36 lollipop sticks
2 cups sugar
2/3 cup water
1/4 teaspoon cream of tartar
1/2 teaspoon flavored extract, optional

Steps:

  • Arrange the lollipop sticks in the lollipop molds and place on a baking sheet. Set aside.
  • Combine the sugar, water, and cream of tartar in a heavy-bottomed saucepan over medium heat. Stir until the sugar is dissolved. Increase the heat to high and, without stirring, cook until the sugar is amber or until a candy thermometer reads between 300 to 310 degrees F (hard-ball stage), about 10 minutes (see Cook's Note*). Promptly remove the saucepan from the heat. Carefully stir in the flavored extract.
  • Work quickly, drop 1 teaspoon of the hot mixture into each lollipop mold. Reheat the mixture briefly over low heat if it starts to thicken. Let the lollipops cool for at least 15 minutes. Remove from molds and store in airtight containers or wrap individually.

Food coloring, optional

Steps:

  • Taste the candy and add more mint extract if desired; different brands have different strengths, and it's better to start with less flavoring and add more if necessary.

I am posting this for safe keeping this is from Gifts Of Good Taste. This is for adults. Mighty tasty. Great for gift giving. I'm guessing at the cooking time, as I have yet to make these.

vegetable oil cooking spray
32 lollipop sticks
2 cups sugar
1 cup strongly brewed coffee
2/3 cup light corn syrup
1/3 cup coffee-flavored liqueur

Steps:

  • Heavily spray a baking sheet with cooking spray.
  • Place lollipop sticks about 3 inches apart on baking sheet.
  • In a heavy saucepan, combine sugar, coffee, and corn syrup.
  • Stirring constantly, cook over medium-low heat until sugar dissolves.
  • Cover and cook 2 to 3 minutes to wash down any sugar crystals on sides of pan.
  • Attach a candy thermometer to pan, making sure thermometer does not touch the bottom of pan.
  • Increase heat to medium and bring to a rolling boil.
  • Cook without stirring, until mixture reaches 292 degrees.
  • Test about 1/2 teaspoons mixture in ice water.
  • Mixture will form brittle threads in ice waterand will remain brittle when removed from water.
  • Remove from heat.
  • Stir in liqueur.
  • Spoon about 1 tablespoon hot candy over 1 end of each lollipop stick to form a 2-1/2 inch diameter circle.
  • Let candy cool.
  • Wrap individually in small plastic bags or plastic wrap.
  • Store in airtight container.

They're chicken lollipops - a succulent treat that lives up to the name!

10 chicken wings
1 teaspoon salt
1 teaspoon soy sauce
½ teaspoon chili powder
1 drop red food coloring
1 teaspoon distilled white vinegar
1 teaspoon chopped garlic
1 teaspoon finely chopped green chile peppers
4 tablespoons cornstarch

Steps:

  • TO MAKE MARINADE: Combine the soy sauce, red chili powder, red food coloring, vinegar, garlic and green chiles. Mix well.
  • On each chicken wing, push the meat down to one end. Marinate the wings for AT LEAST 1/2 hour.
  • Remove the wings from the marinade and add the cornstarch to the marinade to make a batter. Dip the wings in the batter and deep fry. Ready to serve!

Kids of all ages will savor these fun fruity lollipops. I received the recipe from my sister-in-law years ago. We still make them in a rainbow of jewel colors in her memory every Christmas. They're great stocking stuffers!

1 cup light corn syrup
2/3 cup sugar
1-1/2 teaspoons lemon, apple or cherry flavoring
1/8 teaspoon yellow, green or red liquid food coloring

Steps:

  • Place lollipop sticks in hard candy molds or arrange sticks 3 in. apart on greased foil-lined baking sheets; set aside., In a heavy saucepan, combine corn syrup and sugar. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals. Uncover and cook over medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage). , Remove from the heat; stir in flavoring and food coloring, keeping face away from mixture as odor is very strong. Immediately pour into prepared molds or pour free-form over ends of lollipop sticks on baking sheets. Let cool before removing.

  • Start by making a cut about ⅓ of the way done the drumstick towards the knuckle side. Slice all around the drumstick and pull off the excess meat/skin until the bone is the only thing showing. Trim off any excess tendons, then press the meat down to form your “lollipop.” Repeat this step for the rest of the drumsticks. Add the seasoning into a bowl and thoroughly coat the meat.
  • Preheat your smoker for 325F indirect. Add some additional wood chunks or chips for added flavor.
  • Add your chicken to the smoker and cook for about 1.5 hours until they reach 175F. When the chicken is close to being done, add a sauce pan on with the maple syrup. Warm up for 1-2 minutes. Once warm, pull the sauce pan off and carefully dip each lollipop into the syrup until it is evenly coated. Let the excess syrup drain off and place the chicken back on the smoker. Repeat for each lollipop, then let cook for 5 more minutes.
