These wings are marinated for a few hours in a mixture of hot pepper sauce, honey, chili powder and butter and are then baked until crispy. Serve with blue cheese dressing. Recipe found in Womans Day magazine.

Number Of Ingredients 6

1/4 cup hot pepper sauce
1/4 cup honey
1/4 cup butter, melted
4 teaspoons chili powder
1 teaspoon salt
5 lbs chicken wings

Steps:

  • Mix first 5 ingredients in a large bowl.
  • Add chicken and turn to coat.
  • Cover and refrigerate, turning occasionally for at least 2 hours or up to 12.
  • Heat oven to 375° and line baking sheet with heavy duty foil.
  • Add chicken in a single layer.
  • Bake, turning chicken once for 1 1/4 hours or until chicken turns crispy.
  • Note: After baking these can be cooled and refrigerated, covered for up to 24 hours. Reheat in covered baking dish in a 400° oven for 15 minutes.

"Spicy, meaty and with just the right amount of beans, it's a terrific chili". I made this after watching Al Roker make it on his morning show. My family prefers the more tradional mild ground beef and beans type of chili but I needed a change. It is spicy, but I personally did not find this too spicy. If you are not overpowered by hot italian sausage that has simmered away, then you should be fine. This is the first chili I have eaten more than 1 bowl of. The first I have made using a diced meat. I made this using 45oz. kidney beans per family preference. Simmered an additional 45 minutes before adding the beans. I did find that it took a lot more time than 15 minutes to thicken. Possibly due to the rain here? Much thicker and better on day 2! If it were not for my partners "delicate" palate, I would up the heat a bit. Cooking times were provided by the recipe with the 45 minutes being active cooking time.

2 tablespoons vegetable oil
2 lbs chuck steaks, cut into 1/2-inch dice
kosher salt
fresh ground pepper
1 lb hot Italian sausage, casings removed and meat broken into 1-inch pieces
1 large white onion, chopped
6 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon sweet paprika
2 teaspoons ground cumin
1 (28 ounce) can diced tomatoes
1 cup water
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can cannellini beans, drained
1 (15 ounce) can kidney beans, drained

Steps:

  • In a large enameled cast-iron casserole or soup pot, heat the oil. Season the chuck with salt and pepper.
  • Add half of the chuck and cook over moderately high heat until browned, about 5 minutes. Using a slotted spoon, transfer the meat to a plate. Repeat with the remaining chuck.
  • Add the sausage and cook until browned, breaking it up with a spoon, about 4 minutes. Add the sausage to the diced chuck.
  • Add the chopped onion to the casserole and cook over moderate heat until tender, about 4 minutes.
  • Add the garlic and cook for 2 minutes.
  • Stir in the chili powder, paprika, cumin and the chuck, sausage and any accumulated juices. Cook, stirring until fragrant, about 1 minute.
  • Add the tomatoes and their juices and the water. Cover and simmer over moderately low heat for 1 hour.
  • Stir in the beans and simmer uncovered until thickened, about 15 minutes. Season with salt if desired.
  • Serve the chili in deep bowls, passing the cheese, scallions, sour cream and cilantro on the side.

32 pounds chicken wingettes and drumettes
3/4 cup cornstarch
8 cups soy sauce
2 cups water
1/2 to 2 cups hot pepper sauce
8 teaspoons ground ginger
2 garlic cloves, minced
2 cups canola oil

Steps:

  • Place the wings in greased large baking pans. Bake at 375° for 40-50 minutes or until juices run clear. , Meanwhile, in a Dutch oven, combine the cornstarch, soy sauce and water until smooth. Stir in the pepper sauce, ginger and garlic. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; whisk in oil., Drain wings; transfer to large roasting pans. Top with sauce and stir to coat. Bake for 45-55 minutes, stirring occasionally, until lightly glazed and heated through.

If you want a delicious spicy appetizer or for a tail gate picnic, try these. I also included a recipe for homemade Sweet-Hot Garlic Chili Sauce for dipping.

18 chicken wings, whole, tips removed
3 tablespoons ginger, grated
1/4 cup white vinegar
2 tablespoons sesame oil
1 1/2 teaspoons sesame seeds
1/2 cup honey
1/2 cup soy sauce
1/4 cup sweet-hot chili-garlic sauce
2 tablespoons sesame seeds, for garnish
3 stalks scallions, for garnish
1/4 cup canola oil, for frying

Steps:

  • Preheat oven to 350°F.
  • Cut wings by disjoining the two sections and trim away excess fat.
  • Place wings on a baking sheet lined with foil and bake for 35 minutes.
  • Set aside.
  • In a large skillet over medium heat, add 2 tablespoons canola oil and the grated ginger and cook for 2 minujtes.
  • Add vinegar, hot sesame oil, sesame seeds, honey, soy sauce and Sweet-Hot Garlic Chili Sauce.
  • Cook for 2 more minutes then transfer to a large bowl and set aside.
  • In the same skillet add 4-6 tablespoons canola oil.
  • Return the chicken wings to the skillet and cook for about 3 minutes, or until crispy and golden brown.
  • Remove wings and drain on paper towels then add to the bowl with the sauce mixture, tossing to coat.
  • Marinate in fridge for at least 2 hours or overnight.
  • Place wings on a baking pan, reserving the sauce, and bake in 375F for 15-20 minutes to heat thoroughly.
  • Serve with more sauce. Garnish with chopped scallions and sesame seeds, tossing to coat evenly.
  • SWEET-HOT GARLIC CHILI SAUCE:.
  • 1/2 cup rice vinegar.
  • 1/2 cup white sugar.
  • 1/4 cup water.
  • 3 tablespoons fish sauce.
  • 2 tablespoons Sherry wine.
  • 3 cloves garlic, minced.
  • 3/4 teaspoons Thai dried crushed chilis.
  • 1/4 cup tomato ketchup.
  • 1 1/2 tablespoons cornstarch dissolved in 3-4 tablespoons water.
  • Place all ingredients except the cornstarch in a pot and bring to a rolling boil.
  • Reduce heat to medium and let boil for 10-12 minutes or until reduced by almost half.
  • Reduce heat to low and add the cornstarch mixture incorporating into sauce.
  • Cook until thickened about 5 minutes.
  • Remove from heat and adjust taste to more sweet or more hot adding sugar or more chilis.
  • Serve with wings.

The wings may be oven baked instead of grilling, this also works well using small chicken drumsticks instead of the wings although cooking time will need to be increased --- adjust the cayenne pepper to suit heat level, and the recipe may be doubled, this is easy and *ver* good!

2 1/2 lbs chicken wings (separated at joints and tips discarded)
seasoning salt
1/2 cup butter
1 cup louisiana hot sauce (or use hot sauce of choice)
1/8-1/2 teaspoon cayenne pepper (adjust amount to suit taste)
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper

Steps:

  • Set grill to high heat.
  • Season the wings lightly with seasoned salt.
  • Cook the wings 8-10 minutes on each side (cooking time will take slightly longer for larger pieces).
  • Melt the butter in a saucepan and mix in hot sauce, cayenne pepper, garlic powder and black pepper.
  • Place the wings in a large plastic container with a lid.
  • Pour the sauce over the cooked wings and toss using hands fitted with rubber gloves or seal and shake the container to coat the wings with the sauce.
  • Delicious!
