Deep-fried mozzarella sticks are one of our favorite appetizers. I figured out how to make them at home without having to haul out the deep fryer. Make sure to double-bread each one so these air-fryer mozzarella sticks get nice and crunchy, and to keep the cheese from oozing out as they get warm. -Mary Merchant, Barre, Vermont

3 tablespoons all-purpose flour
2 large eggs
1 tablespoon water
1 cup dry bread crumbs
2-1/2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
1/8 teaspoon pepper
12 sticks string cheese
Cooking spray
1 cup marinara sauce or meatless pasta sauce, warmed

Steps:

  • Place flour in a shallow bowl. In another shallow bowl, beat eggs and water. In a third shallow bowl, combine bread crumbs, Italian seasoning, garlic powder and pepper. Coat cheese sticks with flour, then dip in egg mixture and coat with bread crumb mixture. Repeat egg and bread crumb coatings. Cover and freeze for at least 2 hours or overnight. , Preheat air fryer to 400°. Place cheese in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until golden brown and heated through, 6-8 minutes, turning halfway through cooking and spritzing with additional cooking spray. Allow to stand 3-5 minutes before serving. Serve with marinara or pasta sauce for dipping.

What can't the air fryer do? Here, we use the handy appliance to make super crispy, golden brown chicken Parm. First, air fry the chicken breasts, then top with marinara and mozzarella and return to the air fryer to melt the cheese to gooey perfection.

1 lb boneless, skinless chicken breast
1 teaspoon kosher salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1 cup all purpose flour
2 large eggs
1 ½ cups panko breadcrumbs
1 cup parmesan cheese
nonstick cooking spray, for greasing
1 cup marinara sauce
1 ball fresh mozzarella cheese
2 tablespoons fresh parsley, finely chopped

Steps:

  • On a cutting board, slice each chicken breast in half horizontally, creating 2 cutlets. Place the chicken breast pieces, 1 at a time, in a large zip-top bag. Use a meat mallet to pound the chicken to ¼-inch-thick. Transfer the chicken to the cutting board and pat dry with a paper towel. Season the chicken on both sides with salt and pepper.
  • In a shallow bowl, whisk together the flour, 1 teaspoon of salt, and 1 teaspoon of pepper. In another shallow bowl, beat the eggs. Add the panko and Parmesan to a third shallow bowl and whisk to combine.
  • Coat the chicken in the flour, shaking off any excess. Then, dip in the eggs, letting any excess drip off. Finally, coat in the panko mixture, making sure all sides are covered. Transfer the chicken to a clean cutting board.
  • Preheat the air fryer to 400°F (200°C). Spray the air fryer basket with nonstick spray.
  • Place 2 of the chicken pieces in the basket and cook until golden brown, about 7 minutes. Spread ¼ cup of marinara sauce over each piece of chicken. Top with 2 slices of mozzarella. Return to the air fryer until the cheese is melted and golden brown and the internal temperature of the chicken reaches 165°F (75°C), about 5 minutes. Repeat with the remaining chicken.
  • Top with the parsley and serve immediately.

This recipe is so simple, and in 20 minutes, it's done. Fast and easy. I'm ALL about fast and easy, but I want delicious, too! This recipe is written for one person, but if you have more people, simply double up to accommodate your needs. I hope you enjoy this wonderful meal!!

1 boneless, skinless chicken breast
1/2 c all purpose flour, for dredging
olive oil cooking spray (pam)
salt, to taste
cayenne, pepper to taste (optional)
garlic powder, to taste
dried italian seasoning, to taste
3-4 Tbsp shredded mozzarella cheese
3-4 Tbsp your favorite spaghetti sauce

Steps:

  • 1. Rinse chicken breast in a little water but don't pat dry.
  • 2. Place flour in a bag or a bowl. Coat chicken on both sides.
  • 3. Place chicken breast in air fryer in your basket. (I use my accessory pan to put the chicken in to cook for easy cleanup.) Spray top with the cooking spray.
  • 4. Season the chicken with all of the seasonings, to your taste or liking.
  • 5. After warming up the air fryer for five minutes, place the chicken in air fryer, set at 370 degrees for 20 minutes. After 10 minutes, open air fryer, turn chicken to other side, spray that side with cooking spray, and allow to cook the remaining 10 minutes.
  • 6. When done, open air fryer, place 3 to 4 tablespoons of sauce on top, then put a nice thick layer (3 -4 tablespoons) of shredded mozzarella cheese. Close air fryer and press "warm up" feature and allow chicken to heat for 4 -5 minutes to melt the mozzarella.
  • 7. That's it!! Serve on a beautiful bed of spaghetti, with a side salad, and your favorite garlic bread!
