1 1/2 cups cake flour, sifted (all purpose flour is fine if you don't have cake flour)
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1 cup whipping cream
3 eggs
1 cup sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350F and grease a 8" tube pan.
  • Sift flour, salt and baking powder together.
  • Whip cream.
  • Beat eggs; add sugar and vanilla.
  • Fold dry ingredients and whipped cream into batter.
  • Bake in prepared pan for 40 minutes.

2 eggs
¾ cup white sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch square pan.
  • Beat eggs in a small bowl until very thick. Add the sugar and the vanilla, beating well.
  • Combine the flour, baking powder, and salt. Add the flour mixture in three parts, alternating with the whipping cream, mixing until combined. Pour the batter into the prepared pan.
  • Bake in preheated oven until a toothpick inserted near the center comes out clean, 30 to 40 minutes.

  • Preheat oven to 325 degrees F. Liberally grease a 9x13 rectangular baking pan with cooking spray; set aside.
  • In a medium bowl, beat the heavy whipping cream with a mixer until stiff peaks form, about 5-7 minutes. Set aside. Meanwhile, cream together the eggs, sugar, and vanilla with the mixer in another large bowl until pale and fluffy, about 2 minutes. Add in the flour, baking powder, and salt until well blended. Fold in the whipped cream gently until fully incorporated and no streaks of whipped cream remain. Pour into the prepared baking pan.
  • Bake for approximately 30-40 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool completely before cutting into squares. Dust with confectioners' sugar if you'd like and serve up with more fresh whipped cream and fresh berries.
