This Western omelette truly tastes like the West, thanks to nicely browned onions, bell peppers, and ham, and a pinch of smoked paprika to give it all a whiff of campfire smoke.

5 large eggs
Kosher salt and freshly ground black or white pepper
2 ounces (55g) grated cheddar, pepper Jack, or Swiss cheese
2 tablespoons (30g) unsalted butter, divided
Half of one large green, red, or yellow bell pepper (4 oz; 110g), stemmed, seeded, and cut into 1/2-inch dice
One quarter of one medium yellow onion (2 oz; 55g), cut into 1/2-inch dice
Pinch smoked paprika
2 1/2 ounces (70g) ham (about 3 slices), cut into 1/2-inch pieces

Steps:

  • In a medium mixing bowl, season eggs with salt and pepper, then whisk until homogeneous and frothy. Set aside.
  • Meanwhile, add cheese to a medium heatproof mixing bowl. In a 10-inch nonstick skillet, melt 1 tablespoon butter over medium-high heat, swirling, until lightly browned. Add bell pepper and onion, season with salt, and cook, stirring occasionally, until softened and beginning to brown, about 6 minutes. Add ham and cook, stirring occasionally, until vegetables and ham are browned in spots and smell pleasantly smoky, about 5 minutes longer. Stir in smoked paprika and freshly ground black pepper. Scrape vegetables and ham into the cheese and stir to combine.
  • Wipe out skillet and set over medium heat. Add remaining 1 tablespoon butter and cook until melted and lightly browned. Re-whisk eggs until foamy, then add to skillet and cook, using a silicone spatula to push the edges in toward the center as they set and tilting the pan to spread the uncooked egg underneath. Continue pushing in the edges of the eggs and tilting the skillet, working all around the pan, until omelette is almost set, about 45 seconds.
  • Sprinkle ham, vegetables, and cheese over half of omelette, remove from heat, cover, and let omelette sit until mostly or fully cooked through on top (depending on your preferred consistency), about 1 minute.
  • Using silicone spatula, loosen the edges of the omelette from skillet and shake skillet to ensure that it's not stuck. Carefully fold omelette in half to enclose the filling, then slide it onto a serving plate and serve immediately.

1/2 c flour
1 c milk
2 Tbsp butter, melted
6 eggs
1 c bacon, cooked and crumbled
1 1/2 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 350F.
  • 2. Generously grease foil with cooking spray. Place foil in bottom of 13x9-inch baking dish.
  • 3. Whisk together flour, milk, butter and eggs until smooth.
  • 4. Pour carefully into prepared pan.
  • 5. Sprinkle with bacon.
  • 6. Bake until eggs are set 15 to 18 minutes.
  • 7. Remove from oven and immediately sprinkle with cheese.
  • 8. Starting at narrow end of pan and using foil to lift roll the omelet.
  • 9. Wrap with foil and return to warm oven for a few minutes.
  • 10. When ready to serve slice into 1 or 1 1/2 inch slices.

Steps:

  • Cook bacon in medium skillet on medium heat until crisp. Remove bacon from skillet to drain, reserving drippings in skillet. Add potatoes, onions and garlic to drippings; cook 10 to 12 min. or until tender and golden brown, stirring frequently.
  • Place potato mixture in large bowl. Add bacon, eggs, 1/2 cup cheese and pepper; mix well.
  • Heat same skillet on high heat. Return potato mixture to skillet; cook on low heat 12 min. or until egg mixture is almost set.
  • Slide omelet onto dinner plate. Place skillet upside-down over omelet; carefully turn plate and skillet over to flip omelet. Top with remaining cheese; cook 3 min. or until cheese is melted and center of omelet is set. Sprinkle with parsley.

  • Preheat oven to 375 degrees F (190 degrees C). Arrange bacon on a baking sheet.

Steps:

  • First place the 10 pieces of bacon on the griddle pan grill. Cook the bacon, then remove it from the grill and set it aside.
  • Next thing you need to do is crumble up like 4 pieces of bacon into little pieces, then cut up the red onions, and green peppers.

1 cup grated Cheddar cheese
Bacon Roasted Potatoes, recipe follows
3 cups fingerling potatoes, halved
4 tablespoons olive oil, divided
Kosher salt and freshly ground black pepper
4 cups vegetable oil, for frying
1 cup applewood smoked bacon slab, cut into chunks
2 tablespoons unsalted butter
2 cups onion, sliced thick

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, whisk together the eggs, cream, salt, and black pepper.
  • Spray a large, rimmed baking sheet with cooking spray. Lay a piece of parchment paper on the baking sheet, making sure the parchment paper is long enough to hang over the length of the sheet pan.
  • Spray the parchment paper with cooking spray and pour the eggs into the sheet pan. Bake until the eggs are firm, about 15 to 18 minutes, rotating the pan half way through the cooking time.
  • Remove the eggs from the oven when they are set and sprinkle the cheese on top.
  • Grab one side of the parchment paper, lift and roll the eggs tightly, jelly roll-style, peeling back the parchment as you go.
  • Slice the rolled omelet into thick, even slices and serve with Bacon Roasted Potatoes.
  • Preheat the oven to 400 degrees F.
  • On a rimmed baking sheet, combine the potatoes, olive oil, salt, and pepper. Toss the mixture to evenly coat. Roast the potatoes in the oven until deep golden brown and crispy, about 20 to 25 minutes.
  • In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat, until deep-fry thermometer reads 350 degrees F.
  • Fry the bacon chunks until golden and crispy, and then drain them on a paper towel.
  • In a large saute pan, add 2 tablespoons butter and 2 tablespoons olive oil. When the butter is melted, add the onions. Saute the onions over high-heat until nicely caramelized, about 6 to 8 minutes. Season the onions with salt, and pepper, to taste.
  • In a large bowl, gently stir together the potatoes, onions and bacon. Turn the mixture out onto a platter and serve warm.
