tender. , Cut sweet potatoes in half; scoop out pulp and place in a large bowl. Mash with milk and egg substitute. Stir in the brown sugar, flour, raisins, orange zest, pumpkin pie spice, vanilla and salt until blended. , Transfer to a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 1-1/4 to 1-1/2 hours or just until top is set. Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Serve with whipped topping.

This was probably the inspiration for the filling to the sweet pototo pies found in America these days. Although not low-fat by any means, it is simple and satisfying. Recipe by Angela Self Medearis. *Cook time does not include refreigeration time.

1 quart water
6 medium sweet potatoes, peeled and cut into 1/2 inch cubes (about 2 pounds)
3 cups whole milk
1 cup heavy cream
1/2 cup sugar
1/2 teaspoon powdered saffron
1/2 teaspoon ground cardamom

Steps:

  • Boil the water in a heavy saucepan. Drop in the sweet potato cubes and cook, uncovered, until tender - about 25 to 30 minutes. Drain the potatoes and return them to the pan.
  • Add the milk, cream, sugar, saffron and cardamom. Stirring often with a wooden spoon, bring the mixture to a boil over medium heat. Reduce the heat to low and simmer, uncovered, for about 1 hour, stirring often. The pudding is done when it is smooth and is thick enough to hold its shape almost solidly in the spoon.
  • With the back of the spoon, rub the pudding through a fine sieve into a serving bowl.
  • Refrigerate the pudding until cool. Before serving, sprinkle the top with a little additional ground cardamom.

SHREDDED SWEET POTATO PUDDING

When I first saw this recipe demonstrated on a cooking program on Food Network, I had to copy it down to try for Thanksgiving. I have since made this several times for holiday meals and received many compliments. I have to warn you - this is no diet dish. This is very rich and very,very sweet. Even though this is sweet enough to be a dessert, this is meant to be a side dish to compliment a saltier main dish - such as a baked ham. I imagine you could try using shredded carrots as well, but I have yet to do so. (Adapted from "Calling all Cooks" where this was called Mama Lane's Sweet Potato Pudding and was shared guest Jim Brown.) Servings are all relative to how big a portion your guests scoop up - some years I have had less yield. I have successfully doubled this recipe when needed.

3/4 cup granulated sugar
3 tablespoons sweet unsalted butter, melted & cooled slightly
1 cup milk (skim is OK)
1 large egg
2 cups fresh raw sweet potato, peeled and shredded
1 teaspoon vanilla extract

  • Preheat oven to 350°F.
  • If you haven't already done so, peel sweet potatoes, cut into large chunks and run through the shredder of your food processor.
  • Combine the sugar, egg, butter, milk, and vanilla with a whisk.

3 -4 large sweet potatoes
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon allspice
1/4 teaspoon ginger
1/4 teaspoon clove
1 cup water
1 -2 cinnamon stick
1/4-1/2 cup cup butter or 1/4-1/2 cup cup margarine
1/2 cup Karo syrup
1/2 cup brown sugar
1 pinch salt

Steps:

  • While grating sweet potatoes, bring to a slow boil all the spices in 1 cup of water.
  • Put the sweet potatoes into a large mixing bowl.
  • Just before removing the pot of spices from the stove, add butter or margarine, Karo syrup, brown sugar, and salt.
  • Stir while the butter melts.
  • Remove the cinnamon sticks.
  • Pour this mixture over the grated sweet potatoes.
  • Blend well together.
  • Put in a well-buttered casserole dish and place in a preheated 350 degrees oven.
  • Bake, stirring well two or three times, until the sweet potatoes are tender and the top is lightly browned.
  • This takes about 1 hour.
  • Remove from the oven and let stand about 5 minutes before serving.
  • When stirring you may decide extra spices are needed or more water so mix up more water and spice and add them.
  • You may add more Karo syrup or butter as well as spices.

1 cup cane syrup

3 eggs, well beaten

Steps:

  • Preheat oven to 350°F.
  • Melt butter in a heavy skillet.

  • pour mixture into the hot pan of butter; stir until heated.
  • Place skillet in oven to bake.
  • When crusted around edge and top, turn under and let the crust form again.
  • Do this twice, allowing the last to remain on the sides and top.
  • This requires about 40 minutes.
  • Serve with cream sweetened and flavored to taste.
  • The cast iron skillet bakes well and causes the pudding to be desirably dark.
