How to make beef jerky in an air fryer.

1 lb thinly sliced beef steak (sirloin steak, round steak) Note 1
½ cup Worcestershire sauce
½ cup soy sauce
1 tbsp honey
1 tsp onion powder
½ tsp chili flakes, optional, or add more for spicy jerky

Steps:

  • Mix all the marinade ingredients together in a bowl.
  • Cut beef slices into strips or squares.
  • Add the beef strips to the marinade, ensure that all surfaces of the beef are covered by the marinade.
  • Cover the bowl and place in the refrigerator overnight or for at least 3 hours.
  • Remove beef from marinade and pat dry with paper towels.
  • Place beef strips in air fryer basket in a single layer - ensure it is not overlapping.
  • Air fry beef strips until completely dehydrated. Set to air fry at 210°F (100°C) for two hours, then check the jerky. If it is not completely dried out continue to air fry for 15-20 minute intervals until it is ready. It needs to reach 160°F/71°C [Note 2].
  • When the jerky is ready, allow to cool and store in an air tight container.

Homemade beef jerky is 100% doable and delicious if you've got an air fryer. Season and marinate steak with the bold flavor of McCormick® Grill Mates® Montreal Steak Seasoning, and air fry until tender, chewy, and ready for snacking.

1 pound flank steask
4 1/2 tsps grill mates montreal steak seasoning
4 1/2 tsps brown sugar
1 tbsp water
1 1/2 tsps soy sauce
1 tsp paprika smoked

Steps:

  • Slice steak against the grain into 1/4-inch (7-mm) thick strips. Mix remaining ingredients in large bowl until well blended. Add steak and toss to coat well. Cover bowl with plastic wrap. Refrigerate at least 4 hours or overnight. Test Kitchen Tip: Partially freezing the steak will help make it easier to cut into strips. Place steak in freezer about 30 to 45 minutes before slicing.
  • Remove steak from marinade. Discard any remaining marinade. Working in batches as needed, place steak in single layer in basket. Set temperature to 180°F (82°C).
  • Air fry 2 1/2 hours or until beef is dehydrated and tender-chewy. Store jerky in an airtight container in the refrigerator. Test Kitchen Tips:•Air Fryers vary; adjust cooking times as needed. •For extra smoky flavor, add 1/2 teaspoon (2ml) liquid smoke to the marinade. •To prepare jerky in the oven, slice and marinate steak as directed above. Place wire rack on large shallow baking sheet. Arrange steak strips in single layer on wire rack. Dehydrate in preheated 175°F (80°F) oven 3 hours or until steak is dehydrated and tender-chewy.

2 rib-eye steaks, cut 1 1/2- inch thick
4 teaspoons grill seasoning (such as Montreal Steak Seasoning®)
¼ cup olive oil
½ cup reduced-sodium soy sauce

Steps:

  • Combine steaks, soy sauce, olive oil, and seasoning in a large resealable bag. Marinate meat for at least 2 hours.
  • Remove steaks from bag and discard the marinade. Pat excess oil off the steaks.
  • Add about 1 tablespoon water to the bottom of the air fryer pan to prevent it from smoking during the cooking process.
  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Add steaks to air fryer and cook for 7 minutes. Turn steaks and cook for another 7 minutes until steak is medium rare. For a medium steak, increase the total cook time to 16 minutes, flipping steak after 8 minutes.
  • Remove steaks, keep warm, and let sit for about 4 minutes before serving.

12 ounces top sirloin beef
1 garlic clove, minced
1 inch piece fresh gingerroot, peeled and grated
2 tablespoons reduced sodium soy sauce
1 tablespoon turbinado sugar
1 tablespoon chili paste (such as Sambal Oelek)
1 tablespoon rice vinegar

Steps:

  • Using a sharp knife, thinly slice beef and place in a resealable bag.
  • In a bowl, combine garlic, ginger, soy sauce, sugar chili paste and rice vinegar; whisk well.
  • Pour marinade into bag, seal and place in the refrigerator for at least 4 or up to 24 hours.
  • When ready to cook, remove pieces of beef from a marinade and pat dry with a paper towel.
  • Preheat air fryer to 160-degrees. Place beef in basket and cook for 3 to 4 hours. Checking the jerky periodically for desired doneness. Allow to cool completely and then store in an airtight container.

Using your air fryer oven makes whipping up a big batch of jerky as easy as 1-2-3. All it takes is a few ingredients and some patience. Make sure to cut your beef paper thin or plan on a longer drying time. I find it helpful to freeze the beef for an hour for easy slicing. Refrigerate any that is not consumed in 3 days.

4 pounds London broil, thinly sliced and fat removed
2 tablespoons jerky seasoning
2 tablespoons cure
2 teaspoons cure

Steps:

  • Place beef, jerky seasoning, and 2 tablespoons plus 2 teaspoons cure in a large bowl. Massage beef with your hands until evenly combined. Cover and refrigerate, 8 hours to overnight.
  • Preheat the air fryer to 160 degrees F (70 degrees C). Place beef slices on the rack, making sure none are overlapping.
  • Air fry for 3 hours. Open the air fryer and let beef sit for 1 hour for final drying and cooling. Store in an airtight container.
