A Better Bologna Sandwich image

Make a classic bologna sandwich outstanding by adding warm, seasoned onion and peppers. It's time to consider switching to A Better Bologna Sandwich.

1 small onion, sliced
1/2 green pepper, chopped
2 Tbsp. HEINZ Red Wine Vinegar
1/4 tsp. hot pepper sauce
2 slices OSCAR MAYER Light Bologna
2 kaiser rolls, split
2 tsp. HEINZ Yellow Mustard

Steps:

  • Cook and stir first 4 ingredients in large skillet on medium heat 4 min. or until vegetables are tender, stirring frequently. Remove from skillet; cover to keep warm.
  • Cook bologna in same skillet on medium-high heat 1-1/2 min. on each side or until lightly browned on both sides.
  • Spread cut sides of rolls with mustard; fill with bologna and vegetable mixture to make 2 sandwiches.

Number Of Ingredients 9

2 slices soft white sandwich bread, such as Wonder Bread
Mayonnaise, for spreading
Yellow mustard, for spreading
4 thin slices bologna (preferably nitrate-free and pork)
Unsalted butter, for the skillet
2 slices American cheese
2 tablespoons chow chow
1/2 cup BBQ potato chips
1/2 cup shredded iceberg lettuce

Steps:

  • Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
  • Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
  • Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.

  • Mix mustard, mayonnaise, and chopped pickles in a small bowl to combine; season with pepper.
  • Arrange half of bologna slices in a neat stack. Starting near the center and working toward the edges of the stack, cut four 1"-long slits, spacing evenly. Repeat with remaining bologna.
  • Heat a dry large skillet, preferably cast iron, over medium-high. Working in batches, arrange bologna slices in a single layer in skillet and cook until browned all over and crisp, about 2 minutes per side. Transfer to a plate as they are done. Save skillet with any fat.
  • Arrange bread in a single layer in reserved skillet and cook over medium high until golden brown, about 2 minutes per side. Transfer to a cutting board.
