2 (3-pound) sides pork spare ribs
1 tablespoon Irvine Spices Roasted Garlic Pepper Seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon lemon pepper
2 teaspoons salt
1/2 cup honey
1/2 cup brown sugar

Steps:

  • Rinse spare ribs and dry with paper towels. Prepare a rub by combining Roasted Garlic Pepper Seasoning, garlic powder, onion powder, lemon pepper, and salt in a small bowl and rubbing over entire surface of spare ribs. Follow manufacturer's instructions for the smoker. General rule of thumb is to maintain a temperature range of 255 to 300 degrees F (indirect heat), and smoke for 1 to 1 1/2 hours per pound of meat (probably about 4 1/2 hours or so for sides of pork spare ribs). Towards the end of the smoking time, combine the honey and brown sugar in a small bowl and spread on the spare ribs.
  • Serve family style.

Easy Fall Off the Bone Oven-Baked Ribs image

Low and slow cooking make these oven-baked ribs fall off the bone tender. Once baked, we like to add our sweet and spicy barbecue sauce to the ribs, but use whatever you love. For the most tender ribs, we remove the thin membrane covering the back of the rack. Depending on where you have purchased ribs, this may already be done for you. If not, instructions are in the notes section below. FAQ: We call for baby back ribs in the recipe, but other types of ribs (spareribs, country-style, St. Louis-style) will work with this recipe. Cook time should be similar, we recommend that you check on the ribs while they cook to see how they are progressing. FAQ: Doubling or tripling the recipe below should not change the recipe method or bake time. You might need to use two pans for baking.

2 to 2 1/2 pounds baby back pork ribs
Salt and black pepper
1 tablespoon olive oil
1/4 cup finely diced onion
1/2 teaspoon ground cumin
1/2 cup ketchup, try our homemade ketchup recipe
1 tablespoon hot chili sauce (suggestion Sriracha)
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Salt and ground pepper, to taste

Steps:

  • Heat oven to 275° Fahrenheit (135C).
  • If the ribs still have the thin membrane covering the back of the rack, remove it. See how in the notes section below.
  • Season both sides of the ribs with a generous amount of salt and pepper. If you are using a spice rub, add season the ribs with it now. Place the ribs, meat-side up, into a large roasting pan or rimmed baking sheet. (It may be necessary to cut the ribs in half for them to fit into the pan).
  • Cover the pan or baking sheet tightly with aluminum foil, and then bake until the meat falls easily from the bones, 2 ½ to 3 ½ hours. We like to check the ribs after 2 hours to see how they are progressing. The ribs are done when the meat is cooked through and tender.
  • While the ribs bake, make the barbecue sauce. Heat the olive oil in a saucepan over medium heat.
  • Add the onions and cook until soft and translucent, 5 to 8 minutes. Stir in the cumin and cook for an additional 30 seconds.
  • Add the ketchup, hot chili sauce, brown sugar, and apple cider vinegar. Stir to combine, season with salt then cook for 2 minutes. Set aside in preparation for the ribs to finish roasting.
  • Remove the ribs from the oven, discard the aluminum foil and generously brush both sides with barbecue sauce.
  • Optional: Move an oven rack near the top of the oven. Turn broiler to high and broil the ribs for 3-4 minutes, just until the barbecue sauce begins to caramelize. (Keep a close eye on the ribs while they broil so the sauce does not burn.)
  • Store baked ribs, in an airtight container, in the refrigerator for up to 3 days. Freeze, wrapped in foil or freezer paper and in an airtight container, for up to 3 months. Thaw in the refrigerator, and then reheat.
  • To reheat the ribs, wrap in foil or parchment paper and place into a 300°F oven until warmed through, about 30 minutes. If you have some leftover, slather some extra sauce that's been warmed over the ribs before serving.

How to cook ribs in the oven for succulent fall-off-the bone meat every time. Use your favorite dry rub, BBQ sauce or a combination of both.

1 full rack pork spare ribs (usually 2.5 to 3.5 lbs)*
pork dry rub (about 1/4 cup or to taste, use your favorite)**
1 cup BBQ sauce (use your favorite, optional)

Steps:

  • Preheat your oven to 275-300 F (depending on how strong your oven is) and line an appropriately sized baking sheet with aluminum foil (for easy clean up), then place a sheet of parchment paper on top***
  • Trim the rack of spare ribs from any excess fat, pat them dry with a paper towel. Turn the rack with the meaty side down and identify the membrane that runs across the length of the rib bones. Peel it off using a paper towel to eliminate slipperiness.
  • Liberally season the rack of ribs on both sides and place onto the baking sheet. If you need to cut the rack in two to achieve a better fit, do so.
  • Cover the ribs with a sheet of parchment paper, then aluminum foil - tuck it around the edges of the baking sheet to create air tight seal.
  • Place in the oven for 2 hours.
  • After 2 hours unwrap the cover and check the meat for tenderness. If satisfied, remove the covering, season with more dry rub or brush with BBQ sauce on both sides. (If you feel that the meat can use a little longer in the oven, go for another 20 mins and check again).
  • Place the uncovered ribs back in the oven for 20-30 mins more, as needed (you want a nice crust to form and the meat to be super tender).
  • Transfer to a cutting board, use tongs and a sharp chef's knife to slice the ribs, brush with BBQ sauce again (if using) and serve.

4 lemons cut in half (the acid in the lemons destroys all of the impurities in the ribs and also acts as a tenderizer
1 stalk celery, large dice
2 carrots, rough chop
1-ounce salt
1 slab beef ribs
1/2 gallon water
1 recipe Chef Toney's BBQ sauce (recipe follows)
1-ounce chopped onion
1-ounce diced garlic
1/2-ounce diced shallot
4 bay leaves
1/2 cup tarragon vinegar
1/2 quart orange juice
1/2 pint brown sugar
1/2 gallon open pit BBQ sauce
1/2 cup prepared mustard
1 cup tomato ketchup
1/2 cup tomato paste
1-ounce diced ginger
1/2 tablespoon cayenne pepper
1/2 cup liquid smoke

Steps:

  • Place lemon, celery, carrots, salt and ribs in a large pot and cover with cold water. Bring to a simmer and cook for 45 minutes to 1 hour or until the meat appears to be falling off the bone. Remove the ribs carefully and place on a sheet tray. Allow them to cool before, basting with Chef Toney's secret BBQ sauce. Cover the ribs and cook in a preheated 325-degree oven for about 30 minutes. Serve immediately.
  • Saute onions, garlic, shallot, and bay leaves. Deglaze with vinegar. Add orange juice and brown sugar, allow to reduce. Add other ingredients, bring to the boil and reduce heat. Allow to simmer for 2 hours.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
24 ounces beef sirloin, cut into 4 (6-ounce) lean, trimmed steaks
Salt and pepper
1 leek, trimmed
2 tablespoons butter, cut into small pieces
3 garlic cloves, smashed
1 carrot, 1/2-inch dice
2 ribs celery, from the heart, with greens, chopped
1 pound small red skinned potatoes, quartered
4 sprigs fresh thyme
2 bay leaves, fresh or dried
2 tablespoons all-purpose flour
1 cup dry red wine
2 cups good quality beef stock, from soup aisle
1 rounded tablespoon red currant jelly, optional, grape jelly can be substituted
Crusty bread, to pass at table

Steps:

  • Heat a deep, heavy bottomed skillet over high heat, then add 2 tablespoon extra-virgin olive oil. Season meat with salt and pepper, then caramelize the meat 2 minutes on each side.
  • Cut leek lengthwise, then cut into 1/2-inch slices across. Wash under running water in colander, separating all of the layers. Drain well.
  • Remove steaks from pan and reduce heat to medium high. Add butter to the pan and the leeks, garlic, carrot, celery and potatoes. Season vegetables with salt and pepper. Add thyme and bay sprigs. Saute veggies 10 minutes. Add flour, cook 1 minute. Whisk in red wine and reduce 1 minute. Whisk in broth and bring to a bubble. Stir in jelly. Slide meat into pan. If serving immediately, simmer over medium heat 7 to 10 minutes. If this meal is a make-ahead, remove the dish from the stove top at this point. When you reheat, bring sauce to a bubble and simmer 5 to 7 minutes over moderate heat.
  • Work on other dishes in your menu or dessert with the pockets of time created as veggies and meat cook.
  • Remove from stove top and serve each steak with lots of veggies and broth in shallow dishes with crusty bread for dipping.
