How to roast vegetables in an air fryer.

1 medium sweet potato
1 medium potato
1 cup chopped butternut squash (yellow squash, or pumpkin)
1 medium carrot
3 tablespoons olive oil (or avocado oil)
1 teaspoon kosher salt
1 teaspoon seasoning (optional)
1/2 head broccoli
1 medium red onion

Steps:

  • Wash and peel the potatoes, sweet potatoes, and squash. Cut into 1-2 inch chunks and place in a bowl of cold water to soak for 5 minutes. [Note 1]
  • Wash and peel the remaining vegetables and cut into 1-2 inch chunks.
  • Preheat air fryer to 360°F (180°C).
  • Drain the soaked vegetables, and pat all the vegetables dry.
  • Mix olive oil, salt and seasoning in a large bowl. Add the firm vegetables [Note 2] and toss to coat with the seasoning.
  • Place firm vegetables in air fryer basket and air fry for 5 minutes.
  • While the firm vegetables are air frying, add the soft vegetables to the oil/seasoning mix and toss to coat [Note 2].
  • After five minutes, gently shake the air fryer basket to redistribute the veggies, then add the soft vegetables on top.
  • Air fry for 10-15 minutes shaking the basket every 5 minutes until vegetables are tender and golden brown.

A heating element and fan bathe the food in hot air to produce a crispy finished product. Use 3 cups of assorted vegetables, cut into 1-inch pieces. Serve with desired dipping sauce.

½ cup diced mushrooms
½ cup diced cauliflower
½ cup diced asparagus
½ cup diced sweet red pepper
2 teaspoons vegetable oil

1/4 teaspoon seasoning, or more to taste

Steps:

  • Preheat the air fryer to 360 degrees F (180 degrees C).
  • Add vegetables, oil, salt, pepper, and desired seasoning to a bowl. Toss to coat; arrange in fryer basket.
  • Cook vegetables for 10 minutes, stirring after 5 minutes.

Try them as a side for your favorite entree, or toss them with greens and your favorite vinaigrette for a different salad.

1 red bell pepper, seeded and cut into 1-inch pieces
1 yellow summer squash, cut into 1-inch pieces
1 zucchini, cut into 1-inch pieces
4 ounces fresh mushrooms, cleaned and halved
½ sweet onion, cut into 1-inch wedges
1 tablespoon extra-virgin olive oil
salt and pepper to taste

Steps:

  • Preheat an air fryer according to manufacturer's recommendations.
  • Place red bell pepper, summer squash, zucchini, mushrooms, and onion in a large bow. Add olive oil, salt, and black pepper and toss to combine.
  • Place vegetables in an even layer in the air fryer basket. Air-fry vegetables until roasted, about 20 minutes, stirring halfway through cooking time.
